This 100% sweet Chenin from century-old vines and named after the estate's mare is not only a tour de force (without sulfur!) but also a top-notch bottle. Amber color, rather clear, nose of candied quince and controlled oxidation. On the palate, nuances of raisin and old pure malt whisky. The initially dry attack gives way to a freshness and sweetness that develop in arpeggios. On the palate, a vibrant balance between opulence and acidity: a great wine that botrytis is still growing. Don't miss out.
