To produce this Cornas Reynard, the cellar work is just as meticulous and follows a philosophy respectful of life. Thus, the wine is vinified without sulfur or additives. The Syrah macerates slowly and undergoes gentle extractions to preserve the purity of the fruit. In the same vein, the wine is aged for a long time in used wooden containers before continuing its aging for three months in large oak vats.The tasting reveals a great terroir wine with a ruby color and intense, purplish reflections. It gives off notes of black fruits (blueberry, blackberry, blackcurrant, black cherry), sweet spices, pepper, tobacco, leather, game, and violet. We recommend letting it rest in the cellar for a few years to soften its tannic structure, which will accompany rich and flavorful dishes.

Reynard represents the deepest and most sought-after expression of Thierry Allemand's work. This cuvée comes from his old Syrah vines and is generally darker, more concentrated, and more structured than Chaillot, while retaining the remarkable finesse that characterizes the estate's wines. The 2017 develops a complex register of blackberry, blackcurrant, violet, black olive, pepper, smoke, and spices, accompanied by a deep minerality. The palate is ample and intense, but the energy and finesse of the tannins prevent any sensation of heaviness.

The wine is made from 100% Syrah, vinified in whole clusters with the yeasts naturally present on the grapes. Reynard is aged for approximately 24 months in old barrels, before being bottled without fining or filtration. It is a great cellaring wine, but the 2017 is now beginning to reveal magnificent complexity. Serve with hare, rib of beef, roast lamb, pigeon, or wild mushroom dishes.
