Domaine Paul Benoit & Fils, vinified by Cyril Alonso
Culinaries Exclusive

P584 takes its name from Ploussard clone 584, a clonal selection of this iconic Jura grape variety. This choice makes perfect sense when you consider the work of Cyril Alonso, a passionate ampelographer—the study and identification of grape varieties—who has been committed for years to the preservation of varietal diversity.

The grapes come from Domaine Paul Benoit & Fils in Pupillin before being entrusted to Cyril, who vinifies them without additives using an infusion-style process, then ages the wine for 8 months on fine lees. The result is an ethereal and very digestible red, carried by red fruits, flowers, and subtle herbaceous notes. The palate is supple, fresh, and taut, with delicate tannins and plenty of energy.

A cuvée that speaks as much to Ploussard as it does to the botanical heritage of the Jura.
