Lulu Red 2022 Magnum
Lulu, here in magnum format, is a highly sought-after cuvée from Patrick Bouju, an Auvergne winemaker deeply attached to his terroir and his old Gamay d'Auvergne vines. An organic, natural red wine with no added sulfites, it is one of its creator's most iconic and sought-after vintages. Classified as a Vin de France. The magnum amplifies and deepens its character.
Vinification
Lulu comes from a basalt plot in Corent, planted with very old Gamay d'Auvergne vines over seventy years old. The soil is worked biodynamically and with animal traction on a basalt terroir. The destemmed harvest macerates for five months in whole bunches. It is aged for one year in sandstone amphorae.
Tasting
Lulu is at once distinguished, complex, charming and easy to drink. The fruit, round, opulent and slightly candied (blackberry, morello cherry), gives way on the palate to a lively, slightly saline minerality, with just the right touch of astringency and spice. It is a delicious and velvety cuvée, with animal and spicy notes, where the red fruits are generously expressed. Decanting recommended. Pairing: anything good goes with a good wine. Vin de Lies White 2019/20 Magnum
Vin de Lies is an organic, biodynamic, and natural dry white wine that Jean-Yves Péron makes every two vintages in his Savoyard cellars. It is based on a viticultural practice that is little known outside the profession, but which produces a highly regarded wine. It is not normally sold commercially but reserved for the cellar team. Classified as a Vin de France, it is therefore a treat bestowed upon us by the winemaker. And I might as well tell you that the magnum format makes it an even more monumental treat... Vinification
The lees wine method consists, after racking the barrels or aging tanks, of gathering all the lees in a single tank. These lees are suspended in a small quantity of wine, which is again decanted and recovered once or twice. Nourished by the lees, the red obtained in this way is smoother, softer, and the white is less tense, rounder. To make this vintage, Jean-Yves Péron combined the lees from all his 2019 whites and some of those from 2020 (thus bringing together all his terroirs, both Savoyard and Italian). Jean-Yves Péron is a talented embodiment of the organic, biodynamic and natural renaissance of the Savoyard vineyard, which is based on varied soils and numerous indigenous grape varieties (jacquère, altesse, mondeuse, etc.). At his Chevaline winery in the Bauges region, he vinifies grapes from his plots in Conflans, near Albertville, and Fréterive, in the Isère valley.
High-altitude biodynamics
Jean-Yves Péron's work follows the principles of minimal intervention. On narrow, steep slopes, his hand-worked mountain vines in micro-plots receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. The grapes are vatted in whole bunches and undergo semi-carbonic maceration. Shortly before pressing, they are foot-trodden in the vat, then transferred to two- or three-wine barrels for twelve months of aging on lees, before blending and resting in the vat. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Italian-Savoyard trade
Since 2011, a trading activity has allowed Jean-Yves Péron to buy the harvest from neighboring organic winegrowers and to collaborate with winegrowers from Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his experiences in winemaking and aging.
Munjebel VA White 2020 Magnum
Frank Cornelissen
This magnum size of Frank Cornelissen's classic dry white wine, Munjebel VA, is classified under the DOP Sicilia and IGP Terre Siciliane Bianco appellations. Organic (Eurofeuille), biodynamic, and natural, this is a very special white wine, produced from ungrafted vines from the estate's highest plots: Tartaraci (1,000 m above sea level) and Zacchino Pietre (920 m). This is the upper limit of the Etna vineyard.
Vinification
Munjebel VA white is a blend of Grecanico Dorato (60%), Coda di Volpe (30%), and Carricante (10%). After harvesting, destemming, and light crushing, the grapes macerate for 4 days on the skins and ferment with indigenous yeasts. Aging is 18 months in fiberglass vats and 18 months in bottles. No fining, light filtration.
Tasting
This white wine from Frank Cornelissen combines all the characteristics of great wines: depth, density, high acidity, minerality, and texture. A supremely elegant white wine, to be paired with the finest seafood. With Emilien 2000 in Magnum, Jean-Pierre Amoreau of Château Le Puy offers a generous and harmonious interpretation of this iconic vintage. From a biodynamically farmed vineyard, with no chemical inputs, this wine reflects a demanding and respectful approach to life.
The vinification, true to the estate's principles, is done without exogenous yeasts or artifice. The wine evolves slowly, gaining complexity and finesse over the years. The magnum format promotes even slower and more balanced aging, revealing the full depth of the wine.
The color presents a beautiful intensity, with slightly evolved reflections. The nose opens with notes of ripe black fruits, plum, accompanied by nuances of leather, tobacco, and spices. On the palate, the structure is elegant, with silky tannins and a beautiful freshness that balances the richness of the vintage. The finish is long, persistent, and harmonious.
This wine will perfectly accompany red meats, stews, or characterful dishes. In magnum, it promises many more years of evolution.

