Cyprès de Toi 2024

Fond Cyprès

Cyprès de Toi 2024 is a delicious and highly approachable red, crafted from the estate's young vines. The blend combines Syrah, Grenache, and Carignan, with Syrah being the majority in this vintage. The nose opens with crisp black and red fruits, accompanied by a slightly saline and spicy touch. On the palate, the wine is supple, juicy, and low in tannins, with a lovely acidity that gives it great freshness and the true character of a "vin de soif" (thirst-quencher).

The grapes are destemmed and then macerated for five days in stainless steel tanks, followed by pressing and aging for about nine months in the tank. Fermentation is carried out with indigenous yeasts, without additives or filtration. A natural red, simple in the best sense of the word, to be enjoyed lightly chilled with charcuterie, grilled meats, pizza, roasted vegetables, or sharing plates.
