I Vicini Moscato Blanc 2020
Jean-Yves Péron
I Vicini Moscato is a Muscat d'Asti vinified dry; it therefore offers the aromatic and musky nose specific to the grape variety, but without the syrupy side that is sometimes associated with it, as a very present tannic structure balances the whole. On the palate, it is rich and powerful; we find the charming aroma of Muscat in the retro-olfaction, but with the tension and freshness that the winemaker favors for his dry whites. It is a table wine, with power and presence: not really for an aperitif, but for gastronomy, no limits.
Jean-Yves Péron's "I Vicini" series is made from grapes harvested in Piedmont; for I Vicini Moscato, we are dealing with the famous muscats of the terroirs of Asti. They grow on very fine limestone soils, calcareous-magnesian, and the Asti site benefits from a cold air current that brings increased freshness compared to the rest of the region. The harvest, manual, is carried out on grapes at a fairly advanced phenolic maturity. Maceration is long, with three months of punching down, after which everything is racked in January, pressed and sent directly into 300-liter barrels (new barrels, one-wine barrels and two-wine barrels) for a year of aging. No filtration, no addition of sulfites. Straightness, tension, and freshness: a very fine mountain Muscat.

Jean-Yves Péron embodies the natural renaissance of the beautiful Savoyard vineyard, which has long suffered from a somewhat flimsy image, not taken seriously enough. Yet, what treasures its varied soils and numerous ancient grape varieties produce!
Near Conflans, in Albertville (Savoie), Jean-Yves Péron skillfully combines committed viticulture and merchant winemaking, both under the banner of nature and organic high-altitude vines. Initially destined for a career in biochemistry, he quickly became drawn to the vine and trained as an oenologist in Bordeaux. He learned his trade as a winemaker with Thierry Allemand in Cornas, then with Bruno Schueller in Alsace, before spending some time in New Zealand and the United States. Jean-Yves's current vineyard, one and a half hectares of which have been biodynamic since the beginning, is divided between Conflans, near Albertville, and Fréterive, a little further down in the Isère Valley. Composed of micro-plots of vines, it is staggered between 350 m and 550 m above sea level and is worked entirely by hand. His trading activity, which he began in 2011, allows him to buy the harvest from organic winegrowers close to him (such as Raphaël Marin and Adrien Dacquin). Also, the construction of a new winery in 2017 allows him to increase production and collaborate with winegrowers from Northern Italy: Paolo Angelino in Casale Monferrato (Turin), Giorgio Barbero in Asti. This is a new dimension given to his work as a winemaker, allowing him to diversify the terroirs and deepen his experiences in winemaking and aging. Jean-Yves Péron's winemaking follows the principles of minimal intervention. On narrow and steep surfaces, his mountain vines receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. The surrounding vegetation is very rich: it protects the vines and helps to strengthen them. The soils are grassed, mown and reworked with a pickaxe and winch. The harvest is entirely manual. Once vatted in whole bunches, the grapes, both red and white, undergo a semi-carbonic maceration which allows the extraction of fresh fruit aromas. This maceration time varies between five days and nine weeks depending on the vintage. The day before or two days before pressing, Jean-Yves performs foot-treading directly in the vat. After this fermentation, the musts are sent to barrels for aging on lees for twelve months in five hundred liter barrels of two or three wines (to limit the oaky sensation), followed by blending and resting in vats. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Pierra Menta White 2022
Pierra Menta is an exceptional organic, biodynamic, and natural dry white wine from Savoie made by Jean-Yves Péron. Classified as a Vin de France, Pierra Menta is made from the Gringet grape variety. The winemaker plans to plant more vines of this ancient variety until he reaches half a hectare.
Vinification
Gringet, which makes up 100% of Pierra Menta, is a white grape variety native to Haute-Savoie, historically linked to the commune of Ayse, near Bonneville. Jean-Yves Péron's vines are planted near Albertville, on a south-facing mica-schist plot. Gringet has long been confined to the Bonneville region and traditionally produces low-proof, high-yield sparkling wines. It is an interesting, fruity, low-alcohol grape variety with notes of quince and strong minerality. Pierra Menta's gringets are macerated for two weeks in carbonic acid, then punched down for two months, and aged for one year in 300-liter barrels.
Tasting
The quince is evident from the initial olfactory and taste, and the minerality supports this note. White fruits, florality, plenty of structure, and a nice acidity. An incredible length, too... We thank Jean-Yves for this and move on to the food and wine pairings: fish, seafood, oysters and Middle Eastern cuisine.

