Coming from vines grown on granitic soils, Pinot Noir finds a mineral tension and vibrant freshness here, far from clichés of opulence. The winemaking remains gentle and precise: a one-month maceration to delicately extract color, aromas, and structure, followed by one year of aging in old barrels, without new wood, to preserve the finesse of the fruit.
On the nose, it's a floral and fruity explosion: crunchy cherry, candied red fruits, fresh rose. A fine and expressive aromatic profile that extends to the palate with a beautiful texture, supple but structured. The wine combines a delicate, almost silky touch with fresh and digestible energy. The finish is straight, clean, slightly saline, leaving a persistent floral sensation in the mouth.
YARD is an elegant red, perfect for aperitifs, roasted meats, pigeon with reduced jus, or even a beautiful vegetarian dish with mushrooms. It can be enjoyed now, without decanting, or aged serenely for 5 years. Camille Rouge 2022

With Camille 2022, Jean-Pierre Robinot crafts one of his most profound and elegant cuvées. This natural red wine, made from Pineau d'Aunis grown on flint soils, perfectly embodies the winemaker's touch: a free, inspired, unadorned approach that allows the terroir and grape variety to express themselves without filter. Here, there is no official label, but a rigorous approach: soil work without chemicals, winemaking without exogenous yeasts or enological additives, and a long, patient aging process.
Maceration, which can last from 1 to 8 months depending on the expression of each vintage and each plot, gives this cuvée remarkable aromatic intensity and an extraordinary texture. The 2-year aging in old barrels enhances the whole, bringing patina and depth without ever masking the fruit.
The captivating nose combines ripe red and black fruits, sweet spices, peppery notes, herbaceous touches, and a hint of fine caramel that evokes the slow evolution in the barrel. On the palate, the wine surprises with its tactile lightness, almost airy, despite its concentration. A blend of Chenin and Pineau d'Aunis, this sparkling rosé is made using the ancestral method: natural fermentation interrupted, then resumed in the bottle without any additions. The wine then rests for a long time on laths, in several-wine barrels, to gain texture and complexity. The schist soil provides tension and verticality.
Quince, flowers, and red berries: a chiseled bubble
The nose evokes fresh quince, white flowers, and tart red berries. The palate is ample, very slightly creamy, but lively, with a fine, perfectly integrated bubble. The long aging on laths is felt in the texture and aromatic persistence. A natural sparkling cuvée that combines freshness and sophistication.

Fond Cyprès
Neither quite red nor truly rosé: 1er Jus Domaine is a hybrid cuvée, light and natural, that breaks the mold. Produced by Fond Cyprès, it results from a very gentle pressing of Carignan and Grenache grapes, organically grown on clay-limestone soils in Languedoc, with a deliberately supple, fruity, and spontaneous style.
A natural wine without makeup
Whole bunches are placed in vats for a short and gentle maceration, without destemming. Fermentation occurs with indigenous yeasts, without the addition of sulfites or other winemaking additives. Aging for six months in stainless steel tanks preserves the freshness and juiciness of the fruit.
A light and refreshing profile
On the nose, 1er Jus Domaine captivates with its notes of crisp cherry, fresh raspberry, a touch of tart red fruit, and a hint of fresh almond. The color is clear, between ruby and raspberry. Amoroso Rouge

Amoroso Rouge has nothing in common with traditional, syrupy industrial vermouths. This audacious creation from Distillerie Sentema, nestled in the Alpes-Maritimes, shatters the codes of red vermouth by offering a dry, complex, and vegetal version, entirely rooted in the Provençal terroir.
The base is a succulent and juicy Syrah from Domaine de Garbelle, cultivated in the Var region. This wine is fortified with a local wine spirit, then infused for two weeks with a bouquet of wild plants from the Var garrigue: Barjols absinthe, savory, rosemary, oregano, agastache, as well as bitter orange zest harvested in the Alpes-Maritimes.
The result? A dry, taut vermouth, with no added sugar, driven by structuring bitters, an intense palate, and a savory finish that evokes green olives and sunshine. On the nose, a deep aromatic profile emerges: rosemary, dried herbs, citrus zest. On the palate, the attack is direct, with a perfect balance between the black fruit of the Syrah and the bitter touch of the botanicals. The long, fresh finish, subtly aniseed by the absinthe, evokes a sun-drenched corner of the garrigue.
Ideal as an aperitif, Amoroso Rouge can also elevate a Mediterranean Negroni or be served neat, on the rocks, with an orange twist.
