75% Pinot Noir, 25% Chardonnay, the union of opposites. Elle Aime is the result of two months of whole-bunch maceration and surprises on the palate with its buttery, fruity (cherry), nutty, and autumnal notes. A little balsamic vinegar and floral touches in the aroma. This slightly sparkling gurgle nevertheless has a beautiful acidic and tannic structure, and will not leave you indifferent.

Magnum Pamina Blanc 2016, Domaine de l'Octavin
An elegant, crystalline chardonnay, this Pamina, as lively and light as it is deep and mineral. The vines, over forty years old, grow on the Jurassic marl of the La Mailloche plot in Arbois. The harvest is pressed directly, then the wine is aged for eighteen months in old barrels. Very nice, controlled oxidation on the nose and palate, notes of sherry and hazelnut alongside lemon peel. A remarkable minerality.

Cabernet Sauvignon Barrica Rouge 2013, Clot de Les Soleres
This 100% Cabernet Sauvignon comes to us from an old family estate located in the Piera area, at the foot of Montserran, in southern Catalonia. Coming from a small plot with the particularity of producing highly concentrated juices, the Barrica cuvée has a dark color and offers a beautiful aromatic density on the nose. The name is linked to the barrel aging. On the palate, we find notes of cherry, pomegranate, and undergrowth. A powerful wine that does not blush from its sunburn, to be drunk with food, and sitting comfortably.

Cabernet Sauvignon Rosé 2015, Clot de Les Soleres
This Cabernet Sauvignon rosé comes to us from an old family estate located in the Piera region, at the foot of Montserran, in southern Catalonia. The cuvée has been produced since 2012, but not for every vintage. The harvest is manual and directly pressed, without skin maceration. After resting for twenty-four hours in a cool place, the must is transferred to stainless steel vats for spontaneous fermentation, which begins after four or five days, without temperature control. The wine is then aged throughout the winter and bottled in the spring without filtration, on fruit days, according to the lunar calendar. These processes preserve the natural taste of the grape variety, which expresses its integrity, intensity, and slight bitterness.

Magnum SP Subirat Parent Blanc 2018, Partida Creus
Subirat Parent, one of the oldest Catalan grape varieties and a close relative of Malvasia, remains rare even in its country of origin. The clay-limestone reinforces its freshness and integrity. The harvest is pressed after a three-day skin maceration. The must is settled and fermented with indigenous yeasts in stainless steel vats. It rests for three months in vats on fine lees before bottling. This wine is crisp and aromatic, with a nose of ripe white fruits, melon, and wildflowers. Agile on the palate, fresh and straightforward, lemony and slightly saline, with a long finish tinged with a delicate bitterness typical of the estate. It will be wonderful with all seafood, especially bouillabaisses, bourrides, and fish soups. It will also accompany sushi, sashimi, ceviche, fresh oysters...

Made from old vines (sixty years old) of the Catalan vinyater grape variety on clay-limestone soil, aged in 50-liter demijohns, this is a fresh and seductive white wine that excels with seafood, grilled white meats and sweetbreads, but it can also seduce without any accompaniment or pretext. Rounded, buttery, expressive and mineral. The nose is all about white fruits and white flowers. Lemon zest, a little beeswax. On the palate, volume, body, a very long finish.
