Cuvée YARD x Einhart Blanc Orange 2023
Domaine Einhart
A brilliant, free, and gourmet Alsace orange wine
With this Cuvée YARD x Einhart 2023, Domaine Einhart breaks new ground and offers a white maceration wine rich in color and expression. Created in collaboration with YARD, this limited edition cuvée combines the energy of the young gastronomic scene with the expertise of a winemaker committed to organic farming in the heart of Alsace.
The blend of Pinot Gris and Gewurztraminer, two traditionally aromatic grape varieties, was macerated for a few days to extract body, color, and character. The wine was then aged for 6 months in stainless steel tanks, on lees, to maintain a fresh and brilliant profile. The limestone terroir enhances this mineral tension, perfectly balancing the natural richness of the grape varieties.
An accessible, floral, and subtly spicy orange wine
Its brilliant coppery color already hints at its deliciousness. The nose is charming and very expressive: fresh rose, citrus zest, a hint of blond caramel, and sweet spices. On the palate, the wine reveals a silky texture, with a lovely acidity and a fine tannic structure typical of orange wines, but here very measured. The whole is fluid, lively, almost joyful.
This cuvée should be drunk at 10-12°C, without decanting, simply but with depth. It brilliantly accompanies a summer barbecue, fragrant Asian cuisine, or even washed-rind cheeses. Drink it now or within two years to enjoy its vibrant freshness.
Hedyos Red 2023
Hedyos is a red wine from the Gaillac terroir (Occitanie), organic and natural, produced by Domaine Bois-Moisset and classified as a Vin de France. A classic Syrah from the South, remarkable for its lightness and drinkability.
Vinification
Hedyos is 100% Syrah, produced without any chemical additives and fermented with indigenous yeasts. The Syrah harvest macerates for two weeks in whole bunches.
Tasting
A spicy lightness characterizes Hedyos, a red wine from Domaine Bois Moisset. The Syrah is fluid, supple, and mineral, with a dominant sweet spice and notes of black olives. It pairs well with Mediterranean dishes, tapenade, bagna cauda or anchoïade, pizzas, and pissaladières.
Learn more about Domaine Bois-Moisset
In the heart of France's oldest vineyard—Gaillac, in the Tarn region—Sylvie Ledran, Philippe Maffre, and their son Hippolyte oversee their Bois-Moisset estate, a wine-growing property associated with mixed crop and livestock farming, all organic. Gaillac is famous for its many ancient indigenous grape varieties, and its wine-growing heritage is uniquely rich.
Cows and Vines
Domaine Bois-Moisset is also home to a herd of old local breed cows, and guest rooms are available during the summer months. It is in this small rural paradise that natural wines typical of their origin and their terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years.
Native grape varieties
The grape varieties are dominated by Syrah and Duras, but the wines of the Bois-Moisset estate reflect the ampelographic richness of the Gaillac region (braucol, prunelart, loin-de-l’œil, mauzac, braucol, ondenc, etc.). The red wines are crisply fruity, concentrated but with smooth and delicate tannins, the whites have character and the pet’ nat’ are particularly tasty.
Vieille Vigne Red 2017,
With a few years under its belt, this beautiful organic and natural wine reveals even more complexity and depth: drink now! Vigne Vieille du Falgueyras is a fruity and indulgent red wine, rich in notes of red fruits (blackcurrant, blackberry, morello cherry) and beautifully peppery. Its profile is enhanced by sweet spices, prune on the nose, black olive, as well as more mineral accents (smoke, natural incense). It has character, oak without exaggeration, and a very beautiful body. Typical of the Gaillac terroirs, this is a red wine made 100% from old Syrah vines aged thirty and forty years, planted on boulbènes (gravelly, loamy sand) on the second terrace of the Tarn. The destemmed harvest macerates in cement vats with two punchings of the marc. The fermentation temperature did not exceed 21°C. Aging continues for nine months before bottling without filtration and, of course, without the addition of sulfites.