For all vintages, the free-run and press are blended, then aged on lees for at least one year, in two- or three-wine barrels, amphorae or tuns, before final blending. They must be stored at a temperature below 18°C. No sulfites are added, or as little as possible, and the wines are not fined or filtered.

La Petite Robe Blanc 2021
Jean Yves Peron
A dry, organic, biodynamic, and natural macerated white wine, La Petite Robe is produced in Savoie by Jean-Yves Péron. This is a 100% Jacquère white wine whose vines grow on clay-limestone soil, in the place called Les Marches, at the foot of Mont Granier.
Vinification
La Petite Robe comes from roughly the same terroir as that of Œillets, but it is harvested earlier. Carbonic maceration lasts fifteen days. The wine is aged for one year in 15-hectoliter tuns and barrels. Neither fined, nor filtered, nor sulfited.
Tasting
Wonderfully sweet and crisp, this is yet another great success from Jean-Yves Péron. There are actually two Petites Robes: the wine will be very different depending on whether it is in magnum or bottle. Jean-Yves likes to talk about this as an exercise in style. Here, in 75 cl, the Jacquère gives its opulent, gourmand, fruity, fleshy side, with volume on the palate. The Petite Robe offers notes of charcoal, white fruits, a beautiful balance and great intensity, combined with a note of controlled oxidation. This wine is ideal with raw or cooked seafood: the choice is wide, between smoked fish, tarama and seafood rillettes (Salmon de France).

Les Œillets Amphore White 2022
Les Œillets Amphore is a dry macerated white wine produced in Savoie by Jean-Yves Péron. Organic, biodynamic, and natural, it is a 100% Jacquère white, with no additives or added sulfites, classified as a Vin de France.
Vinification
Les Œillets comes from the same terroir as La Petite Robe (the clay-limestone soils of the lieu-dit Les Marches, at the foot of Mont Granier), but it is harvested later to achieve greater phenolic maturity and a higher tannin concentration. Carbonic maceration for four or five days is followed by a month of punching down in vats. At least one year of aging in terracotta amphorae.
Tasting
With a beautiful minerality and a tension polished by the time spent in terracotta, Les Œillets Amphore by Jean-Yves Péron is an atypical white, with powerful aromatic notes without any trace of wood. Lots of fruit and candied citrus. Les Œillets has chewiness, texture, a tannic mouthfeel and a note of controlled oxidation. The tension is strong, balanced by a note of apricot. You will pair him with all your best dishes.

Les Marlines Special White Cuvée 2018
Les Marlines is an organic and natural dry white wine from Jean-Yves Péron. This exceptional cuvée, classified as a Vin de France, is produced in Savoie in the Chignin-Bergeron region (without the appellation). It is a 100% Roussanne de Savoie merchant cuvée made from grapes grown biodynamically in Chignin by Gilles Berlioz.
Vinification
Roussannes are produced from young vines (three years old) and older vines growing on poor, shallow limestone subsoil. The plot is south-facing on a predominantly west-facing slope. This is the first harvest from these young vines, and it is producing splendid results. The grapes spend three weeks in carbonic maceration with a week of punching down, then the wine is aged under veil for four years in 225-liter barrels.
Tasting
The oxidative note is unmistakable in this Les Marlines cuvée; it is accompanied by great aromatic richness and real freshness. This complete and adaptable wine offers delicious notes of hay, dried herbs, and apricot, which is the hallmark of Roussanne. As a good sailing wine, this wine will go with everything. We recommend it with very old hard cheeses: or with exceptional charcuterie, such as galabart black pudding, Bigorre black ham or Béarnaise andouille, all three to be found in the selection of the Collectif Padouen. Or a simmered Gascon poultry (we strongly recommend using this wine for the sauce: you will therefore need more than one bottle).

