Cuvée 0.72+ Red 2019
De Vini
With a slightly dark ruby color and faded rose tones, this is a red wine that should logically catch your eye for your greatest pleasure: this cuvée 0.72+ red comes from very different terroirs than its white equivalent (which we also offer). The vines from which it comes, 80% Grenache Noir, 10% Syrah and 10% Viognier, are located in the Côtes du Rhône region, in Rochefort-du-Gard, and grow on a soil of rolled pebbles that is not without points in common with that of Châteauneuf-du-Pape, which is only a few kilometers away on the other bank of the Rhône. The presence of a white grape variety - Viognier - in this red blend gives this wine a great originality, a floral side that hovers over the entire organoleptic experience: there are faded rose petals on both the nose and the palate, as well as a fairly strong tendency towards white flowers (Viognier, again). There is also a little prune and a complex, though light, aromatic structure. This is a beautiful wine that was long overdue and which is currently at its peak, with beautifully melted tannins and many more years ahead of it. Great length, great structure on the palate, and a pleasant salivating side. Viognier is an inspiration from the Northern Côtes-du-Rhône adapted to the Southern Côtes-du-Rhône, and red blends featuring white grape varieties are an increasingly common occurrence in the world of natural wines. As for the cultivation and vinification, the vines are managed biodynamically and the grapes were macerated for two weeks with care: no pumping over, no crushing, as little intervention as possible. Just a little punching down, no more than necessary. If the name of the cuvée intrigues you, be aware that following a small technical incident during bottling, it does not contain exactly the standard quantity. This detail should not worry you, because in this case, 72 cl is a maximum: most bottles require between 1 and 3 cl to reach 75, which is very little. Don't let the fluidity and delicacy of this wine fool you either; it's actually a solid wine that will pair well with solid dishes like roast wild boar and anything with truffles.

An ode to the southern grape varieties, a beautiful, dense, and deep red from Languedoc. Its freshness and density also make it a thirst-quenching wine that also performs very well with food. Cyprès de Toi Rouge is to be enjoyed in all circumstances; it is a wine for all occasions. Very drinkable, straightforward, and structured, it is the result of a blend of the estate's young vines: Syrah, Grenache, and Carignan, destemmed and vinified separately with indigenous yeasts in concrete vats, a traditional method in the Corbières. This fermentation and aging method owes its total absence of oak, allowing for a very pure fruity experience. No inputs are used in the vineyard, the winery, or the bottling process. This is practiced all year round, as the estate keeps the juices in vats: the idea is that there is never a shortage. It will be an ideal companion for Iberian ham, red or white meats, duck, and all grilled dishes.

This Corbières estate is built on solid foundations: its two winemakers, Rodolphe and Laetitia, are also descendants of winemakers. Even before planting their first vine, they already had a clear objective: "to produce southern wines that reflect us, wines with character attached to our soils, with freshness and refined tannins." They want to obtain entirely natural wines, concentrates of terroir. In the heart of the old Corbières massif, they took over an old estate already planted with abandoned Carignan and Grenache vines, which had not seen any fertilizer or pesticides for years: these clean and vibrant soils were ideal conditions for launching into natural wine. Around this historic heart, they first planted Grenache Noir and Syrah, then a plot of white grape varieties: Viognier, Grenache Blanc, Roussanne. The estate has been Ecocert certified since 2010 and also complies with the Nature & Progrès charter. Vinification is carried out without the addition of sulfites or exogenous yeasts. "We make wines for pleasure," say Laetitia and Rodolphe. For them, natural wine is first assessed by taste, from the harvest. The vintages closely follow the plots, the musts are fruity, fluid, and complex. Fond Cyprès wines poetically evoke the estate's ecosystem and the vegetation that protects the plots: pine forests, shaded springs, the beauty of the natural environment that brings freshness to the wines and leaves the signature of the soil. Deliciously balanced between mineral imprint, plant environment and fruit expression, Fond Cyprès wines reflect the South: the caress of its sun, but also the freshness of its shadows.

