Ginnungagap Blanc 2015, La Sorga
Made from Colombard and Sauvignon from the Hérault Valley, whose vines grow on basalt sands, this wine is a blend of direct pressing, maceration, and a little flotation (clarified must). It is aged in vats for eleven months. Its lemon and boxwood aromas will pair well with hard cheeses such as aged Parmesan, Beaufort, or mature Comté. Aging potential: ten years.