i Vicini Cortese White 2021
This is a dry white wine from Jean-Yves Péron, organic, biodynamic, and natural, vinified in Savoie from organic Cortese grapes harvested in Piedmont. It is a merchant cuvée from the I Vicini series. The grapes come from Asti, in a cool microclimate that allows for relatively late ripening.
Vinification
Cortese is an ancient grape variety often associated with Trebbiano or Garganega. It produces a quality wine, fresh and tangy, with a straw-yellow color with greenish highlights. Here it undergoes two weeks of carbonic maceration and spends a year aging in 34 hectoliter tuns. No fining, no filtration, no addition of sulfites.
Tasting
I Vicini Cortese is a light and fresh wine, very digestible, with an alcohol content between 10 and 11 degrees, making it easy to drink. It has a minerality due to the terroir and notes of citrus, especially lemon zest. A perfect companion for tapas and the most refined starters, shellfish and caviars.

Champ Levat Rouge 2020,
Jean-Yves Péron
Champ Levat is a tender and balanced red wine, taut and straightforward, with a peppery note and plenty of spice. On the palate, it offers a profusion of fresh and intense fruit, with balsamic notes. The freshness lends a pleasant and dense mouthfeel. The tannins are well-integrated and polished, and the finish is long. This 100% Mondeuse, a blend of two plots: Le Pas de l'Ours and Côte Pelée, can be aged for a long time. Two terroirs are highlighted: mica schist soils in Albertville, giving a mineral and floral accent, and limestone soils in Fréterive, favoring a rustic and fruity side. The two terroirs balance each other. The harvest, entirely manual, is vatted in whole bunches and undergoes two weeks of carbonic maceration before devatting, pressing, then aging for one year in barrels of several wines (between three and ten years old) whose wood does not impose itself on the fruitiness of the wine. No filtration, fining or addition of sulfites. Champ Levat will pair very well with cured meats and all mountain cuisines.

Vers la Maison Rouge 2019,
Jean-Yves Péron
Light color, beautiful aromatic richness with slight muscatel notes, tannic mouthfeel nicely rounded by barrel aging of several wines (which rounds out the tannins without oaking the wine). Vers la Maison rouge 2019 (the name comes from the main plot) retains the characteristics of the cuvée—a beautiful, lively, and energetic red wine, with great minerality, a clear and limpid appearance, almost rosé, offering notes of redcurrant and small red fruits on the palate—but due to its production, it has a more solid structure. Indeed, this is a special vintage of Vers la Maison rouge, a Mondeuse red wine vinified on skins in carbonic maceration but this time produced according to the principle of "repasse": after blending, a refermentation (or several successive refermentations) is carried out on grape marcs from various grape varieties. This operation produces reds with characteristics of macerated white wine (orange wine), particularly in terms of structure and structure. Here, the 2019 vintage, to avoid a volatile that risked appearing in this vintage, was put to referment on Mondeuse marcs, then Jacquère, and finally Muscat. This produces a clear, structured wine, closer to the desired color. To further melt the tannins, after refermentation on the marc, the wine is returned to barrels for aging for eight to ten months, which explains why this 2019 is being marketed in 2020. No filtration, fining, or addition of sulfites.

I Vicini Grignolino Red 2019
It's in Savoie, in Chevaline, near Lake Annecy, that Jean-Yves Péron skillfully combines committed viticulture and merchant winemaking, both with a focus on nature. His Mondeuse reds are magnificent, as are his whites made from ancient local grape varieties—Jacquère, Altesse, Bergeron, and Persan—no less so. His current vineyard, three hectares biodynamic since the beginning, is divided between Conflans, near Albertville, and Fréterive, a little further downstream in the Isère valley.