The name Gaillac, the region where the Bois-Moisset estate is located, owned by Sylvie Ledran and Philippe Maffre, has been associated with wines since Antiquity; it is the oldest vineyard in France, with two thousand years of history and an impressive collection of ancient indigenous grape varieties. It is also a region of dazzling beauty, nicknamed "French Tuscany" because of its gentle hills planted with groves and its almost Florentine luminosity. Many estates, including that of Bois-Moisset, showcase this uniquely rich winemaking heritage. Along with an estate planted with vines, it is an organic mixed farm that directly sells its production of lentils, sunflower oil, cereal flours, and grape juice. A herd of old local breed cows also thrives there, and guest rooms are available in the summer. It is in this small rural paradise that natural wines typical of their origin and terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years. The grape varieties are dominated by Syrah and Duras, but the ampelographic richness of Gaillacois (braucol, prunelart, loin-de-l'œil, etc.) is also evident in the vintages of the Bois-Moisset estate, which consist particularly of red wines with crisp fruitiness, concentrated but with smooth and delicate tannins.

With its playful name and delicate bubbles, "Coince ta bulle" is a natural sparkling wine that invites lightness and conviviality. Produced from the vines of Château Frédignac, this sparkling white wine showcases Sémillon, the emblematic Bordeaux grape variety, grown on limestone soils. Vinified using direct pressing and aged for 6 months in stainless steel vats, it offers a lively, digestible, and decidedly refreshing profile. Certified Nature & Progress and Eurofeuille, this wine expresses viticulture that respects the living and a minimalist approach in the cellar.
Produced using the ancestral method, this Pet’ Nat’ retains all the spontaneity of the fruit and a natural effervescence. Disgorged at the end of winter, it develops a striking freshness, supported by a low alcohol content (10%), ideal for moments of pleasure without heaviness.
On the first nose, “Coince ta bulle” reveals a subtle bouquet, with grassy and fresh notes, reminiscent of spring mornings in the heart of the vineyards. On the palate, the bubble is fine and lively, highlighting a beautiful acidity that prolongs the sensation of freshness. The whole is crisp, thirst-quenching, with a nice mineral tension brought by the limestone terroir.
Served between 10 and 12°C, this Pet’ Nat’ is the perfect companion for spontaneous aperitifs, summer evenings and festive moments. With its liveliness and digestible profile, it whets the appetite and pairs wonderfully with tapas, seafood or a simple piece of fresh cheese.

XL Xarel·lo White 2020
Partida Creus
XL Xarel·lo is a smoky, explosive, lively, and mineral white wine that is also characterized by excellent drinkability and conviviality combined with uncommon depth and persistence. Classified as a Vino de Mesa (table wine), this is a classic white from the Partida Creus estate that offers a pure and typical expression of the native Catalan grape variety Xarel·lo. It is a good introduction to this winery's many vintages, as it is so representative of their style. Pair XL Blanco with seafood, fish, white meats, and roasted or grilled poultry.

