From the Monts Luisants plot, this organic and natural red premier cru is a rarity. Vinified by Frédéric Cossard, it is a beautiful Burgundy wine in the Morey-Saint-Denis appellation, in the Côte de Nuits.
Vinification
The small clay-limestone Monts Luisants plot is located above the village of Morey-Saint-Denis. The Pinot Noir planted here is of the Pinot Fin variety, a very old and increasingly rare strain. The vines are around seventy years old. The vines are cultivated without pesticides and the wine is made without any additives or added sulfites, with whole bunch maceration.

Between viticulture and trading
Frédéric Cossard created the Chassorney estate in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, then ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations. Since the recent sale of this estate, Frédéric continues to manage his trading house, created in 2006 in his own name. He vinifies grapes from the greatest climates of Burgundy, but also from the Jura, Languedoc and elsewhere.
A solid commitment to nature
At Frédéric Cossard, the work of the soil and the vines is done naturally: plowing by horse, biodynamics, no chemical fertilizers or weedkillers. The harvest, by hand, is carried out at full maturity. Frédéric Cossard's vintages are rare and coveted, wines that are always highly anticipated but which sometimes require waiting.
Morgon 2023
Jean Foillard embodies the soul of authentic, vibrant, and unadorned Morgon. From his estate in Villié-Morgon, he crafts natural wines that reveal the beauty of Gamay and the richness of the Beaujolais terroirs. His artisanal approach highlights the balance between fruit, freshness, and sincerity.
Morgon 2023 is the estate's entry-level cuvée, but it is far from simple: it's a superb introduction to the world of Foillard. Sourced from various parcels on the Morgon hillsides, it offers a harmonious expression of the cru, balancing immediate fruitiness with underlying depth. A free-spirited, digestible, and radiant cuvée.
The nose is fresh and juicy, dominated by crisp red berries, redcurrant, and cherry, with a delicate floral note. On the palate, the wine is fluid and flavorful, driven by a beautiful acidity and supple tannins. A pleasurable wine, all finesse, to drink young or in the next few years.
This Morgon 2023 will wonderfully complement a charcuterie board, a vegetable quiche, or grilled chicken with herbs. It also lends itself to more spontaneous pairings, such as homemade pizza or a warm salad. Served slightly chilled, it reveals all its convivial and gourmet character.
Morgon Corcelette 2023
Jean Foillard is an emblematic figure of Beaujolais, recognized for his natural and intuitive approach to both the vineyard and the cellar. In Villié-Morgon, for several decades, he has been crafting wines of remarkable purity, deeply rooted in their terroir. Morgon Corcelette 2023 is one of the finest expressions from the Foillard estate. Made from old vines on sandy granitic soils, this cuvée embodies the delicacy of the Corcelette climate, while offering depth and vibrant energy. It is a wine that combines floral elegance with mineral intensity.

Morgon Côte de Py 2023
Jean Foillard is one of the great names in natural Beaujolais, established in Villié-Morgon since the 1980s. Guided by an artisanal approach, he produces lively, straightforward, and expressive wines, always true to their terroir. Each cuvée bears his signature: purity of fruit, subtle aging, and absolute respect for the soil.
Morgon Côte du Py 2023 is the estate's flagship cuvée, from the famous volcanic hillside overlooking the village. This terroir, rich in schist and manganese, produces an intense, structured, and deeply rooted wine. In 2023, the cuvée combines power, freshness, and finesse with remarkable energy.
The nose opens with aromas of ripe black fruits, licorice, and violet, with a slight smoky touch. On the palate, the wine is ample, deep, with an elegant tannic structure and a beautiful mineral length. It is a Morgon with character, built for aging, but already very appealing in its youth.
Serve this Côte du Py 2023 with roasted meat, duck breast, or a mushroom sauce dish. It will also perfectly complement more rustic cuisine such as a fine rib steak or a gratin dauphinois. A gastronomic wine, to be enjoyed at a grand table.

Notes of plum and ripe cherry: this 100% Gamay, which "Morgonnes" properly, is fleshy, lively, and fresh, full of vitality and energy. It comes from high-quality plots with light, sandy soils in the northern part of the famous Côte de Py, one of Morgon's emblematic terroirs. The tannins are dense and powerful, beautifully softened, but give this wine a beautiful structure. A wine for pleasure and gastronomy, to drink now, but which can easily be drunk more than ten years after its vintage: it is a superb wine for laying down.

Plum, cherry, flesh, structure: this is a Gamay that's full of Morgon, and for good reason. Juice, sap, gurgling, and pleasure: the famous Côte du Py has struck again, with all its spices, fruit, and overflowing minerality. This is the result of the combined work of winemakers Damien Coquelet and Frédéric Cossard. This wine is the result of semi-carbonic maceration of whole bunches, and is aged for ten months in concrete eggs.

