To vinify this blend of Petit Manseng (65%), Gros Manseng, Chardonnay, Vermentino and Viognier from the Terrasses du Larzac, the grapes macerate in whole bunches for twenty-eight days with punching down, then are de-racked. The wine is aged under a veil for eighteen months in old barrels. Its notes of white pepper, citrus and bergamot will accompany aged cheeses or foie gras. Aging potential: ten years.
Natural wine with no added sulfites.