Les Œillets Blanc 2022
Jean-Yves Péron
Vinified in Savoie, Les Œillets is a dry macerated white wine made by Jean-Yves Péron.
At least one year of aging in 300-liter barrels.
Tasting
Woody, with explosive minerality and beautiful tension, Les Œillets by Jean-Yves Péron is an atypical white wine with powerful aromatic notes. Lots of fruit and candied citrus. Superbly structured, Les Œillets has chewiness, texture, a tannic mouthfeel and a note of controlled oxidation. The tension is strong, balanced by a note of apricot. This is a wine for roasted poultry and high-end cured meats, but its pairings are broad.

i Vicini Barbera Red 2021
This bottle from Jean-Yves Péron's I Vicini series is an organic, biodynamic, and natural red wine. It is vinified in Savoie from grapes harvested in Piedmont. The grape variety is Barbera, grown in Asti and Alba. The second most widely used red grape variety in Italy after Sangiovese, Barbera produces full-bodied, colorful wines with notes of red fruits. This vintage is classified as a Wine of the European Community.
Vinification
Hand-harvested, no sulfites added, no filtration, no fining. The two Barberas are macerated for three months with punching down and undergo fifteen days of carbonic maceration. The wine is aged for one year in 225-liter barrels. The 13.5 degrees of alcohol testifies to the desire not to exaggerate its richness and power: the average Barbera today is closer to 15 degrees.
Tasting
A great wine in every sense of the word, this I Vicini Barbera. Long, very fruity, generous, deep, with superb acidity resulting from a harvest at moderate maturity, it is both serious and joyful, intense and concentrated. Finesse, minerality, tension, beautiful intense and colorful red color: it demands to accompany beautiful cuts of meat, whether black pork from Bigorre or high-end beef from Maison Aitana.

Jean-Yves Péron talentedly embodies the organic, biodynamic and natural renaissance of the Savoyard vineyard, which is based on varied soils and many indigenous grape varieties (jacquère, altesse, mondeuse, etc.). At his Chevaline winery in the Bauges region, he vinifies grapes from his plots in Conflans, near Albertville, and Fréterive, in the Isère valley.
High-altitude biodynamics
Jean-Yves Péron's work follows the principles of minimal intervention. On narrow, steep slopes, his hand-worked mountain vines in micro-plots receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. The grapes are vatted in whole bunches and undergo semi-carbonic maceration. Shortly before pressing, they are foot-trodden in the vat, then transferred to two- or three-wine barrels for twelve months of aging on lees, before blending and resting in the vat. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Italian-Savoyard trade
Since 2011, a trading activity has allowed Jean-Yves Péron to buy the harvest from neighboring organic winegrowers and to collaborate with winegrowers from Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his experiences in winemaking and aging.
I Vicini Barbera Rouge 2020,
Jean-Yves Péron
This I Vicini Barbera is a great wine in every sense of the word. Long, very fruity, generous, deep, with superb acidity resulting from a moderately ripe harvest, it is both serious and joyful, wonderfully intense and concentrated. Finesse, minerality, tension, and a beautiful, intense and colorful red color: a superb example of what the Barbera grape variety can achieve, especially at altitude, as is the case here. Its 13.5% alcohol testifies to the desire not to exaggerate its richness and power: the average Barbera today is closer to 15%. The second most widely used red grape variety in Italy after Sangiovese, Barbera produces full-bodied, colorful wines with notes of red fruits. In 2017, Jean-Yves Péron decided to expand his range by sourcing organic grapes in the heart of Piedmont, Italy, in collaboration with his winemaker friends Paolo Angelino in Casale Monferrato and Giorgio Barbero in Asti. The result has been several vintages, including this 100% Barbera red, made from Paolo's grapes. The vines, around forty years old, grow on gray and white marl soils cultivated biodynamically. These are old, low-yielding vines, harvested by hand when slightly underripe to counterbalance the richness of the grape variety. Skin maceration, in pure carbonic mode without punching down, takes place over four weeks, using indigenous yeasts. I Vicini Barbera then ages for at least a year in 900-liter sandstone amphorae, which reinforces the wine's tension and minerality. No filtration, fining, or addition of sulfites.