Partida Creus is an important estate, both from a winemaking and historical perspective—we are talking here about the history of the vine in Catalonia. Massimo Marchiori and Antonella Gerosa, originally from Piedmont—and even from the Langhe region, where wine is well-versed—first pursued careers as architects in Barcelona. But the wine bug tickled them, and they soon abandoned the big city and its sophistication for the vineyards of southern Catalonia, in Bonastre in Baix-Penedés. There they found a number of abandoned vineyards planted with a dizzying diversity of traditional Catalan grape varieties, which they passionately revived to save these varieties—and their wines—from oblivion. For them, it's not just a matter of saving their heritage, no: it's a matter of taste and nature. Of natural wines, which they will never stop making from now on on these sandy, poor, clay-limestone or clay-gravel soils, poor and poorly irrigated, where the vines suffer to produce their best juice. Massimo and Antonella practice organic, biodynamic, entirely manual and natural viticulture in order to give new life to these wines. Vinyater, sumoll, garrut, monastrell, ull de perdiu, ull de llebre, sumoll, queixal de llop, cariñena, trepat, ceciat parent, maccabeu, parellada, pansé, vinel·lo, bobal, cartoixà vermell or xarel·lo: it is a true conservatory of the native Catalan grape varieties that Partida Creus cares for. There is also Moscatel, Grenache, Merlot and Cabernet (among others). Few wineries can boast of growing so many different grape varieties. The wines reflect this diversity, with winemakers striving to best convey the signature of the soil and the grape variety: single varietals are common among them, alongside very rich blends, all in the styles dear to Catalonia: still wine, "ancestral" sparkling wine, and even vermouth. The bottles themselves are works of art: bare glass, simply marked with two large stenciled initials that indicate the cuvée. The wines, fresh, vibrant, lush but always straightforward and impeccably juicy and fruity, breathe life. The arrival of a Partida Creus at the table always elicits cries of satisfaction.
Skin Contact Wine Beer 2021,
Cyclic Beer Farm
A beautiful harmony of brewing flavors and winey notes, Skin Contact 2021 vintage is a blend of several different beers fermented with the native yeasts of the Cyclic brewery and the equally native yeasts of the estate's grapes. Add to this the yeasts from their tangy brewery blend. The grape marc used for Skin Contact comes from their 2021 vintages and the following grape varieties: Sumoll, Parellada, Ull de Llebre, and Cabernet Sauvignon. Skin Contact is 6.8% alcohol.

Cyclic Beer Farm is a duo of Barcelona friends, Alberto and Joshua. Based in the Catalan capital, they have two sides to their business: beer (Cyclic Beer) and wine (Cyclic Wine). The beers, inspired by the Belgian model, come in surprising and colorful ranges where expertly measured yeast cocktails and house brews combine with varied macerations of fruits, vegetables, herbs, and grape marc from traditional Catalan varieties, the latter taken after the fermentation of their wines — because the second side is the wine, made exclusively from native Catalan grape varieties. Packaged in 75 cl bottles so that everyone can satisfy their thirst, the beers play between classicism and flights of inspiration, in a contrasting and creative way, Catalan style, without forgetting to dare the beer with wine, of course. On classic bases and a Belgian fermentation model, the two brewers-winemakers Joshua and Alberto play with ingredients, aromas, macerations, between cereals, fruits, vegetables or grape skins of Catalan grape varieties, to achieve flavors that are reminiscent of the Obni (unidentified drinkable object). Whether they assert themselves on balance or on a certain managed dissonance, these beers will never leave you indifferent and will reveal their full potential during the summer heat, served well chilled (like their creators).
Es d'aqui Nino Red 2016
A 100% Braucol from the Gaillac region! On the palate, this wine, which may seem austere in its early years, eventually develops a vegetal side, notes of candied fruit, and beautiful tannins. The attack is rustic and earthy, the finish fruity and complex.
TN Tinto Natural Red 2022,
A structured and natural Tempranillo, faithful to the Catalan terroir
The TN Tinto Natural 2022, produced by Partida Creus, is a characterful red made from Tempranillo. With a three-week whole-bunch maceration and 8 months of aging in stainless steel vats, this wine captures the raw and sincere essence of this iconic grape variety, while respecting the principles of natural winemaking.
Tasting: Intensity and Complexity
On the nose, notes of leather mingle with aromas of ripe red fruits and spices, offering a beautiful aromatic complexity. On the palate, the Tempranillo's tannic structure is fully expressed, supported by a lively acidity that balances its power. The finish is long, with a persistence that reflects the careful work of the winemaker and the richness of the clay-limestone terroir.
A red for beautiful tables
This structured red pairs perfectly with rich Mediterranean dishes, such as lamb with herbs, stews, or grilled meats. Its complexity and intensity also make it an excellent choice for pairing with mature cheeses.
Serve between 14 and 16°C, this wine does not require decanting but is best opened half an hour before tasting. With an aging potential of 5 years, it will evolve towards deeper and silkier aromas.
LP Clarete Red 2021,
Clarete ("clairet") lives up to its name with its light, airy tannins. Medium-bodied, it is crisp, vibrant, and lively with refreshing acidity. It is a wine full of red fruits and spices, elegant without being solemn, and therefore suitable for all occasions. This is a blend of red and white grape varieties that represents an ampelographic anthology of the estate, as it brings together 80% red grape varieties (Jaen, Touriga Nacional, Tinta Roriz, Alfrocheiro) and 20% white grape varieties (Encruzado, Bical, Malvasia, Cerceal and Terrantez). The effect produced by this blend is an increased fluidity of the red wine, which becomes supple and light. The vines grew on granite and clay-sand soils facing south in the hills of Penalva do Castelo, surrounded by oak, pine, olive and chestnut trees. The harvest is manual. The grapes are destemmed and slowly crushed by foot for two days before macerating in stainless steel vats. Fermentation is spontaneous, using indigenous yeasts. Aging is ten months and bottling is done without filtration. No chemical inputs are added to the vineyard or the winery.

