The Cornas Chaillot 2017 is one of Thierry Allemand's great expressions of Syrah. Made from several lieux-dits with granitic soils in Cornas, this cuvée typically comes from the estate's younger vines and is distinguished by a particularly refined and ethereal expression. The 2017 vintage brings beautiful ripeness, with a deep nose of black and red fruits, violet, pepper, smoke, and black tea. The palate is dense without ever becoming massive, supported by very fine tannins, beautiful freshness, and a long, spicy finish.

100% Syrah, the grapes are vinified in whole bunches, without sulfur during fermentation, with gentle punch-downs. The wine is then aged for 18 to 24 months in old wood, with no new wood, before bottling without filtration and with only a light sulfiting if necessary. A great Cornas that is currently evolving beautifully, ideal with roast leg of lamb, roasted pigeon, game, or a fine cut of beef.
