Canoupe Blanc 2022,
Danis dans la vigne
Canoupe is a white wine from Cahors made from organic and natural Colombard grapes, produced in Vin de France by Danis Bessières of Danis dans la vigne. It is a beautiful white from the Southwest of France with very advanced maturity. It is part of the "Esprit du lieu" range of single-plot cuvées vinified by Danis. Its name expresses the vigor and vitality of the estate's Colombards: "plant spears that reach for the sky." At the beginning of summer, the vine rises into vigorous foliage, like a canopy, hence the name Canoupe.
Vinification
Canoupe is not a white wine like the others. This single-plot cuvée was vinified with particular attention to the ripeness of the grapes, which is very advanced. Botrytis plays an important role, particularly in the color, which is sustained despite the direct pressing. A little controlled oxidation is also present.
Tasting
The style of Canoupe is intermediate, between freshness and maturity, with ripe aromas, candied citrus fruits, honeysuckle, spices: cardamom, cinnamon, Christmas spices. The color tends towards orange and the aromas are similar. Candied, jammy, with a touch of oxidation. A complex and powerful wine that is best reserved for the table and gastronomy rather than as an aperitif.

Under the name Danis dans la vigne, Danis Bessières vinifies organic grapes from the family estate, the Domaine de l'Antenet, which was the first organic vineyard in Cahors in the early 1980s.
Organic and natural since 1983
Danis respects the principles established in the vineyard and cellar by his grandfather and then his father: making wines without additives, organic and natural, from the grape varieties of the terroir while respecting the environment. It was in 1983 that his grandfather obtained the organic label Lemaire-Boucher, followed by Nature & Progrès and then the organic labels AB and Eurofeuille. Danis Bessières continues in this vein.
Malbec, but not only
Malbec reigns supreme in the Cadurcian region, but Danis also uses Cabernets, Jurançon Noir, Merlot, and recently created grape varieties, as well as Cabernet Sauvignon, Cabernet Franc, and Colombard as single-varietals. These experiments allow him to moderate the density and opacity of the main grape variety.

Terroir, plots, and grape variety
Senzaniente Cerasuolo 2023 comes from the generous hills of Abruzzo, where Montepulciano expresses itself in its rosé version, known as Cerasuolo. On well-drained clay-limestone soils, this emblematic grape variety gives birth to a fruity and vibrant wine, rooted in Italian peasant tradition. The name "Cerasuolo" – literally "cherry" – already announces the color, a blend of indulgence and freshness.
Cultivation methods
At the Marina Palusci estate, the vines are cultivated using natural farming methods, with total commitment: no chemical inputs, no added sulfites. The wine is born from spontaneous fermentations, without technical intervention, in a pure artisanal approach. It is a free wine, born from living organisms, where nothing is masked, nothing is forced.
Tasting & food pairings
With its intense pink, almost light ruby, color, Senzaniente Cerasuolo 2023 is immediately appealing. The nose evokes crisp red fruits – cherry, strawberry, sour cherry – with a light and joyful touch of tangy candy. On the palate, it is an extremely digestible, juicy, light wine, remarkably drinkable. Its direct and fresh profile makes it wonderful as an aperitif, but also a natural companion for antipasti, Neapolitan pizza, or Japanese raw fish. Hedyos Red 2023
Hedyos is a red wine from the Gaillac terroir (Occitanie), organic and natural, produced by Domaine Bois-Moisset and classified as a Vin de France. A classic Syrah from the South, remarkable for its lightness and drinkability.
Vinification
Hedyos is 100% Syrah, produced without any chemical additives and fermented with indigenous yeasts. The Syrah harvest macerates for two weeks in whole bunches.
Tasting
A spicy lightness characterizes Hedyos, a red wine from Domaine Bois Moisset. The Syrah is fluid, supple, and mineral, with a dominant sweet spice and notes of black olives. It pairs well with Mediterranean dishes, tapenade, bagna cauda or anchoïade, pizzas, and pissaladières.

In the heart of France's oldest vineyard—Gaillac, in the Tarn region—Sylvie Ledran, Philippe Maffre, and their son Hippolyte oversee their Bois-Moisset estate, a wine-growing property associated with mixed crop and livestock farming, all organic. Gaillac is famous for its many ancient indigenous grape varieties, and its wine-growing heritage is uniquely rich.
Cows and Vines
Domaine Bois-Moisset is also home to a herd of old local breed cows, and guest rooms are available during the summer months. It is in this small rural paradise that natural wines typical of their origin and their terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years.
Native grape varieties
The grape varieties are dominated by Syrah and Duras, but the wines of the Bois-Moisset estate reflect the ampelographic richness of the Gaillac region (braucol, prunelart, loin-de-l’œil, mauzac, braucol, ondenc, etc.). The red wines are crisply fruity, concentrated but with smooth and delicate tannins, the whites have character and the pet’ nat’ are particularly tasty.

Within the Fleurie AOP appellation, renowned for its fine and elegant wines, Domaine Bélicard, certified organic (AB, Eurofeuille), produces a cuvée that expresses all the delicacy of Gamay Noir. Produced from 38-year-old vines rooted in granite soils, this 2021 vintage stands out for its freshness and tangy character.
A Fleurie of finesse and freshness
Vinified using the traditional Beaujolais method, with whole-bunch maceration, this wine benefits from gentle extraction, preserving all the purity of the fruit. The 10-month barrel aging brings complexity and elegance, while respecting the natural expression of the terroir.

