Les Œillets Blanc 2012, Jean-Yves Péron
This 100% Jacquère white wine, grown on limestone soil, is the result of two weeks of skin maceration followed by a year of barrel aging. For this vintage, Jean-Yves waited for the grapes to reach greater phenolic maturity in order to obtain greater tannic concentration. Superbly structured, it offers chew and texture. The tension is strong, balanced by a note of apricot. Oaky, with explosive minerality and beautiful tension, this is a very atypical maceration white wine.

The Grenache Gris grapes that make up this vintage are ninety years old and grow in a complex mixture of clay, silica, mica-rich schist, quartz, and gneiss. Michaël Georget pollinates the vineyard by introducing bees. The grapes are pressed directly, and aged for one year in old 400-liter barrels.

La Familia Red 2010
A wine for laying down. High-altitude Merlot, high acidity.
La Familia is a blend of Cabernet Sauvignon, Cabernet Franc, and Syrah, one of the 800 vines planted by the Carmenet family between 1991 and 1998 by the winemakers at an altitude of 1,300 meters on schist and clay soils. The destemmed harvest macerates in stainless steel vats with manual punching. Aging in old barrels lasts approximately twenty-four months.

Pet'Nat Rosé (PNR) 2017, La Sorga aka Anthony Tortul
This sparkling natural wine is a blend of Grenache Noir and Muscat of Alexandria grown on limestone sands in Carcassonne. Pressing takes place immediately after the harvest. Antony Tortul keeps only the heart of the press, unsettled, and then the wine is bottled by gravity. Aging takes place on slats for six months. The red fruit notes of this sparkling wine pair very well with dessert or are wonderful as an aperitif. It has a ten-year aging potential.

What a beautiful white! Auvergne Chardonnay definitely has no fewer stories to tell than that of the terroirs where it is better known. Obtained by skin maceration, aged for eighteen months in barrels, it is a superb wine. With its magnificent structure and complexity, it will pair well with roasted and grilled dishes: fries, Darphin potatoes, roast chicken, or roasted rack of black pork. Aging potential: ten years. Open twenty minutes before tasting, decant if possible.

A light, thirst-quenching red, claret, almost a rosé. The grapes all come from Adissan: Clairette, Colombard on basalt soils, and Grenache on limestone. The harvest macerates whole bunches for fifteen days. Half is aged in 500-liter barrels and the other half in resin vats. Notes of strawberry, plenty of acidity, and a delicious taste.

This organic wine produced in IGP Terre Siciliane is made from Nerello Mascalese and Nerello Cappuccio grown on basalt soils in the biodiverse plots of Frank Cornelissen's vineyard. Contadino is a balanced, structured, gastronomic, and easy-to-drink cuvée. Lots of crisp fruit, without ever falling into the easy route. A certain bite, a freshness typical of the estate. A perfect red for the table.
