A rare and exceptional vintage, a white wine without equal. Generally, it is made entirely from Roussanne, but sometimes it can also contain 30% Jacquère to balance the warmth of the vintage. The two grape varieties grow on schist soil and are blended just after the harvest: they are vinified together. Maceration depends on the vintage: generally three to five months, but there is one vintage that has been macerating since 2019. Aging is one year in barrels. This wine offers extraordinary notes of leather, smoke, and candied quince. It is a gastronomic all-terrain vehicle that can withstand anything.

Natural wine with no added sulfites.
