This book, based on a conversation between two wine specialists, seeks to answer the questions: what is Natural wine, and above all, what isn't it? Preceded by a tongue-in-cheek glossary, the interview is followed by a catalog of natural wines and winemakers classified by region.

Not just a matter of sulfites
The absence of any additives in the vineyard and the winery (notonly added sulfites) is the simple formula that truly defines natural wine. Where do the deviations come from and are they really typical of this type of wine? Since we started talking about natural or natural wine (before the 2000s, we just talked about wine without additives), the term has caused a lot of confusion and misconceptions.
