A Tasting Experience in Elegance
With a luminous pale gold color, Éveil 2023 opens with a delicate nose blending subtle aromas of bergamot and white flowers. On the palate, the freshness is pronounced, with a lovely mineral tension and a slight salinity. Authentic winemaking
The grapes, hand-harvested in 20kg crates, undergo meticulous treatment in the cellar. After a short 24-hour maceration to initiate fermentation, they are pressed directly. Fermentation is carried out by indigenous yeasts, guaranteeing a pure expression of the fruit and terroir. It is then aged for 8 months in Pinot Noir barrels, on fine lees, to give the wine its balance and depth.
A convivial and versatile wine
Served between 10 and 12°C, this wine is perfect as an aperitif or with plant-based dishes, such as grilled vegetables or fresh salads. Its aging potential of 5 to 10 years will also allow it to evolve into even more complex notes.

Domaine de la Sorbiere
We Are Young 2025 est une déclaration d’intention. Plus qu’un simple Beaujolais Nouveau, c’est une vision du vin jeune, libre, sans maquillage ni artifice. Cette cuvée du Domaine de la Sorbière, dans le Beaujolais granitique, rend hommage à la vitalité du Gamay, cépage emblématique de la région, travaillé ici dans un esprit pleinement naturel.
Le raisin provient de sols granitiques qui donnent au vin une fraîcheur minérale très nette. La vinification est aussi simple que sincère : macération semi-carbonique de 5 jours, fermentations spontanées avec levures indigènes, et un élevage ultra-court de 4 jours en cuve inox pour capturer l’instantané du fruit. Aucune intervention œnologique superflue, pas de levures exogènes ni intrants chimiques : ici, tout est naturel, vivant, et respectueux du raisin comme de son terroir.
La robe est d’un rouge très clair, couleur grenadine, presque translucide, évoquant un jus de fruit fermenté. Le nez charme immédiatement avec ses notes d’agrumes, de cerise fraîche et de fleurs blanches, une palette aromatique fine et printanière. En bouche, c’est le croquant du fruit qui domine, avec une trame fluide, fraîche, presque désaltérante, sans manquer de structure. L’alcool modéré (12 %) participe à cette impression de légèreté gourmande.

A lively and accessible red

This wine is made from grapes grown according to the principles of organic farming (Eurofeuille label), carefully harvested by hand to preserve their integrity. Indigenous yeasts, naturally present on the grapes, play a key role in fermentation, ensuring vinification without additives or filtration. The clay-limestone soil of the "La Source" plot offers an elegant minerality and contributes to the wine's freshness.
Tasting Notes
The Carignan de la Source 2022 reveals a deep red color with bright highlights. Marguerite Red 2020
Marguerite is a beautiful bouquet of sweet and spicy spices: cinnamon, black pepper, nutmeg. This red wine from the Gaillac region offers plenty of freshness and volume on the palate, expressing the quality of both its terroir and its grape variety. It is made from 100% Duras, a typical Gaillac grape variety, a cross between Savagnin and Tressot. Some of the vines, around thirty years old, grow on the third terrace of the Tarn, therefore on sandy loam soil, and the other part, also thirty years old, grows on clay-gravel soils exposed to the north. The harvest is destemmed and vatted for two weeks without the addition of sulfites in a cement vat. The marc is punched down twice at low temperature. The wine is aged in cement barrels before bottling.

The name Gaillac, the region where the Bois-Moisset estate is located, in the hands of Sylvie Ledran and Philippe Maffre, has been associated with wines since Antiquity; it is the oldest vineyard in France, with two thousand years of history and an impressive collection of ancient indigenous grape varieties. It is also a region of dazzling beauty, nicknamed "French Tuscany" because of its gentle hills planted with groves and its almost Florentine luminosity. Many estates, including that of Bois-Moisset, showcase this uniquely rich winemaking heritage. Along with an estate planted with vines, it is an organic mixed farm that directly sells its production of lentils, sunflower oil, cereal flours, and grape juice. A herd of old local breed cows also thrives there, and guest rooms are available in the summer. It is in this small rural paradise that natural wines typical of their origin and terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years. The grape varieties are dominated by Syrah and Duras, but the ampelographic richness of Gaillacois (braucol, prunelart, loin-de-l'œil, etc.) is also evident in the vintages of the Bois-Moisset estate, which consist particularly of red wines with crisp fruitiness, concentrated but with smooth and delicate tannins.