De Vini
0.72 + est un vin blanc sec de négoce, biologique, naturel et réalisé sans aucun sulfite ajouté ni aucun additif chimique par Christophe Bosque de De Vini. Il nous vient tout droit du pays du muscadet, l’estuaire de la Loire. Sans en avoir l’appellation (il est en Vin de France), il peut être considéré comme un muscadet et se boire comme tel.
À la vigne et au chai
0.72 + blanc de De Vini est composé à 100 % de melon de Bourgogne (autre nom du cépage muscadet) planté à Maisdon-sur-Sèvre (Loire-Atlantique) sur sols de gabbro caractéristiques de la région. Le gabbro est une roche magmatique à texture grenue reposant sur sous-sol granitique, et cela donne des vins blanc splendides, vifs et minéraux. Gabbro et granite sont les sols préférés de Vinilibre et constituent un précieux patrimoine viticole. Le vin a été élevé en cuve de ciment enterrée (traditionnelle en cette région) pendant une année, sur lies, sans aucun intrant.

Le nom de la cuvée relève d’une anecdote : à l’origine, à cause d’un petit incident technique à la mise en bouteille, celle-ci ne contenait pas exactement la quantité standard. L’erreur a été corrigée depuis (0.72 + de De Vini en est à son quatrième millésime).
Dégustation
Laissons la parole au vigneron : « Ça goûte du feu de Dieu ! » Trois ans de bouteille n’ont fait que le polir, le ciseler et le bonifier. « Le gabbro, plus c’est vieux, meilleur c’est », confie également son auteur. Ce vin est excellent à boire dès maintenant ou plus tard, bien frais. Une élégante acidité mêlée d’une rondeur équilibrante, un côté salin et salivant font de 0.72 + un compagnon indéfectible des fruits de mer crus, des huîtres, des sashimis et sushis, des tartares et des carpaccios de poisson, ou des poissons fumés. Cette cuvée existe aussi en rouge.

Fondu de gabbro
Après avoir passé des années en tant que négociant, importateur, puis négociant vinificateur, cet ancien cameraman pourvu d’un BTS œnologie-viticulture acquiert en 2017 quelques parcelles (deux hectares) de vignes de melon de Bourgogne à Gorges, en Loire-Atlantique, près de Clisson. Les sols y sont constitués de gabbro sur substrat granitique, configuration pédologique particulière à la région nantaise et notamment à Clisson. Christophe ne tarit pas d’éloges sur ce type de sol.
Muscadet en mieux
Les cuvées de Christophe peuvent être issues de raisins achetés sur les meilleurs terroirs français, notamment en Languedoc, mais le vigneron garde une affection particulière pour ses vignes, qu’il entretient avec passion et attention au terroir. On dénote sur ses étiquettes et dans ses appellations une touche d’humour et de sens du calembour, mais dans la bouteille, c’est du sérieux, des vins hors des sentiers battus comme il les aime.

Château Frédignac, a 100% organic estate (Nature & Progrès), is located in the Blaye-Côtes-de-Bordeaux appellation, very close to the small town of Blaye, practically on the banks of the Gironde. Founded in 1918 by Jean-Marie L’Amouller, a Breton sailor who found happiness on the right bank of the estuary — which is called “the River” here — it became a quality wine estate a few years later by absorbing the vineyard of a property with a centuries-old reputation, Château Saugeron. The appellation is best known for its velvety, deep red wines, in which Château Frédignac excels. But the achievements of this wine estate dedicated to respecting the terroir and virtuous agricultural practices do not end there: an organic white is produced, as well as several natural cuvées of various colors, from pet'nat'rosé to still red. The red grape varieties are typical of the appellation — the two Cabernets, Franc and Sauvignon; Merlot, Carménère and Côt (Malbec) — and the whites (Sauvignon Blanc, Sémillon) are similar. The clay-limestone soils promote both soil drainage and their beneficial freshness for the vines. Combined with methods that are deeply respectful of the soil, plants, animals and winemaking, these pedological conditions allow the Château Frédignac team to be proud of its wines: as worthy of their local tradition as they are in keeping with the desire to work as closely as possible to the natural.