Jean-Yves Péron embodies the natural renaissance of the beautiful Savoyard vineyard, which has long suffered from a somewhat flimsy image, not taken seriously enough. Yet, what treasures its varied soils and numerous ancient grape varieties produce!
Near Conflans, in Albertville (Savoie), Jean-Yves Péron skillfully combines committed viticulture and merchant winemaking, both under the banner of nature and high-altitude organic vines. Jean-Yves' current vineyard, one and a half hectares biodynamic since the beginning, is divided between Conflans, near Albertville, and Fréterive, a little further down in the Isère Valley. Made up of micro-plots of vines, it is staggered between 350 m and 550 m above sea level and is worked entirely by hand. His trading activity, which he began in 2011, allows him to buy the harvest from organic winemakers close to his home (such as Raphaël Marin and Adrien Dacquin). Also, the construction of a new winery in 2017 allows him to increase production and collaborate with winemakers from Northern Italy: Paolo Angelino in Casale Monferrato (Turin), Giorgio Barbero in Asti.
Le paché Red 2022
Le Paché is an organic and natural wine produced in Savoie by Jean-Yves Péron with the help of his collaborator Marc Payan. In Vin de France, it is made from Pinot Noir and hybrid grape varieties.
Vinification
The Le Paché plot is planted with old vines (60 to 120 years old) on limestone and schist soils. The vines are harvested by hand. The grapes undergo a two-week carbonic maceration before being fermented with two weeks of punching down the cap. The wine is aged for one year in 225-liter barrels.
Tasting
Floral, spicy, mineral, and delicately fruity—red berries, dried or jammy strawberries, pomegranate—, earthy notes, and a lovely aroma of roots and bark, Le Paché ticks all the boxes for a balanced, medium-bodied red wine. It pays a beautiful tribute to Pinot Noir from the mountainous region. Beautiful velvety mouthfeel, sweet spices.

Vers la Maison Rouge Red 2022
Produced in Savoie by Jean-Yves Péron, Vers la Maison rouge is an organic, biodynamic, and natural red wine classified as a Vin de France, made from the Mondeuse grape variety. Its name is that of its main plot.
Vinification
Produced on mica-schist soils near Albertville and limestone scree in Fréterive, Vers la Maison rouge is vinified on the skins using carbonic maceration and produced according to the "repasse" principle: after blending, one or more refermentations take place on grape marc from various grape varieties. This operation produces reds with characteristics of macerated white wine (orange wine), particularly in terms of structure and structure. No filtration, fining, or addition of sulfites.
Tasting
Clear, limpid, almost pink color; beautiful aromatic richness, nicely tannic mouthfeel. Vers la Maison rouge is a beautiful, lively, energetic, mineral red wine, offering notes of redcurrant and small red fruits on the palate; but due to its production, it has a more solid structure than that of a rosé.

Côtillon des dames réserve White 2020
Côtillon des Dames Réserve is an organic, biodynamic, and natural dry white wine made in Savoie by Jean-Yves Péron from Jacquère, Altesse, and Roussanne grapes. Classified as a Vin de France, it is, as its name suggests, a reserve cuvée, particularly refined.
Vinification
Côtillon des Dames Réserve by Jean-Yves Péron is made from Jacquère, Altesse, and Roussanne grapes. The plots are located on mica-schist soils in Albertville, on limestone scree in Fréterive and on limestone in Chignin. The grapes are vinified separately and blended approximately two months before bottling. Maceration in vats with punching down is carried out for two months. The idea is to be able to control the evolution of the juice and balance the wine according to the behavior of each grape variety. The wine is aged for three years in 300-month barrels.
Tasting
Côtillon des Dames Réserve is a complex, elegant and fruity white wine that should be enjoyed, as it is rare. It displays lovely acidity and good aging potential. It will be perfectly at home alongside smoked fish (salmon or other) or anything from the sea. It will also pair well with cheeses, fondues and raclettes.

