Vinification : After destemming, alcoholic fermentation takes place in fiber vats, followed by malolactic fermentation in ten-year-old barrels. The wine is aged for twenty-four months, then rests three years in the bottle before being marketed. Produced by hand in 20kg crates, it is the fruit of artisanal work carried out with respect for nature and its balance.