Without having the appellation (it is in Vin de France), it can be considered a muscadet and drunk as such.

0.72 + white from De Vini is made from 100% melon de Bourgogne (another name for the muscadet grape variety) planted in Maisdon-sur-Sèvre (Loire-Atlantique) on gabbro soils characteristic of the region. Gabbro is an igneous rock with a grainy texture resting on a granite subsoil, and this produces splendid, lively and mineral white wines. Gabbro and granite are Vinilibre's preferred soils and constitute a precious wine-growing heritage. The wine was aged in buried cement vats (traditional in this region) for a year, on lees, without any additives.

Tasting
Let's hear from the winemaker: "It tastes like the fire of God!" Three years in the bottle have only polished, chiseled, and improved it. "The older the gabbro, the better it is," also confides its author. This wine is excellent to drink now or later, very cold. An elegant acidity mixed with a balancing roundness, a saline and salivating side make 0.72 + an unfailing companion to raw seafood, oysters, sashimi and sushi, fish tartare and carpaccio, or smoked fish. This Côtes-du-Rhône from Domaine des Grandes Serres is what its name implies: an organic and natural red wine from the lower Rhône Valley, in the AOC-AOP Côtes-du-Rhône-Villages. It is part of the estate's "Comics" natural series (see label).
Vinification
The Côtes-du-Rhône from Domaine des Grandes Serres is made from 80% Syrah, with 5% of each of the following grape varieties: Grenache, Mourvèdre, and Cinsault, all grown on limestone and sandstone soils. The harvest is manual, the grapes are destemmed and macerated on the skins for three weeks. After pressing, the wine rests for eight months in stainless steel vats.

Domaine des Grandes Serres, created in 1977 with respect for the environment and the terroir, represents the excellence and vitality, in organic and natural mode, of the prestigious Châteauneuf-du-Pape appellation, where it covers 12 hectares. To make his estate and merchant wines, he harvests, buys grapes, vinifies, and ages them over a wide area, centered around Châteauneuf and the southern Côtes-du-Rhône, extending to areas such as Lirac and the Costières de Nîmes.
An organic commitment without ostentation
A large portion of the Domaine des Grandes Serres vintages are organic and without added sulfites, although the estate does not publicly boast about it. Modestly, Samuel Montgermont, the estate's general manager, explains that the geological and climatic conditions, particularly the mistral wind, promote the health of the vineyard and allow for the elimination of inputs. While the labels don't take themselves seriously, the wines are solid, fresh, and flavorful.

It is vinified using ancestral methods, with a 15-day semi-carbonic maceration carried out with whole bunches, followed by careful aging for 11 months in concrete vats.

