Magnum Maquis Rouge 2012, Domaine Vinci
Lledo what? Here is a deep red produced from lledoner pelut, a little-known Catalan grape variety. The Maquis cuvée reflects the quintessence of the clay-limestone soil, with the added generosity of Roussillon. The grapes are vinified in whole bunches, trampled by foot, then placed in cement vats. A captivating nose with notes of raspberry, confirmed on the palate, with a fairly pronounced tannic grain.

Tireur des Litres is a blend of four grape varieties in equal parts: Syrah from Lagrasse, Grenache from Carcassonne, Merlot from Carcassonne and Côt de Prayssac. The different grapes are grown on ferruginous clay-limestone soils for Lagrasse and Prayssac and on sandy-limestone soils for Carcassonne. Classified as a Vin de France appellation, this red wine was aged in barrels and vats. Its notes of black fruits, spices and tobacco pair perfectly with braised beef cheek or duck confit. Its aging potential is ten years.

Sorgasme is a blend of Colombard, Vermentino and Ugni Blanc matured on Villafranchian limestone and clay-limestone soils in Puéchabon and Saint-Jean-de-Fos (Terraces du Larzac appellation). The Vermentino and Ugni Blanc are pressed directly without settling for the Ugni. All the must is first pressing, the Viognier macerates for fifteen days. One year of aging in vats for this wine with notes of exotic fruits and anise that will pair deliciously with Indian, Indonesian and Southeast Asian cuisine.

This single-varietal white is made from Terret Bourret from the basalt soils of the Hérault Valley. The grapes are pressed directly. 70% ferment in vats and 30% in old ten-wine barrels. At the end of alcoholic fermentation, the grapes are blended in vats before aging for seven months. With notes of lemon and flint, it will be a good companion to mussels and fries, fish meunière, fritto misto, or fried smelt. Aging potential: ten years.

This red, made from equal parts Syrah and Gamay from Auvergne, has a beautiful, slightly cloudy ruby color. It has great aromatic purity: the nose reveals notes of rose, while the palate identifies cherry, strawberry, and an earthy touch (graphite) common in the volcanic soils of Auvergne, as well as black pepper. The only reservation we can make is that this wine does not deserve its name: it is all fruit and sweetness.

A sweet 100% Chenin Blanc with the sweetness of Anjou. From a schist soil where fifty-year-old vines grow, harvested at different stages of maturity. It is here botrytis, or noble rot, that allows this aromatic power to be achieved on both the nose and the palate. It will be wonderful as an aperitif, accompanied by some salted butter biscuits.
