For this sweet single-varietal Muscat à petits grains, the grapes macerate in whole bunches for a week and then are aged in old barrels for eighty-four months. Its balsamic notes of sweet spices, cinnamon, and bergamot will pair superbly with foie gras or blue-veined cheese. Unlimited aging potential.

Tonton Rouge 2015, Vincent Wallard
This 100% Cabernet Franc comes from Vincent Wallard's Loire winery. Produced from clay-limestone soils, the grapes are vinified in mille-feuille (skin maceration carried out in superimposed layers of destemmed grapes and whole bunches in order to control the astringency of the tannins) before aging for twenty months. Excellent with red meats and wild mushrooms (porcini mushrooms for example), it can be kept for twenty years.

Volnay 1er cru Carelle sous la Chapelle Rouge 2017, Domaine de Chassorney
This premier cru Pinot Noir comes from a steep, west-facing plot at an altitude of about 280 meters, on marl-limestone soils. The grapes macerate in whole bunches. Aging is about a year in barrels. The name of the plot refers to the old chapel that can still be seen today on the side of the road leading to Monthélie, in the lower part of the village. "Carelle" refers to the shape of the plot, from the Latin quadrus, "square".

Nuits Saint Georges Damodes red 2016 by Frédéric Cossard
This Pinot Noir comes from the Damodes plot in the Nuits-Saint-Georges AOC, established in 1936. The vines are planted on finely gravelly brown limestone soils and on clay-silt fractions. The grapes macerate in whole bunches. Aging is approximately one year in barrels.

The AOC Volnay is perched on the heights of the Côte de Beaune. This wine comes from a steep terroir, facing west-southeast and located between 230 and 280 meters above sea level. The soils are mainly limestone, stony, ferruginous and reddish. The grapes macerate in whole bunches. The aging is about a year in barrels. Nose of black cherry and candied fruit.
