Magnum CV Cartoixa Ancestral Blanc 2016, Partida Creus
Cartoixá vermell is another name for xarel·lo rosado, a traditional Catalan rosé grape variety brought up to date by Massimo and Antonella. This natural sparkling wine with an amber salmon color is obtained using the ancestral method, that is, by refermentation in bottles and aging for ten months on lees. The harvest is done by hand and pressed directly; the must ferments in stainless steel vats with indigenous yeasts and a temperature control between 15 and 18 °C. Dry and fruity, fragrant and aromatic, it evokes ripe white fruits and white flowers on the nose. Very lively and fresh on the palate. Serve it as an aperitif; it can then accompany you until dessert.
