When sumoll falls in love with cartoixà vermell, we get this delicious natural sparkling white with an old pink color reminiscent of onion skin. A rare and surprising wine, a rich, atypical and voluptuous blend, a superb natural sparkling wine for the table, an aperitif or a party. Full of fruit, freshness and tenderness, even if the years have given it some oxidative notes that bring spices to the whole. Drink chilled (15 °C) and pour directly into the glass where it will open. A Bordeaux or tulip glass would be preferable to a flute; this wine needs movement.
• Ideal serving temperature: 15°
• Let the wine open up in the glass as you taste it
• Pairings: aperitif
