1ER JUS Domaine Red 2024
Fond Cyprès
Neither quite red nor truly rosé: 1er Jus Domaine is a hybrid cuvée, light and natural, that breaks the mold. Produced by Fond Cyprès, it results from a very gentle pressing of Carignan and Grenache grapes, organically grown on clay-limestone soils in Languedoc, with a deliberately supple, fruity, and spontaneous style.
A natural wine without makeup
Whole bunches are placed in vats for a short and gentle maceration, without destemming. Fermentation occurs with indigenous yeasts, without the addition of sulfites or other winemaking additives. Aging for six months in stainless steel tanks preserves the freshness and juiciness of the fruit.
A light and refreshing profile
On the nose, 1er Jus Domaine captivates with its notes of crisp cherry, fresh raspberry, a touch of tart red fruit, and a hint of fresh almond. The color is clear, between ruby and raspberry. On the palate, it is delicate, smooth, with a supple, thirst-quenching texture and a touch of energy on the finish. An ultra-digestible red, almost floral, without pronounced tannins.
To be enjoyed like a spring wine
Served between 14 and 16 °C, 1er Jus perfectly accompanies raw fish, a summer barbecue, appetizer platters, or Asian cuisine with sweet and savory notes. A wine for immediate pleasure, to be drunk within 2 years, to enjoy its freshness and lightness.
Le Blanc des Garennes, White 2024
Fond Cyprès
Nestled in the heart of Languedoc, the Fond Cyprès estate unveils with Le Blanc des Garennes 2024 a natural white wine of great finesse. This blend of Grenache Blanc, Roussanne, and Viognier embodies the balance between freshness, creaminess, and aromatic expression of the South, all while adhering to the principles of committed organic viticulture.
Controlled aging for a silky texture
The grapes, grown on clay-limestone soils, are pressed directly after harvest, without maceration. Fermentation occurs with indigenous yeasts, without inputs, then the wine is aged for five months in multi-vintage barrels to round out the texture without imbuing the aromatic profile with wood. The result: a cuvée that is both fresh and full-bodied, with a caressing texture.
A floral nose, a generous palate
Upon tasting, Le Blanc des Garennes entices with its delicate aromas of white flowers, peach, and yellow fruits. On the palate, the wine is both supple and taut, with a slightly saline undertone and a beautiful persistence. It combines volume and vivacity, without ever becoming heavy.
Pairings and sharing moments
Served between 10 and 12 °C, this natural wine pairs wonderfully with shellfish, white meats, sunny herb-infused dishes, or even Italian or Mediterranean cuisine. It can be enjoyed in its youth but will gain complexity over 5 to 10 years. A gastronomic, accessible, and refined cuvée.
Fleurie, Red 2020
Domaine Bélicard
Among the ten Beaujolais crus, Fleurie is undoubtedly the most ethereal, the most floral, and Domaine Bélicard offers a natural and elegant interpretation here. This 100% Gamay Noir, organically certified, grows on the granitic slopes of the cru, which give this wine remarkable mineral finesse.
Gentle winemaking for a delicate wine
The grapes, picked at perfect ripeness, undergo a short maceration of a few days to extract just enough matter without harshness. Fermentation occurs naturally, without exogenous yeasts or additives. The six-month aging takes place in barrels that have held several wines (not new), bringing complexity and suppleness without masking the fruit.
A Fleurie of character with finesse
The nose is expressive, featuring fresh red fruits, violet, and a subtle spicy touch. On the palate, the texture is fine, the structure supple yet present, with a mineral tension that lengthens the finish. The style is silky, digestible, almost floral, but without mawkishness – a straightforward, vibrant, and well-balanced Fleurie.
To enjoy now or to cellar
Served between 14 and 16 °C, this wine will pair equally well with a refined aperitif or light, vegetable-based cuisine. It will also shine with roasted poultry or delicate festive dishes. Drink now or cellar for up to 5 years.
Beaujolais Lancié, Red 2021
Domaine Bélicard
With this cuvée under the Beaujolais Villages appellation, Domaine Bélicard celebrates the purest and most direct expression of Gamay. Made from organically farmed vines on the granite terroir of Lancié, this still red wine is a fruit bomb, an ode to freshness and deliciousness, to be enjoyed without delay.
A natural wine that gets straight to the point
The hand-harvested grapes are vinified whole cluster, respecting natural practices: short maceration of a few days, spontaneous fermentation thanks to indigenous yeasts, no enological inputs. The brief aging (one month) in concrete vats aims to preserve the aromatic brilliance and natural tension of the Gamay. No disguise, no heaviness: just fruit and honesty.