Cyclic Beer Farm
Packaged in 75 cl bottles so that everyone can satisfy their thirst, the beers from the Barcelona-based brewery Cyclic Beer Farm play between classicism and flights of inspiration, in a contrasting and creative way, in the Catalan style. Based on classic principles and a Belgian fermentation model, the two brewer-winemakers Joshua and Alberto play with ingredients, aromas, and macerations, between cereals, fruits, vegetables, and grape skins from Catalan grape varieties, to achieve flavors reminiscent of an unidentified drinkable object (OBNI). Whether they assert themselves through balance or a certain controlled dissonance, these beers will never leave you indifferent and will reveal their full potential during the summer heat, served well chilled.
This saison-style cuvée has an alcohol content of 5.5%. It is the result of a complex blend: 28% mixed saison fermentation for six months, 28% mixed saison fermentation for eighteen months, 22% tangy saison, and 22% mixed saison fermentation aged for six months in oak barrels. The resulting blend is aged for eighteen months. At this stage, we can almost speak of alchemy, even numerology. The result is as complex, while remaining accessible, as its composition. Disgresión ("Digression") was created in relation to a social context, that of Covid 19. It is the result of a collaboration between Cyclic Beer Farm and several local breweries (Cobeer-19 project). 19% of profits are donated to charitable causes. The beer itself is fresh and classic, with a good bitterness and balance.
The Wine Witch Blanc 2024,
Les Grandes Serres
In the heart of Vaucluse, between Saint-Maurice-sur-Eygues and Visan, the Grandes Serres vineyard thrives on deep clay-limestone soils bordered by garrigue. The Wine Witch 2024, a subtle blend of Clairette, Marsanne, and Vermentino, is a generous white, both powerful and balanced, faithful to its terroir.
A bold and natural vinification
The uniqueness of this cuvée lies in a 24-hour maceration of the Vermentino grapes before pressing, providing structure and depth. Spontaneous fermentation in stainless steel vats preserves the purity of the fruit, while partial aging in barrels (10% of the Marsanne) enriches the texture. Like all the house wines, The Wine Witch is unfiltered, with a light addition of sulfites to stabilize the whole.
A charming nose and a full palate
The nose opens with notes of ripe, even exotic fruits, accompanied by slightly buttery nuances. On the palate, the attack is supple and round, revealing a remarkable amplitude, carried by a rich and balanced structure. The finish is long, with a beautiful aromatic persistence.
What to enjoy with this bottle?
Served around 10-12°C, this racy white wine goes wonderfully with roasted white meats, grilled fish or even hard cheeses. With its aging potential of 5 years, it will evolve towards even more complex aromas.
Marguerite Red 2019
The Marguerite 2019 from Domaine Bois Moisset is a true immersion in the winemaking heritage of the southwest. Made from Duras, a native grape variety of Gaillac, it reveals all the richness and intensity of this ancestral terroir. Made from vines 15 to 30 years old, planted on sandy loam and clayey gravel from the Tarn terraces, this natural wine is the result of a respectful approach to the vine and the soil.
The vinification follows a minimalist logic: destemmed harvest, three-week maceration in cement vats without added sulfites, and low-temperature fermentation to preserve the fruit's brightness. Aging continues in cement vats until bottling, carried out without filtration and with a tiny dose of sulfur to stabilize the wine while preserving its raw and lively character.
With an intense and clear garnet color, Marguerite 2019 offers an expressive nose, dominated by notes of sweet and spicy spices (cinnamon, black pepper), ripe black fruits, and violet. On the palate, it is a structured, ample, and fresh wine, driven by a beautiful natural acidity that balances its rich body. The tannins are supple yet present, extending into a spicy and slightly licorice-laced finish.
Best enjoyed between 16 and 18°C, this vibrant red is the perfect accompaniment to rib of beef, a prune tagine, or a game terrine. Decanting will allow it to reveal all its complexity.

Le Senzaniente Pecorino 2023 est un hommage vibrant au terroir des Abruzzes, où le cépage Pecorino, typique de la région, puise toute son énergie. Sur les sols argilo-calcaires des collines de Montepulciano d’Abruzzo, cette variété ancienne révèle un caractère bien trempé, entre fraîcheur citronnée et éclat floral. C’est un vin de lieu, qui exprime avec franchise la lumière, la pierre, et la plante.
Méthodes culturales
Au domaine Marina Palusci, le travail de la vigne se fait dans une approche naturelle et respectueuse : ni engrais, ni produits de synthèse, ni sulfites ajoutés. Tout est pensé pour laisser la vigne et le vin s’exprimer pleinement, sans maquillage ni contrainte. La vinification suit cette même logique : fermentation naturelle, pas d’additifs, pour un blanc vivant et vibrant.
Dégustation & accords
Le nez est une véritable explosion de fraîcheur : citron jaune, citron vert, pomelo, zestes d’agrumes, et une touche délicate de jasmin. En bouche, la matière est à la fois ronde et vive, avec une belle tension, une texture croquante et une finale fruitée sur la pomme et les agrumes. Ce vin blanc nature est équilibré, expressif, avec un joli rebond qui invite à y revenir. Il s’apprécie à l’apéritif comme à table, en compagnie de poissons grillés, de champignons sautés, de fromages affinés ou encore de plats asiatiques légèrement épicés. Un vin lumineux, joyeux et naturel, à servir frais pour un maximum de plaisir.
Rencontre Red 2020,
Rencontre's nose is subtle, laden with red fruits, with pronounced forest notes: mushroom, humus, a touch of leather, spices, and violet. On the palate, the fruit is very present, very pleasant, and decidedly peppery, and the beautiful, fine, precise tannins nestle gracefully into a very tactile, chewy finish. This is a wine of strong character that surprises with its beautiful structure. Its color is dense and full, like that of a Bordeaux. This wine from the Gaillac region is made from local grape varieties: 40% Syrah and 40% Braucol, supplemented by 20% Duras, all fermented in the same vat. The harvest is destemmed. Maceration lasts three weeks in a temperature-controlled concrete vat, with indigenous yeasts. The Braucol and Duras are co-fermented. Only a few pumpings are carried out. The press juice and free-run juice are blended with 20% Duras free-run juice to add a peppery touch. Aging is also done in vats. We recommend decanting this Encounter which, without any pun intended, is a true encounter that is definitely worth the detour.

