Vinification : After destemming, the grapes macerate for forty days before fermenting naturally in vats, with malolactic fermentation. The wine is bottled in September 2018, then rests for four months before being marketed. Produced by hand in 20kg crates, it comes from a vineyard managed in an artisanal manner, with a deep respect for the living.
