Le Desordre Blanc 2011, Domaine La Sorga
This 100% Chardonnay comes from vines on puddingstone soils in the upper Limoux valley. The grapes are directly pressed, lightly settled, then aged for twenty months in old barrels without topping up. Its notes of white flowers and sweet spices will accompany moderately spicy dishes (chicken curry, saffron fish, tagines, etc.). Aging potential: twenty years.
Natural wine with no added sulfites.
