Magnum VN Vinel.lo Ancestral Sparkling Red 2016
VN, Vinel·lo Ancestral Red Sparkling Wine, is a natural sparkling wine resulting from a blend of indigenous grape varieties: Samsó (Cinsault), Garrut (Mourvèdre), Trepat, Ull de Perdiu, Queixal de Llop, Sumoll, and Grenache Noir, harvested from predominantly limestone soils. After crushing, the musts from the different grape varieties ferment one after the other and are gradually added, thus extending fermentation with indigenous yeasts. Fermentation completes in the bottle for ten months on fine lees. No filtration, no additives, no added sulfites. A fruity, very fresh sparkling wine with floral and yeasty notes. Very long finish. This pure Grenache comes from the schist soils of Faugères. It is a superb wine, refined and fresh, beautifully fruity. It has aging potential for six or seven years, but can be enjoyed now. Nose of raspberry, rose, licorice, and Languedoc garrigue. On the palate, very well-integrated tannins. Beautiful energy, sunshine, and plenty of structure.

This Jamaican-style white rum is produced through a long fermentation process using molasses, wild yeasts, vinasse, and a mysterious ingredient that Benoît will never reveal, except that it is 100% local. Ranciolytique Red 2010
The Grenache vines from which this red wine is produced are located in Lagrasse, in the Corbières region, on clay-limestone and ferruginous soils. After a nine-month whole-bunch maceration, the wine is aged in demijohns and then in old barrels for eighteen months. This wine possesses sweet aromas of candied grapes, chocolate, and cherry, making it an excellent companion to cheese, a tangy dessert, or chocolate mousse. It can be aged for twenty years.

Xarab Silver White 2006
On south-facing schist hillsides at an altitude of 1,300 meters, Manuel Valenzuela has created this astonishing sweet white wine from the Xarab series, made from Pedro Ximenez and Xarel·lo grapes, raisined on the vine and harvested in December. Golden-amber in color, with a nose of candied grapes and buttery caramel, the palate is rich and taut, avoiding the pitfalls of excessive richness and syrupiness. The finish lingers on dried fruits and caramel, and the cellaring is very long.

Domaine Ruth Lewandowski
Mahlon is a dry white wine made entirely from the Piedmontese arneis grape variety, which, in the dialect of its native region, means "little rascal," an allusion to the difficulties it presents to winegrowers. Ruth Lewandowski is convinced that this difficulty is worth it, even if she only releases this cuvée once every two years. Six hours of skin maceration after foot-treading, complete malolactic fermentation, then six months of aging on lees. When it's good, it's very good! Magnum Tonton Red 2014
This 100% Cabernet Franc comes from Vincent Wallard's Loire winery. Grown in clay-limestone soils, the grapes are vinified using a mille-feuille process (skin-on maceration using layers of destemmed grapes and whole bunches to control the astringency of the tannins) before aging for twenty months. Excellent with red meats and wild mushrooms (particularly porcini mushrooms), it can be aged for twenty years.

La Sorga
The Mourvèdres that make up this single-variety red wine come from the Saint-Chinian appellation. The destemmed grapes macerate in demi-muids (thick 500- to 650-liter barrels) for sixty days, virtually in an infusion, then the wine is aged for six months in amphorae. Notes of violet and black fruits: perfect for a tagine, borscht, or red cabbage velouté. Aging potential: twenty years.

The Grenache Noir and Carignan grapes that make up this cuvée are forty and one hundred and thirty years old, respectively. They grow in a complex mixture of clay, silica, mica-rich schist, quartz, and gneiss. Michaël Georget pollinates the vineyard by introducing bees. The grapes are pressed directly, and aged for ten months in old 400-liter barrels.
