For this blend of Mauzac and Sauvignon, the grapes are directly pressed, vinified, and the wine is aged in vats for a year. Its notes of white fruits, pear, and tangy apple will go well with firm-fleshed fish (John Dory, turbot, sole) or a sheep's milk cheese. Aging potential: ten years.
Natural wine with no added sulfites.

Pairs with: Hard cheeses, Cooked fish, Grilled fish

“I love old vineyards, which is why I work a lot on small plots planted with old grape varieties.”
