In Paris, in the middle of the 12the(today replaced by the Opera of the same name), and today supporting the four kilometers of the Promenade Plantée. What interests us is below the promenade: the Viaduc des Arts, a group of craft workshops installed under the arched vaults of the railway viaduct. One of these workshops is the Distillerie du Viaduc, created by Théo and Quentin, two friends who met at the back of the classroom, sitting at the same desk. They were already restless. Later, a lockdown was all it took for them to quit their respective jobs and explore the wine and spirits industry together. After six months immersed in the wine world, they discovered the art of distillation. Off they went to Brittany, where they learned the principles from a master distiller. They then returned to Paris to create their own artisanal and natural distillery.
They set up their equipment in 2022 under an arch of the Viaduc des Arts, at 55 Avenue Daumesnil. They will house their stills there and also offer creative workshops in their tasting room. They opted for two pot stills, one of fifty liters and the other of one hundred liters, handmade in Portugal. Made of copper, they distribute heat (provided by paella burners) quickly and evenly. These techniques give the distillates richness and roundness. The spirits are obtained through maceration followed by distillation, which releases the aromatic qualities of the plants, always used dried for better extraction of the aromas. The artisans carry out only natural racking and gentle filtration to preserve the freshness of the spirits, to which no sugar or additives are added. The Distillerie du Viaduc produces several gins, aquavit, anizo (anise alcohol), mint alcohol and pastis. Eventually, she would like to produce whisky and calvados.
All the ingredients used are organic. Beyond the recipes, the containers and accessories—bottles, corks, labels, packaging—are made from recycled materials. One of the distillery's projects is to draw inspiration from traditional methods that already involved transforming agricultural waste into alcohol. They hope to recover waste from breweries, cider houses, wineries, and unsold wines from Île-de-France artisan producers in order to distill them.
Another distinctive feature of the Distillerie du Viaduc is the intention to create tailor-made recipes and special vintages in collaboration with independent or private stakeholders. As part of these partnerships, the exclusive recipe, embedded in the brand's values, is created by both parties. This is what allowed La Distillerie du Viaduc and Culinaries to create together the first Culinaries gin, an exclusive recipe, the first tailor-made flavor developed exclusively for us (and for you, obviously).
