This conversation paints a portrait, across millennia of history, of an immutable beverage in both its sacred and profane dimensions.

Wines to drink or to keep
Since the beginning, there have always been wines to drink here and now and wines to drink elsewhere and later, wines to quench your thirst and wines to guard. From the Caucasus, the cradle of wine eight thousand years ago, through Egypt, Greece and the European Middle Ages to arrive at our time, the authors tell a history of wine (interspersed of tastings) which leads to a question: what will the wine of tomorrow be?

Created by Apogée in 2018 by wine journalist Pierre Guigui and publisher Antoine Cam, this small-format, softcover collection is dedicated to everything that can be drunk: mainly wine, but also coffee, tea, and all kinds of spirits. The aim is to provide background information to a wide audience.

Apogée was founded in Rennes by André Crenn in 1991 and taken over in 2017 by Antoine Cam. Their general publishing policy bears the imprint of their initial academic vocation: publishing reference works aimed at a wide audience, including those on liquid products such as wine, spirits, and coffee.