Cyclic Beer Farm
Animal, funky, racy, full of character, with a spicy touch and a clean, precise bitter finish, The One is a direct reference to James Brown: not only to his song "She's The One" but also to his concept of "The One": the absolute beat, the rhythmic energy capable of giving the ideal funky coloring to his music. Exactly as brett (wild yeasts) give Cyclic Beer Farm beers in general and this one in particular their desired funky note. The One was the first funky beer made by Cyclic, in 2016, and it is their only saison-style beer not aged in barrels. Instead of aging it in wood, as is the case with most of their funky saisons, they brew, ferment, and flavor in stainless steel tanks to promote the pure expression of the yeasts. The One is 5.8% ABV.

Cyclic Beer Farm is a duo of Barcelona friends, Alberto and Joshua. Based in the Catalan capital, they have two sides to their business: beer (Cyclic Beer) and wine (Cyclic Wine). The beers, inspired by the Belgian model, are available in surprising and colorful ranges where expertly measured yeast cocktails and house brews combine with varied macerations of fruits, vegetables, herbs and grape marc from traditional Catalan varieties, the latter taken after the fermentation of their wines - because the second part is the wine, made exclusively from native Catalan grape varieties. Packaged in 75 cl bottles so that everyone has something to satisfy their thirst, the beers play between classicism and flights of inspiration, in a contrasting and creative way, Catalan style, without forgetting to dare the wine beer, of course. Coup de Foudre Rosé 2021,
Domaine Bois Moisset
A cloudy pink color that already makes you thirsty, a nose that expresses its fruit and fermentation discreetly, while the palate, on the contrary, blossoms with great opulence and roundness, making this Coup de foudre a very easy-drinking wine. The texture on the palate is soft, enveloping, silky, with a fruity and delicious substance. The bubbles are fine and lively, with a tonic and tense finish. From the beginning to the end of the tasting, notes of bitter orange and candied citrus peel, a lovely mineral astringency and a bitterness that further ennobles the whole, balancing the velvety fruitiness. A magnificent bottle, this Coup de foudre, which one might think is vinified in a tuns given its name, but this is not the case: here we have an entirely organic and natural wine, one hundred percent Cabernet Sauvignon, pressed at the harvest and fermented in fresh juice in a room where the temperature is maintained at 19 °C. This alcoholic fermentation is followed by malolactic fermentation and the wine is bottled without filtration. The secondary fermentation takes place in the bottle with indigenous yeasts and, of course, without sulfites added at any stage of the vinification. Disgorging in December. We recommend chilling this beautiful wine upright for a day before opening to avoid excessive overflow upon opening.

