Fabrice Pouillon's most personal single-vineyard wine! But why? It was this Pinot Noir parcel that inspired his "Fabrice Pouillon method": a tirage process using grape must from the harvest to fuel the second fermentation in the bottle, replacing the traditional liqueur de tirage made from refined sugar. This reduces the alcohol content and increases complexity, and most importantly: everything comes from the grape. The vinifications are done with indigenous yeasts, aging on lees, and minimal intervention. All this skilled work makes Chemin du Bois a wine with a full-bodied and structured palate, remarkable saline energy, and notes of ripe fruit, brioche, and sweet spices. A great, vinous gastronomic champagne, which should be decanted at least half an hour in advance to do it justice.

Chemin du Bois 2019 is an iconic single-vineyard cuvée by Fabrice Pouillon, made from an old massal selection of Pinot Noir planted in Mareuil-sur-Aÿ Premier Cru. This plot holds a special place in the domain's history: it inspired Fabrice Pouillon's specific method of secondary fermentation, now used for all of the house's champagnes. The wine develops a complex profile of ripe red fruits, flowers, toasted notes, spices, and a saline touch, with a creamy yet very fresh palate.

The Pinot Noir is vinified in oak barrels, from new to four-wine barrels, with indigenous yeasts and bâtonnage. Secondary fermentation is carried out according to the Fabrice Pouillon Method, without added sugar or sulfur, and the wine then spends approximately 60 months on lees before disgorgement. The dosage is Extra-Brut. A vinous and profound champagne, perfect with roast pigeon, duck, veal with mushrooms, bluefin tuna, or aged cheeses.