The name Gaillac, the region where the Bois-Moisset estate is located, owned by Sylvie Ledran and Philippe Maffre, has been associated with wines since Antiquity; It is the oldest vineyard in France, with two thousand years of history and an impressive collection of ancient indigenous grape varieties. It is also a region of dazzling beauty, nicknamed "French Tuscany" because of its gentle hills planted with groves and its almost Florentine brightness. Many estates, along with that of Bois-Moisset, showcase this uniquely rich wine-growing heritage. Along with an estate planted with vines, it is an organic mixed farm that directly sells its production of lentils, sunflower oil, cereal flours and grape juice. A herd of old local breed cows also thrives there and guest rooms are available in the summer. It is in this small rural paradise that natural wines typical of their origin and their terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years. The grape varieties are dominated by Syrah and Duras, but the ampelographic richness of the Gaillac region (braucol, prunelart, loin-de-l'œil, etc.) is also evident in the vintages of the Bois-Moisset estate, which consist particularly of red wines with a crisp fruitiness, concentrated but with smooth and delicate tannins.

Matinada is a dark sour (a dark, dense brown beer) heavily infused with coffee and orange. The coffee is a Colombian chambaku distributed by Nømad Coffee, and the flavoring is complemented by the zest and juice of organic oranges harvested at the family estate in Alt Empordà (Catalonia), as well as Madagascar vanilla pods, a touch of sea salt, and a touch of Palisade Hops. This vintage exhibits pronounced dryness and acidity, with very intense coffee aromas. Matinada is 5.6% ABV.

Cyclic Beer Farm is a duo of Barcelona friends, Alberto and Joshua. Based in the Catalan capital, they have two sides to their business: beer (Cyclic Beer) and wine (Cyclic Wine). The beers, inspired by the Belgian model, come in surprising and colorful ranges where expertly measured yeast cocktails and house brews combine with varied macerations of fruits, vegetables, herbs, and grape marc from traditional Catalan varieties, the latter taken after the fermentation of their wines — because the second side is the wine, made exclusively from native Catalan grape varieties. Tart, exotic, and refreshing, Xino Xano, conditioned in barrels, is made for summer and tapping. It's a perfect beer for the beach or for contemplating the deep blue sea, and a Berliner Weisse (Berlin-style white beer) obtained, as the method dictates, by brewing without boiling. It is composed of half organic malted barley from Belgium, 25% organic malted wheat from Belgium, and 25% organic wheat flakes grown in Spain. Xino Xano is then co-fermented with the house cocktail of yeasts and lactic acid bacteria and finally receives a significant addition of dry hops (the variety varies depending on the vintage). Xino Xano alcohol content is 4%.

