S613 owes its name to the 613 clone of Savagnin, one of the clonal selections recognized for this iconic Jura grape variety. A choice that directly echoes the work of Cyril Alonso, a passionate ampelographer—the study and identification of grape varieties—who has been committed for many years to the preservation of varietal diversity.

The grapes come from Domaine Paul Benoit & Fils in Pupillin and are vinified by Cyril without additives, followed by 12 months of aging on fine lees. The Savagnin here is produced in an ouillé (topped-up) style, meaning the vessel is regularly refilled during aging to limit contact with air and prevent the development of an oxidative profile.

This approach preserves a more direct and fresher expression of the grape variety, featuring citrus fruits, white flowers, and yellow fruits, with a taut, precise, and energetic palate. A topped-up Savagnin that highlights the purity of the grape variety as much as the Jura's viticultural heritage.