Vin nature issu à 100 % de Gamay cultivé en bio dans le Beaujolais, ce millésime 2020 est une proposition audacieuse, presque méditative, loin des clichés fruités et acidulés.
Un rosé libre à l’esprit oxydatif
La macération courte de quelques heures révèle une robe soutenue, aux reflets légèrement orangés, tandis que l’élevage de trois mois en cuve béton et une approche volontairement peu interventionniste laissent place à une micro-oxydation maîtrisée. Aucun intrant œnologique, levures indigènes, et un jus qui s’exprime sans retenue. Le résultat : un rosé atypique, complexe, avec du fond et une belle capacité à évoluer.
Un profil aromatique à part
Au nez, ce sont les fleurs séchées qui dominent, suivies de notes de fruits noirs, de fruits jaunes très mûrs, et une touche zestée rappelant l’écorce d’agrumes. En bouche, la matière est ample, presque tannique, avec une sensation saline en finale. La légère oxydation apporte du relief et une personnalité marquée, sans déséquilibre.
À déguster autrement
Orange 2020 est un rosé d’auteur, à servir entre 10 et 12 °C, sans carafage, sur des moments d’apéritif contemplatifs ou des plats simples mais savoureux. At the foot of the Corbières mountains, the Fond Cyprès estate produces a 2024 red wine imbued with freedom and energy. This natural wine, certified organic (AB), is born on sun-drenched clay-limestone soils, with total respect for the environment: soil cultivation without synthetic products, hand-harvesting, and vinification using short maceration without added yeasts or oenological additives. Here, the fruit expresses itself in all its purity, without artifice.
The Mediterranean trio – Carignan, Grenache, and Syrah – yields a wonderfully fresh wine, with a slightly spicier profile than the previous vintage. Its clear ruby color heralds a youthful and vibrant wine. On the nose, an immediate bouquet of red fruits (cherry, raspberry) mingles with a herbaceous and peppery touch reminiscent of garrigue paths after the rain. The palate, fluid and lively, seduces with its drinkability: smooth tannins, lovely acidity, and a clean finish of sweet spices. Cinsauriel Red 2021
Cinsauriel is an organic and natural red wine from the Languedoc region, produced by Jean-Louis Pinto of the Es d’Aqui estate. 100% Cinsault, classified as Vin de France, it comes from the schist soils of Berlou, near Saint-Chinian.
Vinification
Cinsauriel is obtained by fermentation with indigenous yeasts and a month of maceration of the whole bunches in sandstone jars, the container where the aging also takes place.
Tasting
Beautiful bright ruby color, nose of pepper, rose and strawberry, accents of garrigue, candied black olive and prune. Lively and powerful, Cinsauriel is a robust and distinguished wine. It calls for solid foods: beef, roast pork, roast poultry such as chicken, capon or duck. He also enjoys charcuterie and cured meats.

A child of Ariège, Jean-Louis Pinto chose to stay in the country and make wines that resemble their terroir, hence the name Es d’Aqui (“He is from here”) that he gave to his wine merchant estate, located in Moulin-Neuf, a town near the Aude, between Mirepoix and Limoux. A region where vines once abounded, until the major mildew attacks at the beginning of the 20th century.
Winemaker and merchant
Jean-Louis buys grapes grown organically by winegrower friends. He monitors the fruit set, the ripening, and does everything to know the grapes before harvesting them. He vinifies them at home using natural methods, practicing long macerations on whole bunches and very gentle pressings in a vertical press. He says he has "a lot of vines in common" with his friend Anthony Tortul (La Sorga).
All the terroirs of Languedoc
Jean-Louis Pinto's collection area extends throughout Languedoc, particularly in Hérault, Aude, and Tarn. "I make wines from the South," he says. "I'm mainly looking for terroirs that give freshness." The most powerful reds are made in five terracotta jars, which help him control extraction and give his wines, he says, "a very crystalline quality."

LP Clarete Red 2021,
Clarete ("clairet") lives up to its name with its light, airy tannins. Medium-bodied, it is crisp, vibrant, and lively with refreshing acidity. It is a wine full of red fruits and spices, elegant without being solemn, and therefore suitable for all occasions. This is a blend of red and white grape varieties that represents an ampelographic anthology of the estate, as it brings together 80% red grape varieties (Jaen, Touriga Nacional, Tinta Roriz, Alfrocheiro) and 20% white grape varieties (Encruzado, Bical, Malvasia, Cerceal and Terrantez). The effect produced by this blend is an increased fluidity of the red wine, which becomes supple and light. The vines grew on granite and clay-sand soils facing south in the hills of Penalva do Castelo, surrounded by oak, pine, olive and chestnut trees. The harvest is manual. The grapes are destemmed and slowly crushed by foot for two days before macerating in stainless steel vats. Fermentation is spontaneous, using indigenous yeasts. Aging is ten months and bottling is done without filtration. No chemical inputs are added to the vineyard or the winery.