The duality of the name Ladidadi/Pinheiro is simply due to the fact that this winemaking entity is the result of a friendship: that of Florian Tonello, creator of the Ladidadi Wine brand, wine merchant-DJ-globetrotter who devotes his life to making natural wines known and loved, and Hugo Pinheiro, winemaker at the head of a small estate of two and a half hectares in Penalva do Castelo, district of Viseu, Dão appellation (central Portugal). Together, they decided to produce several vintages of natural wines, obtained through organic farming, manual harvests, fermentation with indigenous yeasts, without filtration or the addition of sulfites, from the emblematic grape varieties of the appellation on an estate planted around thirty years ago, with a small part planted in the 1980s. We therefore find Touriga Nacional as the main grape variety in red, followed by Clarete, Jaen and Encruzado, and in white Malvasia, Cerceal, Bical and Terrantez. Vibrant, lively wines, and a great opportunity to discover Portugal's wine-growing region in natural mode.

Fond Cyprès
Halfway between red and rosé—because its vinification involves both—the very drinkable Premier Jus is the very image of a delightful gurgling: a juicy bomb that oscillates between light red and dark rosé. Fresh, fruity, delicious, addictive, it awakens the mind dulled by the summer heat. It is the result of a blend of Carignan and Grenache purchased from a certified organic winemaker. The vines grow on marl-limestone soils. The harvests of the two grape varieties are processed separately: the Carignan is macerated for two days in whole bunches in a Grenache must in full fermentation, obtained by bleeding. Two days after the blending of the two varieties, everything is pressed directly. Thus, the beginning of vinification is for rosé and the end of vinification is for red. A six-month aging in stainless steel vats precedes bottling with an infinitesimal addition of sulfite to stabilize this fiery nectar.

