Culinaries Gin, 70cl
Distillerie du Viaduc
We are very proud to offer you Culinaries Gin, our first house spirit, the result of our collaboration with the Distillerie du Viaduc, located in Paris's 12th arrondissement. The distillery team—its two founders, Théo and Quentin—worked to determine the profile of this beverage, agreeing on the recipe and its dominant aromas. We wanted a very fresh gin, with a clean and precise aromatic palette. Once the composition of the macerate was fixed after several trials and errors, the bouquet of plants, 100% organic and French, and spices was brought together by the two distillers: always dried plants, for the preservation and concentration of aromas. The maceration of dried plants indeed gives a more flavorful gin. The ingredients are first macerated in neutral wheat-based alcohol with a 96% alcohol content, and everything is then distilled. Since the double distillation has already been carried out to obtain the alcohol, a triple distillation is carried out with the plants, which are left in the macerate to better extract the essential oils. The gin is distilled in one of the house's two stills. Once the gin is distilled, it is bottled at the distillery itself, in pretty transparent glass bottles of a refreshing aquatic blue.
Culinaries gin has an alcohol content of 43% and comes in 70 centiliter bottles. What's in it? The Culinaries gin recipe includes angelica root, dill seeds, coriander seeds, orange peel, sage leaves, juniper berries, and fenugreek seeds. We wanted it to be aromatic but not overpowering, unlike some contemporary recipes that are more reminiscent of a perfumer's workshop than a distiller's, and we wanted to emphasize freshness, for the greatest pleasure of your gin and tonics or dry martinis. On the nose, angelica immediately announces itself with its heavenly scent; orange peel and dill follow suit, and the remaining ingredients unfold in a subtle, soothing, and comforting range. Fenugreek appears last, enhancing this fresh symphony with a discreet warm and spicy note. We are sure that you will already find the bottle superb and that you will appreciate the contents even more. Serve this gin chilled, refrigerated, or even frozen for a more enjoyable experience. We recommend using a pouring spout for ease of use.
Pastiche
Distillerie du Viaduc
Pastiche is anything but an imitation. With this creation, Distillerie du Viaduc asserts an artisanal and botanical vision of pastis, far from industrial versions saturated with sugar and artificial flavors. This organic aniseed spirit is crafted with purity in mind, slowly macerating whole plants in neutral alcohol, following a gentle and controlled process that reveals the natural complexity of the botanicals.
Among the ingredients, all organically grown: green anise seeds, fennel, licorice, dill, and lemon thyme. Maceration lasts one month, followed by progressive dilutions with no added sugar, coloring, or additives. It is this slow reduction that gives Pastiche its smooth texture and balanced palate.
The nose opens with a clear aniseed base, supported by fennel and a fresh touch of lemon thyme. On the palate, the attack is clean, herbaceous, structured by a beautiful presence of licorice and the aniseed elegance of dill. The finish is long, persistent, and evokes natural licorice candies, without any heaviness.
This new generation pastis can be enjoyed neat or slightly diluted, depending on the desired intensity. It is designed for lovers of bitters, botanicals, and freshness. More than just an aperitif, Pastiche is a vibrant infusion of the Mediterranean garden in a bottle, at once intense, dry, and digestible.
Vodka
Distillerie du Viaduc
With this artisanal Vodka, Distillerie du Viaduc offers us a bold and botanical reinterpretation of what appears to be the most neutral spirit. Made from carefully selected wheat alcohol, this organic vodka derives its unique character from a maceration of coriander seeds, some of which are roasted in-house to reveal a rare aromatic complexity.
Once the seeds are macerated, the whole is distilled in an artisanal still, then rested for a month for the aromas to meld and the texture to naturally soften. No additives, no sugar: the purity of the process allows full expression of the botanicals and the quality of the base alcohol.
The nose opens with a lively and tangy note of fresh coriander, then evolves towards herbaceous and light, almost zesty citrus aromas. On the palate, the attack is fluid, fresh, with a beautiful roundness, then a spicy, warm yet elegant framework settles in, reminiscent of roasted coriander. The finish is long, comforting, carried by a vegetal freshness that balances the whole.
This singular vodka can be enjoyed neat and chilled, or in cocktails. It will bring a unique complexity to a Moscow Mule, a Bloody Mary, or even an Espresso Martini, which it will subtly enhance with a peppery and vegetal touch.