A juicy and expressive red
Upon opening, the nose imposes itself with a palette of crunchy red fruits: cherry, raspberry, pomegranate, with a small note of kirsch that adds a gourmet accent. On the palate, the texture is fluid, smooth, and highly drinkable. It's a striking wine, with a slightly peppery, fresh, and thirst-quenching finish.
The friend of good times
Served at 14–16 °C, Beaujolais Lancié 2021 will accompany friendly aperitifs, charcuterie platters, savory tarts, or grilled poultry. Its frankness makes it an excellent everyday companion. It can be kept for 3 to 5 years, but everything will push you to drink it young, as it sparkles with energy.
Amoroso Rouge
Distillerie Sentema
Amoroso Rouge has nothing in common with traditional, syrupy industrial vermouths. This audacious creation from Distillerie Sentema, nestled in the Alpes-Maritimes, shatters the codes of red vermouth by offering a dry, complex, and vegetal version, entirely rooted in the Provençal terroir.
The base is a succulent and juicy Syrah from Domaine de Garbelle, cultivated in the Var region. This wine is fortified with a local wine spirit, then infused for two weeks with a bouquet of wild plants from the Var garrigue: Barjols absinthe, savory, rosemary, oregano, agastache, as well as bitter orange zest harvested in the Alpes-Maritimes.
The result? A dry, taut vermouth, with no added sugar, driven by structuring bitters, an intense palate, and a savory finish that evokes green olives and sunshine. On the nose, a deep aromatic profile emerges: rosemary, dried herbs, citrus zest. On the palate, the attack is direct, with a perfect balance between the black fruit of the Syrah and the bitter touch of the botanicals. The long, fresh finish, subtly aniseed by the absinthe, evokes a sun-drenched corner of the garrigue.
Ideal as an aperitif, Amoroso Rouge can also elevate a Mediterranean Negroni or be served neat, on the rocks, with an orange twist.
A free-spirited, dry, naturally complex vermouth that embodies the spirit of the South, unadorned and without added sugar.
Vertige
Distillerie Sentema
Vertige is a remarkable creation by Distillerie Sentema, nestled in the heights of the Alpes-Maritimes, between sky, garrigue, and sea. This spirit, akin to a gin in spirit but unique in its base, is crafted from wine brandy rather than neutral alcohol, which gives it a rare aromatic depth and true personality.
Everything here is conceived in harmony with nature: certified organic, Vertige highlights carefully selected local botanicals: wild juniper berries, Menton IGP lemon peels, fragrant verbena, coriander seeds, and angelica roots. These plants are macerated for two weeks before distillation to extract essential oils without altering the balance of aromas.
The nose is astonishingly pure, blending the zesty notes of lemon, the citrusy and vegetal freshness of verbena, and the resinous signature of juniper. On the palate, the attack is silky and lively, with a soft yet precise structure, and a finish that lingers on citrus and dried herb notes, with a beautiful tension.
More than just a gin, Vertige is a refined expression of the Provençal terroir, combining floral elegance, subtle bitterness, and vegetal freshness. It can be enjoyed neat over ice, or in a high-end cocktail, where it will brilliantly replace a London Dry with a sunny and local personality.
Mint
Distillerie du Viaduc
With this bottle of Mint, Distillerie du Viaduc offers a novel and ultra-fresh interpretation of mint, far from the sugary clichés of classic liqueurs. Here, no syrup, no artificial flavors, no artifice: only three varieties of French organic mint – peppermint, grapefruit mint, and spearmint – macerated for a long time, then distilled at low temperature in an artisanal still.
This spirit has an alcohol content of 30% vol., yet remains extremely delicate. The distillation process subtly reveals the full range of herbal and menthol notes of the plants without becoming aggressive or overwhelming. The color is clear, crystalline. On the nose, it offers a pure scent of fresh mint, cut grass, and chlorophyll. On the palate, the attack is soft, the texture round, but the freshness is immediate and intense, balanced by a tangy note reminiscent of a green citrus zest. The finish is long, persistent, with an almost medicinal yet elegant freshness.
Sugar-free, this bottle of Mint positions itself between a digestif, a cocktail base, and an ingredient for creative cooking. Enjoy it neat, well chilled, to accompany a dark chocolate dessert, a sorbet, or simply to conclude a meal. It also works perfectly as an aperitif, lengthened with a dry tonic or sparkling water, like an "adult mint water" for discerning palates.