This Corbières estate is built on solid foundations: its two winemakers, Rodolphe and Laetitia, are also descendants of winemakers. Even before planting their first vine, they already have a clear objective: "to produce southern wines that reflect us, wines with character attached to our soils, with freshness and refined tannins." They want to obtain entirely natural wines, concentrates of terroir. In the heart of the old Corbières massif, they took over an old estate already planted with abandoned Carignan and Grenache vines, which had not seen any fertilizer or pesticides for years: these clean and vibrant soils were ideal conditions for launching into natural wine. Around this historic heart, they first planted Grenache Noir and Syrah, then a plot of white grape varieties: Viognier, Grenache Blanc, Roussanne. The estate has been Ecocert certified since 2010 and also complies with the Nature & Progrès charter. Vinification is carried out without the addition of sulfites or exogenous yeasts. "We make wines for pleasure," say Laetitia and Rodolphe. For them, natural wine is first assessed by taste, from the harvest. The vintages closely follow the plots, the musts are fruity, fluid, and complex. Fond Cyprès wines poetically evoke the estate's ecosystem and the vegetation that protects the plots: pine forests, shaded springs, the beauty of the natural environment that brings freshness to the wines and leaves the signature of the soil. Deliciously balanced between mineral imprint, plant environment and fruit expression, Fond Cyprès wines reflect the South: the caress of its sun, but also the freshness of its shadows.
Fontana Blanc 2021
La Vinicola di Antonio Gismondi
On the nose, white flowers, exotic fruits, Mediterranean plants, garrigue, and maquis: Fontana is a fragrant, savory, and generous white wine. The retro-olfaction is very fruity. Opulent and powerful, this wine is known as a "falanghina beneventano," or a falanghina from Benevento. This means that it is produced in Benevento from the falanghina grape, a very old local variety that, in ancient times, formed the basis of the famous Falerna cru (falernum), then considered top-of-the-range. Fontana is obtained by direct pressing with fermentation in stainless steel vats. Round, low in acidity, very aromatic, with a lot of sweetness and opulence on the finish, it offers good aging qualities. This wine can be drunk now, but it will also be able to keep for a long time.

The azienda of Antonio and Anabel Gismondi is located in Cerreto Sanita, in the Benevento region of Campania. A microclimate gives this area almost continental accents: the humid winds coming from the Tyrrhenian Sea collide with the first ramparts of the Apennine chain, causing condensation in the air and a drop in temperatures, which are significantly cooler and more humid than on the coast. If we add a phenomenon of thermal inversion between day and night frequent in the Apennine climate, the freshness of the wines of the Antonio Gismondi estate is nothing mysterious in this southern Italy, which is nevertheless known for its very hot climate. The estate is family-run: for generations, the Gismondi family has cultivated vines and made wine using the most traditional and natural methods, to which biodynamic techniques are added. For a long time, of the fifteen tons of grapes produced each year, one ton was reserved for on-site vinification for family consumption, the rest going to the local wine cooperative. It was the meeting with Massimo Marchiori and Antonella de Partida Creus [link] that decided Antonio and his wife Anabel to start producing natural wines at home from the entire harvest. The two-hectare vineyard is located between 350 and 380 meters above sea level, on clay, loam, and stony soils, with two-thirds facing south, planted with vines around six years old. The rest faces southwest and corresponds to the Pietre and Cerreto cuvées, with vines thirty years old. The grape varieties are Merlot, Freisa and Sangiovese for the reds, and Falanghina and Malvasia di Candia for the whites.
Auxerrois Origin Blanc 2021
Jean-Marc Dreyer
Auxerrois, also known as Pinot Blanc, is a typically Alsatian grape variety that forms the basis of this Auxerrois Origin from Jean-Marc Dreyer. Floral, fresh, and seductive, it is both atypical and indulgent, well-defined by the maceration process, which gives it a distinguished texture. Its alcohol content is quite generous (14% alcohol). Whole-bunch maceration gives this dense and dry wine, with its delicious salinity, amber tones, floral notes, and sensations of perfect purity. Acorn-fed Ibérico ham would melt with joy alongside it. Jean-Marc Dreyer's Origin range is dedicated to single-varietal wines made using skin-contact maceration based on the six white grape varieties of Alsace: Sylvaner, Auxerrois, Pinot Gris, Gewurztraminer, Riesling, and Muscat. This wine is produced using the biodynamic method, fermented using indigenous yeasts, and is unfiltered and unclarified.