Brandy,
Distillerie du Viaduc
Distillerie du Viaduc, a leading artisan of exceptional eaux-de-vie in the Île-de-France region, unveils its Brandy, a distinguished and elegant spirit made from the rare Avgoustatis grape variety. This brandy, carefully crafted using a double distillation process, reveals a complex and seductive aromatic palette, combining depth and finesse.
Preparation of a refined brandy
This brandy is precisely distilled to preserve the aromatic richness of the Avgoustatis grape variety, an unusual Greek variety renowned for its concentrated aromas. Aged in barrels, it develops a balanced structure and complexity worthy of the finest spirits. Its deep golden color testifies to its careful aging, while its 43% alcohol content ensures a beautiful intensity on the palate.
A powerful nose and a velvety palate
From the first nose, this brandy reveals captivating notes of candied cherry and prune, complemented by a subtle touch of woody vanilla brought by the time spent in barrels. On the palate, it reveals itself to be full-bodied and structured, with a sweet and fruity attack, followed by a harmonious rise in power. Aquavit
Distillerie du Viaduc
With this Aquavit distilled in Paris, Distillerie du Viaduc pays homage to Scandinavian traditions while asserting a resolutely artisanal and local identity. Inspired by Nordic aquavits, this organic spirit is based on caraway, whose aromatic depth structures the whole. The botanicals used, caraway, dill, fenugreek, and orange peel, are all from organic French agriculture and undergo slow maceration before complete distillation in a traditional still.
Sugar-free, dye-free, and additive-free, this cuvée expresses remarkable purity. The nose is immediately warm, dominated by caraway, balanced by aniseed notes and zesty freshness. On the palate, the attack is round, almost gourmet, followed by a spicy, slightly smoky framework thanks to the fenugreek, and subtly softened by dill. The finish reveals a pleasant orange sweetness, long and refreshing, with a very elegant herbaceous return.
This new generation aquavit can be enjoyed neat or on ice, as a digestif, or as an aperitif, lengthened with a dry tonic or ginger beer. It also perfectly accompanies smoked fish, Nordic savory dishes, or plant-based cuisine with caramelized or earthy notes. Disco (Eau de vie)

Distillerie du Viaduc, a young artisan house from the Paris region, offers us a bold and festive interpretation of wine brandy with Disco. Made from the Muscat Petit Grain grape variety, this unique cuvée reinvents the traditional Peruvian Pisco with a decidedly funky and floral approach.
A vibrant and aromatic eau-de-vie
Produced from Muscat Petit Grain grapes from the island of Samos, vinified by the talented Patrick Bouju, this eau-de-vie benefits from a careful double distillation. Without aging, it expresses all the purity of the fruit and retains a great aromatic intensity. Its profile is at once rich, floral and elegant, with a beautiful roundness in the mouth and a lingering finish.
A captivating nose and a smooth palate
From the first nose, Disco reveals an expressive bouquet with notes of white flowers, white-fleshed fruits and delicate honey. On the palate, it combines finesse and intensity, with a gentle attack, followed by a rise in power marked by a beautiful controlled warmth. The finish, long and aromatic, leaves a delicately sweet and floral imprint.
How to enjoy Disco?
With its 40° alcohol content, this eau-de-vie is ideal as a digestif, served neat to appreciate all its complexity. It is also perfectly suited to mixology, where its floral and fruity aromas will enhance refined cocktails such as a revisited Pisco Sour or an aromatic white Martini.
Mint

With this bottle of Mint, Distillerie du Viaduc offers a novel and ultra-fresh interpretation of mint, far from the sugary clichés of classic liqueurs. Here, no syrup, no artificial flavors, no artifice: only three varieties of French organic mint – peppermint, grapefruit mint, and spearmint – macerated for a long time, then distilled at low temperature in an artisanal still.
This spirit has an alcohol content of 30% vol., yet remains extremely delicate. The distillation process subtly reveals the full range of herbal and menthol notes of the plants without becoming aggressive or overwhelming. The color is clear, crystalline. On the nose, it offers a pure scent of fresh mint, cut grass, and chlorophyll. On the palate, the attack is soft, the texture round, but the freshness is immediate and intense, balanced by a tangy note reminiscent of a green citrus zest. The finish is long, persistent, with an almost medicinal yet elegant freshness.
Sugar-free, this bottle of Mint positions itself between a digestif, a cocktail base, and an ingredient for creative cooking. Crafted exclusively from organic French botanicals and aromatics, this spirit is inspired by the great Mediterranean traditions, but with a fresh, honest, and committed perspective.
Here, no additives, no added sugar, no artificial flavors: only a maceration of green anise seeds, fennel, coriander, and thyme, slowly distilled in a handcrafted still, to obtain a liqueur of great aromatic precision, clear and vibrant. This choice of integral distillation gives Ánizo a pure, fluid, and light texture, while respecting the intensity of the aniseed profile.
The nose is clean, intense yet elegant, with round anise aromas enhanced by a breath of garrigue. On the palate, fennel takes over with sweet and spicy flavors, joined by the citrusy freshness of coriander and the herbaceous power of thyme.
