A great defender of Aligoté in Burgundy, Sylvain Pataille delivers with this 2023 a particularly fresh and precise expression of the grape variety. Grown around Marsannay and farmed organically, the Aligoté reveals a lively and mineral profile, marked by citrus fruits, white fruits, a touch of ginger and delicate herbaceous notes. The palate is taut and lemony, with enough substance to go beyond a simple aperitif white wine.

As for the entire estate, harvests are manual and winemaking favors minimal intervention. An energetic and mouth-watering Burgundy white, to be served with oysters, grilled fish, seafood, goat cheese or gougères.
