Mauzac rose, a traditional grape variety from the Gaillac region, gives its character and flavor to this delicate and supple eau-de-vie. The grapes are raisined (dried), hand-destemmed, pressed, and subjected to incomplete fermentation, which leaves a little residual sugar. The aromatic profile is very elegant and preserves the natural taste of the grape. An excellent ingredient in desserts and pastries: try it as a substitute for rum in a baba. Alcohol content: 45%.

Agile on the palate, fresh and straightforward, lemony and slightly saline, with a long finish tinged with a delicate bitterness typical of the estate. It will pair wonderfully with all seafood, especially bouillabaisse, bourrides, and fish soups. It will also accompany sushi, sashimi, ceviche, fresh oysters...

This lively and easy-drinking white sparkling wine (10% alcohol) is a blend of native Catalan grape varieties: Garnatxa Blanca, Macabeu, Moscatell, Vinyater, Xarel·lo, Parsé, and Parellada. The harvest is pressed directly, and the must ferments in temperature-controlled stainless steel vats with indigenous yeasts. A second fermentation takes place in the bottle, where it ages for 10 months on fine lees. Dry, light, and fruity, it will easily replace a champagne with a sunnier nuance. The nose offers aromas of ripe white fruits and yeasts reminiscent of pastries. On the palate, it is elegant, fresh and suitable for all occasions, but we recommend it as an aperitif or to accompany desserts (galette des Rois, pithiviers, millefeuille and all puff pastries).

Ideally served at 15°C, this is a cuvée that is not cold to the eyes or elsewhere, with a light color and a great freshness on the palate that gives the sensation of biting into a juicy and slightly peppery grape. It is a wild, smoky, long, and persistent red wine, marked by intensely mineral notes: pebbles, metal. However, the fruit is present and juicy. The overall impression is dense and concentrated; the wine can be drunk now but will still be able to age for a few years. Serving temperature: 14-16 °C. Open twenty minutes before tasting.