"Maceration in Alsace is an ancestral tradition!" says Jean-Marc Dreyer, adding that direct pressing in this region is a modern invention, linked to the advent of electricity. In the past, people worked by hand and let the grapes macerate before sending the marc to the press." Whole-bunch maceration is Jean-Marc Dreyer's signature and represents 85% of the estate's production, with the remainder consisting of direct-pressed whites, aged without coal. Jean-Marc succeeds several generations of his family at the Dreyer & Fils estate, established in 1830 between Obernai and Molsheim. Upon taking over the estate, he immediately opted for biodynamics, but he hesitated for a while between several methods: at the beginning, his wines were more oaky, aged in new barrels with stirring. Then, a sweet period: all his wines contained residual sugar. In 2008, he tried vinifying without any sulfur and found his direction: the following winter, upon returning from the pilgrimage to Compostela, he decided to no longer add sulfites to his wines. Having made this decision, he asserted his style around skin maceration, quite extensive, chiseled, always surprising on Alsatian grape varieties, whose structure it brings out without sacrificing delicacy. Jean-Marc works in single-varietal or blended vintages and also produces Pinot Noir reds of surprising depth.
Bon Papa Blanc 2021,
Domaine Bois Moisset
The color is light gold, slightly cloudy. Bon Pâpâ is a white wine that offers a decided but light minerality and a nose, initially a little closed, with fermented and milky accents with a slight smoky touch and a hint of fresh hay. On the palate, the wine is round, ample, and fresh with a juicy, fleshy texture. The texture is savory and fruity: warm apple, nectarine, tangy pear, and a herbaceous, invigorating finish, with a fine acidity and a noble bitterness (apricot kernel). The wine is characterized by a delicious freshness. Plenty of crunch and very pronounced fruit. Some notes of lemony citrus, grapefruit, and a beautiful coexistence of roundness (without sweetness) and acidity. Produced in the Vin de France category, Bon Pâpâ is one of the rare whites from the Bois-Moisset estate. Its composition: 10% Muscadelle, 45% Sauvignon and 45% len-de-l’el (far from the eye). The vines are not treated with any synthetic chemicals, and the amendments are composted manure from the estate’s small cattle farm. Weeding is done mechanically, and sometimes even manually. The grapes are pressed immediately after harvest and blended into fresh juice. Fermentation takes place at 19°C, before malolactic fermentation. The wine was bottled with a minimal sulfite content of 1g per 100 liters.

A beautiful texture, with notes of citrus and exotic fruits. Roussanne, Grenache Blanc, and Viognier grown on the same plot: a southern blend that produces a truly southern white wine, original, balanced, fresh, structured by light maceration, fermented and aged in barrels. Its profile is atypical in Corbières. A distinctive feature: the plot was planted according to the desired wine, and chosen to face north to ensure good acidity. The three grape varieties are harvested at different ripeness levels. As soon as the Viognier (later ripening) is ripe, everything is harvested together: the Grenache Blanc is often overripe. This produces a very unique flavor balance, between freshness, richness, and roundness. After direct pressing, the must is vinified in old 225-liter barrels, then aged for ten months. It can be kept for around ten years, if given time: all pairings suit it.

Languedoc to the tips of its nails, delicate, dense, and fresh, fruity and generous, all freshness and delicacy: a beautiful, lively and spicy bottle, with lovely notes of leather and undergrowth, and well-integrated tannins that don't attack the palate. Coming from a sixty-year-old limestone-marl Carignan plot, this wine, after hand-harvesting and destemming, is fermented for four weeks in concrete vats. The wine is then aged for twelve months in old demi-muids (barrels of 500 to 650 liters) which have the quality of not oaking the wine but ensuring a comfortable, gentle aging. With its ripe and evolved tannins, it offers great aging potential, but we can already start drinking it. A lively bottle, to be paired with everything that the western Mediterranean coast (Languedoc, Roussillon, Catalonia, Valencia region, etc.) has to offer. We obviously don't forget the region east of the Rhône: Provençal, Italian, Greek cuisines, etc. Keep for around ten years.