Domaine Bélicard
Among the ten Beaujolais crus, Fleurie is undoubtedly the most ethereal, the most floral, and Domaine Bélicard offers a natural and elegant interpretation here. This 100% Gamay Noir, organically certified, grows on the granitic slopes of the cru, which give this wine remarkable mineral finesse.
Gentle winemaking for a delicate wine
The grapes, picked at perfect ripeness, undergo a short maceration of a few days to extract just enough matter without harshness. Fermentation occurs naturally, without exogenous yeasts or additives. The six-month aging takes place in barrels that have held several wines (not new), bringing complexity and suppleness without masking the fruit.
A Fleurie of character with finesse
The nose is expressive, featuring fresh red fruits, violet, and a subtle spicy touch. On the palate, the texture is fine, the structure supple yet present, with a mineral tension that lengthens the finish. The style is silky, digestible, almost floral, but without mawkishness – a straightforward, vibrant, and well-balanced Fleurie.

YARD x Bois Moisset Cuvée (exclusive cuvée) Sparkling Rosé 2024
Terroir, plot size and grape varieties
Born from the dialogue between the ancestral terroir of Gaillac and a contemporary vision of winemaking, the YARD x Bois Moisset Sparkling Wine 2024 embodies a luminous encounter between tradition and freshness. The Bois Moisset estate, located in the heart of the Tarn vineyards, passionately cultivates the indigenous grape varieties Braucol and Duras. These varieties, typical of Southwest France, lend their unique character to this rosé: Braucol for its vivacity and aromas of red fruit, and Duras for its finesse and floral notes. The clay-limestone soil, bathed in sunshine and caressed by the breezes of the Tarn River, imparts a beautiful tension and a pure expression of fruit to the grapes.
Cultivation methods
Long committed to sustainable viticulture, Domaine Bois Moisset is certified organic. The vines are cultivated without synthetic inputs, in a living ecosystem where observation takes precedence over intervention. The soils are worked gently, fostering flourishing biodiversity and true harmony between the vine and its environment. This artisanal philosophy naturally extends to the cellar, where winemaking is as gentle as possible. The secondary fermentation, likely natural, gives this cuvée its sparkling, fine bubbles, without ever compromising the purity of the fruit.
Tasting & pairings
Slightly cloudy, by design, this 2024 sparkling rosé displays a delicate, salmon-pink hue. On the nose, an intoxicating bouquet of orange blossom and strawberry unfolds, reminiscent of the sweetness of a spring garden. On the palate, the bubbles are lively yet delicate, supporting a light and refreshing, almost carefree, texture. The overall impression is dry, remarkably drinkable, with a fruity touch that evokes homemade strawberry granita.

Côtes du Rhône Red 2022
This Côtes-du-Rhône from Domaine des Grandes Serres is what its name implies: an organic and natural red wine from the lower Rhône Valley, in the AOC-AOP Côtes-du-Rhône-Villages. It is part of the estate's "Comics" natural series (see label).
Vinification
The Côtes-du-Rhône from Domaine des Grandes Serres is made from 80% Syrah, with 5% of each of the following grape varieties: Grenache, Mourvèdre, and Cinsault, all grown on limestone and sandstone soils. The harvest is manual, the grapes are destemmed and macerated on the skins for three weeks. After pressing, the wine rests for eight months in stainless steel vats.

Domaine des Grandes Serres, created in 1977 with respect for the environment and the terroir, represents the excellence and vitality, in organic and natural mode, of the prestigious Châteauneuf-du-Pape appellation, where it covers 12 hectares. To make his estate and merchant wines, he harvests, buys grapes, vinifies, and ages them over a wide area, centered around Châteauneuf and the southern Côtes-du-Rhône, extending to areas such as Lirac and the Costières de Nîmes.
An organic commitment without ostentation
A large portion of the Domaine des Grandes Serres vintages are organic and without added sulfites, although the estate does not publicly boast about it. Modestly, Samuel Montgermont, the estate's general manager, explains that the geological and climatic conditions, particularly the mistral wind, promote the health of the vineyard and allow for the elimination of inputs. While the labels don't take themselves seriously, the wines are solid, fresh, and flavorful.

Les Souriants present a single-plot interpretation of Pinot Noir with their Cuvée YARD Champs Élysées 2022, sourced from a unique granite terroir in Beaujolais. This natural wine, certified organic, explores the finesse and depth of this grape variety, often underestimated in the region, yet finding superb resonance in these poor, mineral soils.
The Champs Élysées plot benefits from an ideal exposure and a light granite soil that forces the vines to root deeply, concentrating the aromas in small berries brimming with energy. The winemaking process remains true to the estate's philosophy: one month of maceration, gentle extraction, fermentation with indigenous yeasts, and one year of aging in old barrels to respect the identity of the place.
In the glass, the wine offers a pure and charming nose: black cherry, candied red fruits, faded rose, with a subtle vegetal touch reminiscent of ripe stems. On the palate, the texture is fine, linear, fresh, almost crystalline. The Pinot Noir expresses itself in an elegant, slender version, with a light tannic structure and a floral and mineral finish.
YARD Champs Élysées is a gastronomic red, ideal with roasted meats, farm-raised chicken with chanterelles, or elaborate vegetarian dishes. It can be enjoyed now without decanting, or can evolve harmoniously over 5 years. Serve it lightly chilled, between 16 and 18°C, to reveal its full complexity.

Created exclusively for Culinaries, this cuvée is the result of a meticulous blend of several batches of Malbec, aged separately. A portion of the wine is aged in concrete vats to preserve the fruit's vibrancy and the grape variety's natural freshness, while another spends a year in barrels that have already held several wines, adding complexity and depth without masking the character of the terroir.
The result is a Cahors that is both precise and approachable, where aromas of ripe red fruits mingle with delicate smoky, herbaceous, and floral notes of violet. The palate is round, balanced, and supported by a beautiful freshness that prolongs the tasting experience.
