What a beautiful white! Auvergne Chardonnay definitely has no fewer stories to tell than that of the terroirs where it is better known. Obtained by skin maceration, aged for eighteen months in barrels, it is a superb wine. With its magnificent structure and complexity, it will pair well with roasted and grilled dishes: fries, Darphin potatoes, roast chicken, or roasted rack of black pork. Aging potential: ten years. Open twenty minutes before tasting, decant if possible.

Jean-Louis Pinto
A light, thirst-quenching red, claret, almost a rosé. The grapes all come from Adissan: Clairette, Colombard on basalt soils, and Grenache on limestone. The harvest macerates whole bunches for fifteen days. Half is aged in 500-liter barrels and the other half in resin vats. Notes of strawberry, plenty of acidity, and a delicious taste.

A highly sought-after bottle because it is exceptional: it is the first vintage of the Hirofumi blend. 100% Grenache, from a plot in Collioure, at the top of a hill of schist and granite. Fine and perfectly balanced, we find flavors of almond, plum, cinnamon, etc. Long in the mouth, it is pure happiness.

This 100% Jacquère white wine, grown on limestone soil, is the result of two months of skin maceration followed by three years of barrel aging. For this vintage, Jean-Yves waits for the grapes to reach greater phenolic maturity in order to obtain greater tannic concentration. The extended aging enhances the whole. Superbly structured, it offers chew and texture. The tension is strong, balanced by a note of apricot. It will go very well with white meats: roast chicken for example.

This organic wine produced in IGP Terre Siciliane is made from Nerello Mascalese and Nerello Cappuccio grown on basalt soils in the biodiverse plots of Frank Cornelissen's vineyard. Contadino is a balanced, structured, gastronomic, and easy-to-drink cuvée. Lots of crisp fruit, without ever falling into the easy route. A certain bite, a freshness typical of the estate. A perfect red for the table.

SM Sumoll 2016, Partida Creus
This red Sumoll, a very old Catalan red grape variety that has long been neglected, is one of Partida Creus' favorites. Low-yielding, Sumoll gives its best on poor soils, which gives it great concentration, beautiful balance, juicy black fruit, dense and generous, notes of Mediterranean spices and plants, and finally an earthy, animal and smoky character. The short maceration allows it to retain freshness and acidity. It will be excellent with red meats, roasts, duck, but the range of its pairings is actually very wide.

BB Bobal Rouge 2016, Partida Creus
BB is a 100% Bobal, a racy and finely wild red made from a common grape variety in Spain but whose expression is very original here. Dark cherry red color; on the nose, candy, sweet flowers, fresh fruits, violet, thyme. On the palate, a lot of distinction: a straight acidity and morello cherry, ripe plum, black pepper, a little saline touch on the finish. Serve very chilled.

Catalan cousin of Mourvèdre, the Garrut grape variety forms the basis of this wine with its intensely purplish color, a journey to the depths of black fruits, notably blackberry or bramble: intense, brilliant, earthy, completely atypical. It evokes the family vine, artisanal and free wine, the garrigue and fig leaf. Will accompany bellota ham, the best cured meats and terrines, spicy dishes, Chinese cuisine. Should be served quite chilled (15 °C).

Azienda Frank Cornelissen's entry-level red is made from Nerello Mascalese and a few other varieties grown on the estate: Malvasia, Moscadella, Catarratto. The grapes are destemmed, lightly crushed, and undergo around sixty days of skin maceration. It is the aromatic expression of Etna, a vintage produced and blended in the traditional way, mixing plots and grape varieties. The result is a wine with a rich and voluptuous nose, elegant and fluid, with structure and a strong personality. Aging potential: ten years. Serving temperature: 14-15°C. Open twenty minutes before tasting. Pairings: all summer dishes, from marinated red peppers to grilled lamb and appetizers.

Émilie for… Émilie (Mutombo), Tom for Tom Colman of the Jauma Winery in Australia, who helped the winemaker create this limited edition cuvée on the lands of Partida Creus: a beautiful, clear, vermillion red, a blend of Cartoixa Vermell and Garrut. The Cartoixa is directly pressed before being blended with Garrut, vinified using carbonic maceration. The result is bursting with fruit and freshness. A fresh, light wine, ideal for an aperitif.