Muscana Blanc 2020,
Domaine Einhart
Beautiful orange color with amber highlights, the initial nose displays typical aromas of overripe, slightly smoky Muscat berries. The second, very refined nose is accompanied by a hint of citrus, inviting further tasting. The attack, straightforward and very full, is marked by acidity blended into beautiful aromas of candied quince. The finish is invigorating, still with the melted tannins produced by maceration. Muscana, as its name suggests, is a Vin de France made from 100% Muscat grapes grown on the estate on oolitic limestone terroirs of the Muschelkalk type (plots located in Fleckenstein, Westerberg, and Meyen). The average age of the vines is 25 years. The harvest is manual and the grapes are destemmed. Maceration lasts four to six days with indigenous yeasts and aging takes place in stainless steel vats on fine lees, without filtration.

Located in the northern part of the Alsatian vineyard, horizontally above Strasbourg, the Einhart estate is a ten-hectare family property whose vines are located on the hillsides that rise between the Alsace plain and the Vosges mountains. The soil is clay-limestone and rich in fossils (muschelkalk, i.e. shell limestone and oolitic limestone, and lettenkohle or dolomitic limestone). Since 1990, Nicolas Einhart has been at the helm, now assisted by his son Théo. True to his commitments to the TIFLO association, of which he is a co-founder, Nicolas devotes his winemaking to protecting the land and biodiversity, making wine without additives, refusing harmful phytosanitary products, and maintaining ecological refuge areas. His estate has been certified organic since 2011. Like Jean-Marc Dreyer, he is firmly focused on skin maceration and produces white maceration wines (orange wines) in addition to a Pinot Noir red. Entirely manual harvests, destemming of the grapes, light punching down, and delicate pressing are characteristic of the estate, as well as the separate vinification of each terroir, aging on lees, and the absence of filtration before bottling. The wines are made from pure grapes, lively, powerful, invigorating, and reflect the minerality of the beautiful terroirs of the Vosges foothills.
Cerreto Blanc 2020, La Vinicola di Antonio Gismondi
Cerreto is a lively and fresh wine with a pale yellow color and an acidic, lemony nose with hints of white flowers. The nose is fruity (lemon zest), as is the palate: the citrus fruits linger, the minerality asserts itself. A good companion for seafood, shellfish, and raw fish. Cerreto is made from Malvasia di Candia vines, a grape variety also known as Uva di Cerreto. This name specifically covers a very old local grape variety that is even said to be indigenous and is actually a clone of Malvasia di Candia. The vines grow on clayey plots facing southwest. Skin maceration lasts four to five days in stainless steel vats, followed by pressing and aging for six to ten months in stainless steel vats. No added sulfites, no filtration.

The estate is family-run: for generations, the Gismondi family has cultivated vines and made wine using the most traditional and natural methods, to which are added biodynamic techniques. For a long time, of the fifteen tons of grapes produced each year, one ton was reserved for on-site winemaking for family consumption, with the rest going to the local wine cooperative. It was a meeting with Massimo Marchiori and Antonella de Partida Creus that led Antonio and his wife Anabel to start producing natural wines at home from the entire harvest. The two-hectare vineyard is located between 350 and 380 meters above sea level, on clay and stony soils, with two-thirds facing due south. The grape varieties are Merlot, Freisa, and Sangiovese for the reds, and Falanghina and Malvasia di Candia for the whites.
Tannat Rouge 2020,
Domaine Capmartin
Tannat, as its name suggests, is made entirely from the emblematic grape variety of the Madiran appellation. With no additives or sulfites, it is the natural counterpart to the estate's fine Madirans. The Tannats from which it is made, with an average age of fifteen years and harvested when fully ripe, grow on clay-gravel soils on north-facing plots. The use of cover crops helps loosen the soil and provides nutritional support, alternating with natural grass cover. The harvest is destemmed. Maceration is entirely semicarbonic, followed by pressing in the first third of fermentation. Alcoholic fermentation ends in the liquid phase. Aging is six months in stainless steel vats. This Tannat is already a classic. Simon Capmartin's goal was to create a pure fruit cuvée, to capture the intensity of the grape variety: it is Tannat, picked and bottled. "As little extraction as possible is used; we try to capture the fruit." The profile is quite fresh, but the wine remains quite fleshy and even easy to drink. It is a wine of character, for the table, for eating. A gastronomic wine.

