Frédéric Cossard
84 X 21 est une cuvée exclusive imaginée avec Frédéric Cossard, dont le nom résume à lui seul le projet : 84 pour le Vaucluse, d’où proviennent les raisins, et 21 pour la Côte-d’Or, où ils sont vinifiés par Frédéric Cossard. Élaboré à partir de 100 % Grenache, ce rouge offre une expression généreuse mais très digeste du cépage, avec des notes de fruits rouges mûrs, de fraise confiturée, de cerise, de poivre, de cumin, de thym et de menthe. La bouche est ample, souple et déjà très accessible, avec des tanins fins et une belle fraîcheur qui équilibre parfaitement la maturité du fruit.
Les raisins sont vinifiés en vendange entière dans des cuves béton, puis le vin est élevé en œufs béton, un choix qui permet de préserver la pureté aromatique du Grenache tout en affinant sa texture sans apport boisé. Avec l’évolution en bouteille, la cuvée gagne encore en rondeur et en harmonie. À servir autour de 15-16°C, elle accompagne particulièrement bien des grillades, une épaule d’agneau, une cuisine méditerranéenne, des plats mijotés ou une belle planche de charcuterie.

Skin Contact Rafling est une interprétation en macération du Riesling, issue de raisins provenant d’Alsace. Le contact prolongé avec les peaux apporte davantage de matière et de structure qu’un blanc classique, tout en conservant l’énergie caractéristique du cépage. Le profil aromatique mêle agrumes, fleurs blanches, fruits à noyau et notes salines, avec une bouche texturée, fraîche et légèrement tannique.
La cuvée est vinifiée naturellement, avec fermentation spontanée et macération pelliculaire prolongée. C’est un blanc de caractère, presque orange dans son approche, qui fonctionne particulièrement bien avec des poissons grillés, viandes blanches, fromages, cuisine végétale ou plats asiatiques légèrement épicés.

Feel Good 2022 est un 100 % Savagnin issu de vieilles vignes d’environ 50 ans situées à Saint-Agnès, dans le Jura, sur des sols marneux. Cossard en propose une interprétation libre et très expressive, avec un nez sur les agrumes, les fruits jaunes, les fleurs, les épices et une légère touche saline. La bouche combine ampleur, fraîcheur et texture, avec une finale longue et énergique.
Les raisins sont vendangés manuellement puis fermentent spontanément avec les levures indigènes. Le vin est élevé environ 12 mois en œufs béton, sans collage, sans filtration et avec peu ou pas de sulfites ajoutés. À servir avec un poisson en sauce, une volaille, des champignons, un Comté affiné ou une cuisine légèrement épicée.

Bigotes 2022 est un 100 % Chardonnay qui offre une expression à la fois ample, tendue et minérale de la Bourgogne. Le nez mêle agrumes, fleurs blanches, notes beurrées et salines, tandis que la bouche se montre précise et structurée, avec une belle fraîcheur en finale.
Les raisins sont vendangés manuellement et fermentent naturellement avec les levures indigènes. Certaines sources indiquent un élevage en qvevri pour cette cuvée, d’autres en barrique ; je resterais donc prudent sur ce point précis pour le 2022. À table, Bigotes accompagne très bien les fruits de mer, poissons, volailles ou fromages.

Where?
Frédéric Cossard is one of the most prominent figures in natural wine in Burgundy. A former sommelier and then wine broker, he founded Domaine de Chassorney in Saint-Romain with his partner Laure in the mid-1990s. From the outset, he committed to chemical-free viticulture and low-intervention winemaking, going against the prevailing practices of the time in Burgundy.
For over twenty years, he developed both the estate and a demanding négociant business, allowing him to work with grapes from some of Burgundy's greatest terroirs: Meursault, Puligny-Montrachet, Chambolle-Musigny, Gevrey-Chambertin, and Morey-Saint-Denis. His wines quickly became benchmarks for natural Burgundy enthusiasts, renowned for their purity, energy, and freedom of style.
In 2022, Frédéric Cossard officially left Domaine de Chassorney, which is now run by a new team and with a different philosophy. He continues his work exclusively under his own name, with a meticulous selection of grapes grown according to strict specifications and always with the same pursuit of precision, vibrancy, and authenticity of terroir.
Terroir and soils
Frédéric Cossard's wines come from various Burgundian terroirs, mainly located between the Côte de Beaune and Côte de Nuits. Calcareous, clay-limestone, or marl-limestone soils: each parcel is chosen for its ability to produce vibrant and balanced wines. Some cuvées from Beaujolais also come from granite terroirs.
Vineyard plots and grape varieties
Pinot Noir and Chardonnay play a central role in Frédéric Cossard's work, with a few cuvées of Gamay, Aligoté, or other grape varieties depending on the origins of the selected grapes. The vines are generally old and cultivated with controlled yields to preserve concentration and finesse.
Cultivation methods
Vineyard work is carried out without synthetic products or chemical herbicides. The soils are carefully worked to preserve their life and natural balance. Harvesting is manual and done at full maturity to retain the truest identity of the grape.
Winemaking
Fermentations occur with indigenous yeasts, without exogenous yeasts or technical standardization. Interventions in the cellar are kept to a minimum to allow the terroir to express itself freely. Aging, often in barrels, seeks balance and texture rather than the imprint of wood.
