Cuvee du Bu Blanc 2011, Domaine La Sorga
This single-varietal white is made from Terret Bourret from the basalt soils of the Hérault Valley. The grapes are pressed directly. 70% ferment in vats and 30% in old ten-wine barrels. At the end of alcoholic fermentation, the grapes are blended in vats before aging for seven months. With notes of lemon and flint, it will be a good companion to mussels and fries, fish meunière, fritto misto, or fried smelt. Aging potential: ten years.