Guy Capmartin settled in 1985 in the former convent of Maumusson-Laguian, in the Gers, to exploit the magnificent surrounding soils, from which he would soon produce highly acclaimed wines in the Madiran and Pacherenc-du-Vic-Bilh appellations. In 1987, Tradition, his first cuvée, was born. Since the 2000s, he has decided to work exclusively in organic and biodynamic agriculture, a decision reinforced and rooted by his son Simon, who took over. The wines have been noted and have received numerous awards. Certification was obtained in 2013, and the Demeter label is in progress. Taking advantage of his most specific plots of the estate, Simon also undertakes to produce natural cuvées, without inputs and according to the principle of minimal interventionism. Labeled Vin de France or Côtes-de-Gascogne, these are the cuvées that we offer you at Culinaries.
The estate's grape varieties are organized around Tannat, the king of Madiran, surrounded by a palette as rich and diverse as the estate's soils: Cabernet Sauvignon, Cabernet Franc, a little Syrah and Grenache Noir, plus a few old red vines currently being identified. A plot of tannat, located on a very fine and very supple clay-marl soil with gravel, is pre-phylloxera. For the white, Petit Manseng, Gros Manseng and Petit Courbu, as well as, for the Côtes-de-Gascogne, Sauvignon Blanc, Sauvignon Gris and Viognier.
The main objective of the Capmartin estate is to make frank, fruity, authentic and honest wines, perfectly reflecting their terroir, which explains the parcel-based nature of the wines under the appellation: one parcel corresponds to one vintage, and vice versa. This also explains the number and variety of vintages.
BN Blanco Natural Blanc 2019,
Partida Creus
The Catalan estate of Partida Creus is as important from a winemaking perspective as it is from a historical perspective—we're talking about the history of the vine in Catalonia. Massimo Marchiori and Antonella Gerosa, originally from Piedmont—and even from the Langhe region, where wine is well-known—first pursued careers as architects in Barcelona. But the wine bug bit them, and they soon abandoned the big city and its sophistication for the vineyards of southern Catalonia, in Bonastre in Baix-Penedés. There, they found a wealth of abandoned vineyards planted with a dizzying diversity of traditional Catalan grape varieties, which they passionately revived to save these varieties—and their wines—from oblivion. On their part, it’s not just a matter of saving heritage, no: it’s a matter of taste and nature. Natural wines, which they will continue to make from now on on these sandy, poor, clay-limestone or clay-gravelly, poor and poorly irrigated lands, where the vines suffer to give their best juice. Massimo and Antonella practice organic, biodynamic, entirely manual and natural viticulture in order to give new life to these wines. Vinyater, sumoll, garrut, monastrell, ull de perdiu, ull de llebre, sumoll, queixal de llop, cariñena, trepat, ceciat parent, maccabeu, parellada, pansé, vinel.lo, bobal, cartoixà vermell or xarel.lo: it is a true conservatory of the native Catalan grape varieties that Partida Creus cares for. Moscatel, Grenache, Merlot, and Cabernet (among others) are also found there. Few wineries can boast growing so many different grape varieties. The wines reflect this diversity, with winemakers striving to best convey the signature of the soil and the grape variety: single varietals are common among them, alongside extensive blends, all in the styles dear to Catalonia: still wine, "ancestral" sparkling wine, and even vermouth. This tangy, exotic, and aromatic white is made from 90% Macabeu and 10% Cartoixá Vermell. It evokes an avalanche of ripe yellow fruits—apricots in particular—orange blossom, and musky spices, balanced by delicate acidity and light tannins. Perfect for an aperitif or at the start of a meal, it has an alcohol content of only ten degrees.
