Dorabella Rouge 2018, Domaine de l'Octavin
Here is a Poulsard red full of fruit, subtlety, and indulgence, typical of this wonderful Jura grape variety. The vines are grown biodynamically on gray limestone marl. The wine is obtained by carbonic maceration of the destemmed harvest, partial or total depending on the vintage, so don't be surprised by a slight sparkle. Lovely light ruby color; notes of spices, raspberry, and small red fruits.

The grapes are pressed directly; the must ferments and matures in vats for nine months. Lots of charm, yellow citrus and white flowers, and a clean, saline finish.

No provocation in the appellation, Les Fesses is the name of the plot from which this white Sauvignon and Pinot Gris comes, obtained biodynamically and through natural vinification. The soils of the plot are of great mineral richness: clay-limestone, granite and basalt. The Sauvignon must from direct pressing ferments for six months in vats with the destemmed Pinot Gris, before aging for three years in barrels. A beautiful gastronomic wine, rich and distinguished, mineral as desired, dominated by notes of honey and white fruits (quince, apple, pear, rhubarb) of remarkable purity.

This 100% Jacquère white wine, grown on limestone soil, is the result of two weeks of skin maceration followed by a year of barrel aging. For this vintage, Jean-Yves waited for the grapes to reach greater phenolic maturity in order to obtain greater tannic concentration. Superbly structured, it offers chew and texture. The tension is strong, balanced by a hint of apricot. Oaky, with explosive minerality and beautiful tension, this is a very atypical maceration white wine.

Cuvée O Rouge 2015, Château Les Graves de Viaud
This confidential cuvée (1,200 bottles) of Côtes-de-Bourg is composed entirely of Cabernet Franc. The vines grow on gently sloping hillsides with clayey gravel soils. The harvest is manual, destemmed, and not crushed. Carried out in ovoid vats, the skin maceration is long: up to three months at controlled temperature. Fermentation is done by indigenous yeasts and no sulfur is added at bottling. This wine, as delicate as it is profound, has the particularity of being vegan (no animal products, therefore no egg-based fining). Upon tasting, the signature of Cabernet Franc is clearly present. The nose, fresh and spontaneous, offers notes of plum, violet, and peony. The palate is luscious, crisp and fresh, seductive, velvety, with great length: touches of strawberry and blackberry. The tannins are silky and melted.
Magnum Xarelina Blanc 2019, Emilie Mutombo
Full of elegance and finesse, Xarelina is a 100% xarel·lo white, grown on clay-limestone soils by Émilie Mutombo, a winemaker who learned her trade in Catalonia with Partida Creus. The harvest is carried out in two stages: part of the grapes is crushed and macerated for ten days and the rest goes through direct pressing. After blending, aging is approximately six months in stainless steel vats. This vintage is fresh and has a beautiful acidity.

Jeroboam Munjebel FM Red 2016

The Feudo di Mezzo plot, from which this Munjebel red comes, is very large. It is divided into two parts: the sottana, the lower part, and the soprana, or Porcaria, which is the upper part. Although relatively lower than the estate's other plots, it produces wines of remarkable elegance. The soil is quite deep, which can pose maturation problems in wet years, but the plot benefits from good ventilation, which compensates for this drawback. This wine is all Burgundian elegance and roundness, even in hot years: it is characterized by its finesse and adapts to the most varied dishes.

This pure Nerello Mascalese comes from a partially ungrafted vine, approximately seventy years old, on the Campo Re plot, in the far west of the valley, at an altitude of 735 meters. The soil is particularly deep, and ripeness is difficult to achieve during wet years. The grapes are destemmed and lightly crushed; skin-contact fermentation lasts about sixty days. No fining, filtration before bottling. The wines are deep, elegant, and tannic. Compared to other vintages from this estate, they are somewhat similar to Nebbiolo.
