Natural wine, with its minimalist and authentic approach, is attracting more and more enthusiasts. However, it carries a persistent reputation: "It smells like a stable!", "It's undrinkable!" While some natural wines can indeed have surprising aromas, it's crucial to re-establish the truth: no, not all natural wines "stink." And yes, these aromas, when present, have an explanation and are not always synonymous with a defect.
It's a cliché that's time to dispel: the overwhelming majority of natural wines offer a rich and varied aromatic palette, reflecting their terroir and grape variety, and rather classic olfactory characteristics. Proof by example? Smell a chardonnay by Fred Cossard, smell a Cahors from Danis dans la Vigne, slip your nose into a signature Môl from Patrick Bouju, inhale a 2011 Spanish wine from Bodegas Coruña del Conde... We'll spare you a long list, but one thing is certain: whether we're talking about great vintages or small gems, our catalog is full of sweetly scented gems.
🌱 Why? Several factors can explain the presence of atypical aromas in some natural wines. First of all, fermentation, which takes place thanks to indigenous yeasts (naturally present on the grapes), can sometimes produce unexpected aromatic compounds. Then, the absence of oenological inputs (selected yeasts, enzymes, etc.) allows more freedom for the wine to express itself, with its qualities and originality. Finally, some defects (reduction, volatile, etc.) may appear, but they are often temporary and fade with aeration, as with conventional wines.
👅 "Stinky" doesn't mean bad! It's essential to distinguish smell from taste. A wine that smells a bit "stable" or "earthy" can be perfectly balanced, flavorful, and pleasant on the palate. It's a bit like cheese: some aged cheeses give off strong, even "stinky" odors, but are delicious! Natural wine is the same: sometimes you have to look beyond the olfactory aspect to appreciate the complexity and richness of the taste.
Often, all it takes is a little patience and aeration for the unwanted aromas to disappear. Oxygenate the wine, that's the solution! Serve small quantities and swirl your glasses. Decant the bottle. If you have a little time, set the bottle aside for an hour or two before drinking.
You'll see, most of the time, the wine reveals itself in a new light, with fresher and clearer aromas.