La Grande Journee Blanc 2020,
Jean-Yves Péron
La Grande Journée is a magnificent "polyphonic" maceration white, a distinguished orange with a layered structure. It will be perfect for any occasion. This cuvée is produced entirely from Jean-Yves's terraced Altesse plot, on mica schist soils. The grapes are harvested at the peak of ripeness (towards the end of September, Altesse being an early-ripening grape variety). They then undergo two weeks of carbonic skin maceration and three months of punching down, until the end of alcoholic fermentation. After racking around the end of December or beginning of January, the wine is aged for at least a year in 300-liter barrels.

i Vicini Pinot Nero Red 2018,
Jean-Yves Peron
Jean-Yves Péron, an iconic figure in Savoie's natural wine scene, is expanding his horizons with his I Vicini range, made from organic grapes carefully selected in Northern Italy and expertly vinified in Savoie. This cuvée Pinot Nero Rouge 2018, 100% Pinot Noir, captures the essence of the Burgundy grape variety while adding a surprising and characterful Alpine touch.
A Pinot Noir between Piedmont and Savoie
Made from organic grapes harvested by hand in the heart of Piedmont, Italy, this wine is then vinified with the same rigor as the estate's other cuvées. A semi-carbonic maceration of whole bunches extracts finesse and freshness, while aging on lees for twelve months in old barrels refines its texture. Unfined or filtered, with minimal intervention, this Pinot Noir expresses exceptional purity.
Tasting: finesse and drinkability
The color is light and bright, heralding an airy wine. On the nose, aromas of small red fruits—cherry, raspberry, redcurrant—intertwine with floral and slightly spicy touches. On the palate, the attack is delicate, with fine tannins and a refreshing acidity that draws the wine towards a savory and persistent finish. A perfect balance between elegance and indulgence.
Food Pairings and Service
Ideal around 16-18°C, it pairs well with white meats, roast poultry, or mushroom risotto. Its remarkable drinkability also makes it an excellent companion for aperitifs with friends. With an aging potential of 5 to 10 years, this natural wine will evolve gracefully while retaining its liveliness.
La Tour Sarazine White 2022
La Tour Sarazine is an organic, biodynamic, and natural dry white wine from Jean-Yves Péron. Made from Muscat à Petit Grain, this white wine macerated in Vin de France is sometimes blended with Jacquère when the vintage is low-yielding.
Vinification
Sourced from a schistose micro-plot in the Albertville vineyard, the La Tour Sarazine harvest ferments using carbonic maceration for fifteen days. After pressing, it is aged for one year in tuns and barrels. Unfiltered, unfined, no added sulfites.
Tasting
Jean-Yves Péron's Tour Sarazine has a very muscat profile – musky, floral, aromatic, exotic – reinforced by the mineral clarity of Savoyard schist. For pairings, it's a call to the imagination, between cheeses and cuisines from elsewhere: for the former, we recommend them creamy, and for the latter, don't hesitate to delve into Asian repertoires.

i Vicini Favorita White 2022
Favorita, from the I Vicini merchant range, is produced by Jean-Yves Péron using organic, biodynamic, and natural methods. It is made from organic grapes purchased in Asti (Piedmont). This macerated white wine is made from 100% Favorita, a local white grape variety very similar to Vermentino.
Vinification
The grapes used for this Favorita cuvée are harvested at full maturity from young vines growing on semi-slopes. One-third of them are directly pressed and two-thirds are macerated in carbonic acid for two weeks. The wine is aged for one year in 300-liter barrels. Unfiltered, unfined, and no sulfites are added.
Tasting
This is a Vermentino that bears the hallmarks of a more continental terroir and climate than average. It has a beautiful acidic base and plenty of minerality, sapidity, and aroma, similar to certain Alsatian grape varieties: fragrant without being exotic. Pair it with fish and seafood in all their forms: oysters, shellfish, smoked salmon, etc.