A unique, botanical, natural, invigorating spirit that ushers mint into a new era.
Ánizo
Distillerie du Viaduc
Ánizo is a modern, refined, and uncompromising interpretation of anise-flavored spirits, born in the heart of Île-de-France, in the workshops of Distillerie du Viaduc. Crafted exclusively from organic French botanicals and aromatics, this spirit is inspired by the great Mediterranean traditions, but with a fresh, honest, and committed perspective.
Here, no additives, no added sugar, no artificial flavors: only a maceration of green anise seeds, fennel, coriander, and thyme, slowly distilled in a handcrafted still, to obtain a liqueur of great aromatic precision, clear and vibrant. This choice of integral distillation gives Ánizo a pure, fluid, and light texture, while respecting the intensity of the aniseed profile.
The nose is clean, intense yet elegant, with round anise aromas enhanced by a breath of garrigue. On the palate, fennel takes over with sweet and spicy flavors, joined by the citrusy freshness of coriander and the herbaceous power of thyme. The finish evokes the Mediterranean coast, between Hellenic notes and persistent botanical freshness.
Ánizo is perfect as an aperitif, diluted with fresh water like a natural pastis, or used as a cocktail base for dry and aromatic creations. It embodies a contemporary vision of anise-flavored spirits, more vegetal, more straightforward, more vibrant.
Covenant Rouge 2018
Danis dans la Vigne
The quiet strength of a patient and vibrant Cahors
With Covenant 2018, the Danis dans la vigne estate continues its meticulous work with Malbec, offering it a rare setting of time and care. This natural red from Cahors, organically grown on clay-limestone soil, benefited from an extraordinary aging process: 2 years in barrels, followed by 4 years in vats before bottling. All of this, without any rush, without fining, without filtration, in an artisanal approach that is deeply respectful of the grape and the terroir.
This wine, with its dark, almost opaque color, immediately conveys a sense of depth. The long and controlled aging gives it a complex aromatic expression, where violet, the signature of Malbec, blends with candied black fruits, sweet spices, and a delicate hint of melted wood.
A natural red of character and aging potential
On the palate, Covenant 2018 is ample, structured, yet perfectly balanced. The tannins are present but velvety, the texture is juicy, enveloping, and the saline finish extends the elegance. This wine has lost none of its vibrancy despite its six years of aging — on the contrary, it gains in depth with each breath.
To be enjoyed today or kept in the cellar for another 10 years or more, this cuvée is ideal with roasted red meat, an autumn barbecue, or a truffle dish. Serve it at 16-18°C, no decanting necessary, in a large balloon glass to release all its complexity.

On the palate, the attack is supple, followed by a beautiful, melted tannic structure, without harshness, and carried by a lovely freshness. It's a wine that is both gourmet and serious, perfect for accompanying grilled red meats, stews, or a fine cut of aged beef.
Serve between 16 and 18°C, it can be enjoyed now or aged 5 to 10 years in the cellar to gain even more complexity. A modern and lively Cahors, like a bridge between tradition and freedom.
Les Hirondelles Red 2023
Terroir, plot size and grape varieties
Born under the sign of renewal, Les Hirondelles 2023 is a vintage that captures the essence of a free, joyful, and vibrant Gamay. While its Vin de France label proudly displays the colors of the Rhône Valley, its soul is firmly rooted in the granite soils and rolling hills of Beaujolais. This distinctive terroir, where the vines take deep root in living soils, gives the Gamay all its fruity freshness, finesse, and straightforwardness. A single grape variety, a single intention: to express the purity of the grape and the energy of the place.
Cultivation methods
The Alonso Tribe, a passionate collective free from traditional constraints, cultivates its vines with a philosophy deeply respectful of life. Their approach is sincere, intuitive, and connected to the rhythm of the seasons. The vines are lovingly tended by hand, without synthetic inputs, in a spirit of care and attentiveness to the plant. In the cellar, the same minimalist approach prevails: "Les Hirondelles" is a 100% free-run juice cuvée, born solely from the natural flow of the grapes, without pressing. This radical choice results in a remarkably fluid wine, where each sip seems to flow effortlessly, with the elegance of an unconstrained wine.

The palate, lively and fluid, unfolds a structured yet supple texture, supported by fine tannins and a beautiful tension. This is a red wine that dances rather than weighs down, a wine of movement and spontaneity.

It will also be a hit as an aperitif, when you want to start the evening with a red wine that's engaging yet discreet. At only 12% ABV, it's remarkably easy to drink, making you want to come back for more.