The duality of the name Ladidadi/Pinheiro is simply due to the fact that this winemaking entity is the result of a friendship: that of Florian Tonello, creator of the Ladidadi Wine brand, wine merchant-DJ-globetrotter who devotes his life to making natural wines known and loved, and Hugo Pinheiro, winemaker at the head of a small estate of two and a half hectares in Penalva do Castelo, district of Viseu, Dão appellation (central Portugal). Together, they decided to produce several vintages of natural wines, obtained through organic farming, manual harvests, fermentation with indigenous yeasts, without filtration or the addition of sulfites, from the emblematic grape varieties of the appellation on an estate planted around thirty years ago, with a small part planted in the 1980s. We therefore find Touriga Nacional as the main grape variety in red, followed by Clarete, Jaen and Encruzado, and in white Malvasia, Cerceal, Bical and Terrantez. Vibrant, lively wines, and a great opportunity to discover Portugal's wine-growing region in natural mode.

Fond Cyprès
A beautiful texture, with notes of citrus and exotic fruits. Roussanne, Grenache Blanc, and Viognier grown on the same plot: a southern blend that produces a truly southern white wine, original, balanced, fresh, structured by light maceration, fermented and aged in barrels. Its profile is atypical in Corbières. A distinctive feature: the plot was planted according to the desired wine, and chosen to face north to ensure good acidity. The three grape varieties are harvested at different ripeness levels. As soon as the Viognier (later ripening) is ripe, everything is harvested together: the Grenache Blanc is often overripe. This produces a very unique flavor balance, between freshness, richness, and roundness. After direct pressing, the must is vinified in old 225-liter barrels, then aged for ten months. It can be kept for around ten years, if given time: all pairings suit it.

This Languedoc estate is built on solid foundations: its two winemakers, Rodolphe and Laetitia, are also descendants of winemakers. Even before planting their first vine, they already had a clear objective: "to produce southern wines that reflect us, wines with character attached to our soils, with freshness and refined tannins." They want to obtain entirely natural wines, concentrates of terroir. In the old Corbières massif, they are taking over an old heart of the estate already planted with abandoned Carignan and Grenache, which have seen neither fertilizer nor pesticides for years: these clean and living soils are an ideal condition for launching into natural wine. Around this historic heart, they first planted Grenache Noir and Syrah, then a plot of white grape varieties: Viognier, Grenache Blanc, Roussanne. The estate has been Ecocert certified since 2010 and also complies with the Nature & Progrès charter. The vinification is done without the addition of sulfites or exogenous yeasts. "We make wines for pleasure," say Laetitia and Rodolphe. For them, natural wine is first assessed by taste, from the harvest. The vintages closely follow the plots, the musts are fruity, fluid, and complex. The wines of Fond Cyprès poetically evoke the estate's ecosystem and the vegetation that protects the plots: the pine forests, the shady springs, the beauty of the natural environment that brings freshness to the wines and leaves the soil's signature. Deliciously balanced between mineral imprint, vegetal environment and expression of fruit, the wines of Fond Cyprès reflect the South: the caress of its sun, but also the freshness of its shadows.

Avec Cyprès de Toi, le domaine Fond Cyprès signe une cuvée de Chardonnay bio venue du Languedoc, au style étonnamment frais et aérien. Ce vin blanc tranquille, issu de presse directe et élevé en cuve inox, met en avant la pureté du fruit, la vivacité du cépage et la gourmandise simple d’un vin naturel accessible.
Un Chardonnay sans maquillage
Cultivé sur des sols argilo-calcaires, le Chardonnay est vendangé tôt pour préserver son acidité naturelle. Pressé directement, il fermente en levures indigènes sans ajout d’intrants œnologiques, puis il est élevé six mois en cuve inox, afin de conserver toute sa fraîcheur et son éclat aromatique. Le résultat : un vin droit, limpide, prêt à boire.
Un blanc vif, floral et désaltérant
Le nez évoque des fleurs blanches, du citron frais et une légère touche de pomme verte. En bouche, c’est la tension qui domine : attaque vive, corps léger, finale nette et citronnée. Un vin qui se boit avec une grande facilité, sans lourdeur, mais avec une expression précise du cépage dans un climat ensoleillé.
À déguster sans attendre
Servi entre 10 et 12 °C, Cyprès de Toi est parfait à l’apéritif, mais s’exprime aussi très bien sur des crustacés, fruits de mer, poissons grillés ou des viandes blanches aux herbes. À boire dans les deux ans pour en apprécier toute la fraîcheur et l’éclat.