Since 2011, a trading activity has allowed Jean-Yves Péron to purchase harvests from neighboring organic winegrowers and collaborate with winegrowers from Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his winemaking and aging experiences.
Jean-Yves Péron initially studied biochemistry, but the vine quickly won him over, and he pursued oenology training in Bordeaux. He lives and makes wine in Chevaline, a small Savoyard village located just south of Lake Annecy and included in the Bauges Regional Natural Park. His vineyard is divided between two sites: in Conflans, near Albertville, he acquired micro-plots of old Mondeuse vines in January 2004, followed by other plots in Fréterive, a little further downstream in the Isère Valley. But before working on his own estate—biodynamic from the start—he learned the ropes with Thierry Allemand in Cornas, then with Bruno Schueller in Alsace, before spending some time in New Zealand and the United States. In 2011, Jean-Yves began a wine trading business, purchasing harvests from organic winegrowers near his home. For him, this adds a new dimension to his work as a winemaker, allowing him to explore a wide range of terroirs and deepen his winemaking and maturation expertise.
The estate, totaling three hectares, cultivates two different sites on steep terrain. In Conflans, Jean-Yves cultivates old vines facing due south, on terraces, on a slightly acidic mica-schist terroir. In Fréterive, the soil is composed of clay-limestone scree. The average altitude of the vines is between 300 and 600 meters, and the planting density is 10,000 vines per hectare. The grape varieties are those of the Savoyard tradition: Mondeuse for the reds (with a little Gamay); Altesse, Jacquère, Bergeron (local name for Roussanne) in equal parts for the whites, without forgetting the recent planting of Persan, an old local grape variety that had practically disappeared. The average age of the vines is thirty to one hundred and twenty years, the oldest being Mondeuse and Jacquère. Mondeuse is a red grape variety closely related to Syrah: between Thierry Allemand's Cornas and Jean-Yves' Mondeuses, the connection isn't just an impression.
On narrow, steep slopes, these mountain vines are trained using goblet training on stakes or cordon de Royat training on trellises (a short pruning technique with one or two horizontal arms and four to six two-bud spurs). No synthetic products—pesticides, herbicides, or fertilizers—are used in the vineyard; Jean-Yves prefers biodynamic horsetail and nettle manure. The surrounding vegetation is extremely rich: it protects the vines and helps strengthen them. The soil is grassed, mown, and worked with a pickaxe and winch. The harvest is entirely manual.
Jean-Yves Péron's winemaking adheres to the principles of minimal intervention. Once vatted in whole bunches, the grapes, both red and white, undergo carbonic maceration to extract fresh fruit aromas. The grapes are then devatted and pressed or punched down for varying lengths of time. Maceration time varies between five days and nine weeks depending on the vintage. After fermentation, the must is transferred to barrels for aging on lees for twelve months, followed by blending in vats for four months. No sulfites are added, or as little as possible, and the wines are neither fined nor filtered. During his stay in Oregon, Jean-Yves noted the extensive use of new wood barrels and did not find it to his liking. This is why he ages his wines in 500-liter barrels that have held two or three wines to avoid excessive oakiness.
Savoyard wine has long suffered from a somewhat flimsy image, not taken seriously enough. Yet, what treasures are produced by its varied soils and numerous ancient grape varieties! The renaissance of this beautiful vineyard is represented, among others, by Jean-Yves Péron, who is particularly celebrated for his sumptuous Mondeuse reds, laden with black fruits and spices: some, blindly tasting, are mistaken for a great Rhône Syrah. The southern exposure provides good phenolic maturity, which is not without its characteristic character. The macerated whites (Les Barrieux, Roussanne) surprise with their tannic presence in a region where fresh, direct-pressed whites abound. A best-seller, the Le Pas de l’Ours cuvée, is a balanced and expressive red wine, complex yet easy to drink. It will accompany the finest cuisine, particularly southern cuisine (olives, citrus fruits, marinated meats, etc.). As a general rule, the cuvées bear the names of their plots or localities, and their labeling is very simple. In addition to his wines, Jean-Yves also produces a perry, the Poiré de la Combe d’Ire.