Château Bonnet Eden Red 2021

We first discover a beautiful, deep, vermillion color, a lovely cherry red with some purple highlights that will fade as the wine ages. The nose of this Eden cuvée offers notes of peony and crisp red fruit (cherry, morello cherry) enhanced with a touch of pepper. On the palate, the wine attacks frankly, with plenty of fruit and freshness. The tannic structure is medium, and the tannins are well-integrated. There is a very nice volume on the mid-palate. The olfactory sensation of crisp, juicy cherry is confirmed on the palate. This is a very indulgent, digestible, and very easy-drinking wine, where the fruity notes express themselves freely, with the fullness of the unsulfured wine. It will be appreciated as an aperitif and on any other occasion, but we see it especially at the table, with dishes that are not too sophisticated, dishes of good humor - beautiful grilled red meats, golden duck breasts, country salads: with confit duck gizzards, lentils... The digestibility of wines is a concept that is increasingly close to our hearts; red Bordeaux have long held the torch and we invite you to experience it with this lovely red Entre-Deux-Mers. Château Bonnet cuvée Eden is produced, for the cultivation and vinification, in biocontrol (set of plant protection methods based on the use of natural mechanisms). It is vinified in concrete eggs and classified as Vin de France. No sulfite has been added, either in the vineyard or in the cellar.

Lurton is a name that resonates strongly throughout the Bordeaux region: this dynasty of winegrowers, currently represented in France by around ten owners of wine châteaux and a company (Les Vignobles André Lurton) bringing together several estates, has distinguished itself at the head of prestigious properties including several classified growths, from Château-Cheval-Blanc to Château-d'Yquem via Château-Climens... Château Bonnet is the cradle of the Lurton dynasty, planted at the end of the 19th century by the liqueur maker Léonce Récapet, a visionary of viticulture who passed on the virus to most of his descendants. This beautiful estate in the Entre-Deux-Mers has one hundred and twenty hectares of vines. It is traditionally planted with Cabernet Sauvignon, Merlot, Sauvignon Blanc and Sémillon, and produces white, rosé and red wines. Under the leadership of its new director Mathilde Bazin de Caix and on selected plots, it has recently taken over the management of biocontrol viticulture and vinification, as well as natural wine without chemical or exogenous inputs added to the vineyard or the cellar. For the moment, this is the only Eden vintage, but we hope to produce others in the near future.

Méthodes culturales
Le Senzaniente Montepulciano 2021 est un vin libre, élevé sans aucun intrant ni sulfite ajouté. Le domaine Marina Palusci cultive ses vignes en totale harmonie avec la nature, dans une logique artisanale respectueuse du vivant. Ici, tout est fait à la main, avec patience et exigence. La vinification suit le même esprit : fermentation naturelle, aucune correction, juste le fruit et le temps.
Dégustation & accords
Dès le premier nez, le vin s’ouvre sur une belle intensité de fruits rouges et noirs : cerise juteuse, mûre, quelques notes confites qui évoquent le soleil des Abruzzes. Des touches d’épices douces – poivre noir, cannelle discrète – viennent apporter de la profondeur. En bouche, la texture est souple, légère, avec des tanins fondus et une finale savoureuse, presque caressante. C’est un vin rouge naturel, élégant, tout en équilibre, idéal pour un apéritif, une planche de charcuterie fine, des champignons poêlés ou une viande rôtie. Il s’invite aussi avec plaisir sur une belle cuisine italienne, sans jamais alourdir le plat. À déguster légèrement rafraîchi pour en apprécier toute la fraîcheur fruitée.

A Gamay to taste!
Vinified using carbonic maceration, a typical Beaujolais process that enhances the fruit and supple tannins, this wine is then aged for 9 months in wooden vats, giving it both roundness and liveliness. Its controlled aging highlights all the freshness and delicacy of the terroir, without masking the aromatic purity of the Gamay.
A floral nose and a delicious palate
Upon opening, the Beaujolais Lancié 2019 reveals an expressive nose, dominated by floral notes and crisp red fruits (cherry, redcurrant). On the palate, the balance is perfect between freshness and deliciousness, with fine tannins that provide a silky texture and a juicy, thirst-quenching finish.