Les En-Hauts is not strictly speaking a wine estate but a project of vintages produced in partnership between Damien Coquelet and Frédéric Cossard. These two great figures of Burgundy viticulture—yes, Beaujolais is in Burgundy—had every reason to join forces to produce colorful and flavorful vintages together.
Frédéric Cossard is a biodynamic and natural star of Burgundy winemaking, who gives voice to the terroirs and Burgundy wines, undeformed by agricultural chemicals. His vintages are pure and elegant without artifice and are among the most sought-after in Burgundy. His practice is not limited to Burgundy, as vintages are made from grapes purchased in other regions. His vines are tended according to the principles of biodynamics: homeopathic treatments based on essential oils, copper, and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity. Damien Coquelet, for his part, is the worthy successor of the great organic winemakers to whom we owe the advent of nature in the Beaujolais region: he is the son-in-law of Georges Descombes, and Jean Foillard was his mentor, who continued the pioneering work of Jules Chauvet and Marcel Lapierre. Owning nine hectares in Morgon on granite-sandy soils, he cultivates two and a half hectares plus a few leased vines: in all, four hectares on the legendary Côte du Py. A specialist in Morgons qui morgonnant and Chiroubles qui chiroublent, he embodies the true nature of Beaujolais.

Nicolas Chemarin
MC2 is the result of blending two plots of Morgon (Corcelette and Les Charmes) planted with forty-year-old Gamay grapes, on sandy and schist soils with a subsoil of clay and decomposed rock. The harvest ferments in whole bunches in concrete vats for twenty days, and the wine is aged for ten months in neutral oak: the result is a dense, dark Beaujolais, very mineral, and long-lasting. This fruity and structured wine can age for another five or six years, but it is already perfect.

Terrain Rouge is where the tradition of a great Beaujolais terroir meets the freedom of natural wine. In the Morgon appellation, one of the region's most renowned, Domaine Bélicard presents a 100% Gamay noir cuvée from organic farming, vinified without inputs, which reveals the full depth of the region's volcanic soils.
A unique terroir, precise winemaking
The vines are planted on rare basalt soils, offering a unique structure and minerality to the grapes. The clusters are hand-harvested, then undergo whole-bunch maceration according to the traditional Beaujolais method, without destemming. Fermentation occurs naturally thanks to indigenous yeasts, with no added oenological products. Five months of aging in stainless steel tanks preserves the frankness of the fruit and the wine's mineral tension.
A clear expression of Gamay
The color is brilliant ruby red. The nose opens with vibrant aromas of fresh red fruits (cherry, raspberry), with a floral hint. On the palate, it's juicy, straightforward, with a beautiful liveliness. The texture is fluid yet structured, with a precise finish, marked by the energy of the basalt. A Morgon that is both serious and free, true to its soil yet emancipated from standards.

Serve between 14 and 16 °C, without decanting, with simple and honest dishes: artisanal charcuterie, roasted poultry, grilled vegetables. Terrain Rouge can be enjoyed now but will evolve harmoniously over 5 years.

Cyclic Beer Farm
Cyclic Beer Farm is a duo of Barcelona friends, Alberto and Joshua. Based in the Catalan capital, they have two sides to their business: beer (Cyclic Beer) and wine (Cyclic Wine). The beers, inspired by the Belgian model, come in surprising and colorful ranges where expertly blended yeast cocktails and house brews combine with varied macerations of fruits, vegetables, herbs, and grape marc from traditional Catalan varieties, the latter collected after the fermentation of their wines—because the second side is the wine, made exclusively from native Catalan grape varieties. As merchant winemakers, Alberto and Joshua personally harvest by hand from organic vineyards throughout Catalonia and bring the harvest back to their brewery-cum-winery workshop in La Sagrera (Barcelona). There, they sort the grapes, tread them by foot, and ferment the must using exclusively indigenous yeasts. Depending on the type of wine, skin maceration takes place on the skins and stems for between one and three days for whites and between six and fifteen days for reds. The free-run juice is then transferred without pressing into stainless steel tanks where fermentation continues before bottling. The skins and stems, and sometimes part of the juice, are then used for the maceration of saison beers: an interesting synergy between beer and wine. No sulfites are added during vinification; nothing is added or removed from the wine, which is never filtered. The harvest and other viticultural operations are decided according to the lunar calendar.
Moscatell is made entirely from Muscat de Frontignan (a variant of the white Muscat à petits grains) grown in Haut-Penedès, in Sant Pere de Ribes, on limestone soils. The age of the vines is not specified, but the altitude of the plot is 80 meters. The harvest is foot-trodden and macerates for a day on the skins and stems. It is then gently crushed again before finishing its fermentation in stainless steel vats. If this wine seemed to need a little time to develop when we tasted it upon arrival, it promises a lot: dry, aromatic, beautiful crisp acidity, lemon zest on the nose and palate, floral and highly drinkable. Decanting recommended.

The color of this single-plot cuvée is intense ruby, the nose elegant—flowers, blueberry, wild strawberry; the palate is voluptuous and round with a deep, rich, nuanced, and intense bouquet. Characteristic of the Moulin-à-Vent terroir, said to be the most Burgundian of Beaujolais reds, the Michelons climate is located on the heights of the appellation and faces south. The Gamay vines grow on crumbly pink granite soil rich in manganese.

In 2006, he created his own wine trading house and buys organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais crus. The exercise is not limited to Burgundy, as vintages are made from grapes purchased in the Jura, Languedoc, or elsewhere.
