Vinification :
Coming from 60-year-old vines cultivated using organic farming methods (certified since 2019), this reflects rigorous work: Guyot pruning, manual harvesting in 6kg crates, careful hand sorting. Traditional vinification is done with indigenous yeasts, followed by 10 months of aging in oak barrels, 20% of which are new wood. Limited production of 2,500 bottles for a cuvée that is tight and respectful of its terroir.