The grape varieties include Jacquère, Muscat, Altesse, Mondeuse, Favorita, Muscat à Petit Grain, Roussanne… After racking the barrels and aging vats from all his terroirs (Savoyard and Italian), Jean-Yves gathers all the lees in a single vat to obtain Vin de lies. These lees are suspended in a small quantity of wine, again decanted and recovered once or twice. Nourished by the lees, the red becomes smoother, sweeter, and the white is less tense, rounder. Jean-Yves Péron has gathered here the lees from all his 2021 whites and some from 2022.

Frank Cornelissen
Munjebel FM, one of Frank Cornelissen's single-plot cuvées, is an organic (Eurofeuille), biodynamic, and natural red wine with DOP Etna Rosso and IGP Terre Siciliane Nerello Mascalese appellations. It comes from the vast contrada Feudo di Mezzo, specifically its upper part, known as Sottana. Its soil is deep, and the wines it produces are of an uncommon elegance typical of this region. The site is well-ventilated, but ideal ripeness is difficult to achieve in wet vintages. The magnum format amplifies the character of this wine and accentuates its roundness.
Vinification
The Nerello Mascalese harvest is destemmed, lightly crushed, and then macerated for 50 days on the skins. Fermentation is carried out using indigenous yeasts. The wine is aged for 18 months in fiberglass vats and 18 months in bottles. It is not clarified but lightly filtered.
Tasting
An almost Burgundian elegance and roundness characterize this wine, even in warm vintages. A special vintage of great finesse, which adapts to the most varied dishes. Try it with all the cuisines of the South: Italian, Greek, Provençal… We would recommend a delicious cassoulet from Sillon to accompany it. Or simply a good black pig ham from Bigorre.

Magma is Frank Cornelissen's classic red grand cru. Produced organically (Eurofeuille label) and biodynamically, and classified as DOP (AOP) Sicilia-IGP Terre Siciliane Nerello Mascalese, it is a wine for ageing, produced only in great vintages, when phenolic maturity has been reached. It comes from old, ungrafted Nerello Mascalese vines, planted in 1910 on the Barbabecchi contrada, at an altitude of 910 m, renowned for capturing the first rays of the sun in the cool of the morning. The magnum format enhances its depth and gives it even more breadth.
Vinification
This natural, organic, and biodynamic wine is obtained by sixty days of skin maceration of destemmed and lightly crushed grapes. No fining, no addition of sulfites. Light filtration before bottling.
Tasting
Magma restores the remarkable depth of Nerello Mascalese. Rich and elegant, with a dense texture, it has character, personality, and great finesse. More mineral than fruity, it offers notes of secondary fruits (blackberry, prune) and melted tannins. This great wine requires great dishes: we recommend stewed beef or coq au vin. So think about a can of Isabelle Leydier Delavallade or Fermiers du Bord de Sèvre.

Cailloux is an organic and natural red wine from Patrick Bouju, with no added sulfites and sourced from the Auvergne terroir. Classified as a Vin de France, it is a wine extremely representative of its terroir and a fine example of the winemaker's refined expertise. The magnum format amplifies its natural character and further accentuates its depth.
Vinification
Cailloux comes from Patrick Bouju's old Pinot Noir vines located in Madargue, near Riom, in Limagne. The terroir is basaltic, clay-limestone, marl-limestone, and sandy. The grapes macerate in whole bunches, and during fermentation, 1% of the estate's Chardonnay press juice is added. The wine is aged for a year in sandstone amphorae and barrels.
Tasting
Cailloux lives up to its name: wild, smoky, long, and stony, with great aromatic persistence. Marked by intensely mineral notes: stone, metal. The fruit is present and juicy. The overall impression is dense and concentrated; the wine can be drunk now but will still have a few years to drink. Serving temperature: 14-16 °C. Open twenty minutes before tasting or decant. You can pair it with charcuterie, salted meats, beef and all kinds of local cuisine.
