Profil Technique

Vinification : The destemmed grapes macerate briefly (24 hours), then are bled into several vats. Alcoholic fermentation, conducted in stainless steel vats, is deliberately stopped to retain a slight residual sugar and natural gas. Bottled in May 2020 after manual harvesting in 20kg crates, the wine rests for a few months before being marketed.
