Château Bonnet Eden Red 2021
Les Vignobles Andre Lurton
We first discover a beautiful, deep, vermillion color, a lovely cherry red with some purple highlights that will fade as the wine ages. The nose of this Eden cuvée offers notes of peony and crisp red fruit (cherry, morello cherry) enhanced with a touch of pepper. On the palate, the wine attacks frankly, with plenty of fruit and freshness. The tannic structure is medium, and the tannins are well-integrated. There is a very nice volume on the mid-palate. The olfactory sensation of crisp, juicy cherry is confirmed on the palate. This is a very indulgent, digestible, and very easy-drinking wine, where the fruity notes express themselves freely, with the fullness of the unsulfured wine. It will be appreciated as an aperitif and on any other occasion, but we see it especially at the table, with dishes that are not too sophisticated, dishes of good humor - beautiful grilled red meats, golden duck breasts, country salads: with confit duck gizzards, lentils... The digestibility of wines is a concept that is increasingly close to our hearts; red Bordeaux have long held the torch and we invite you to experience it with this lovely red Entre-Deux-Mers. Château Bonnet cuvée Eden is produced, for the cultivation and vinification, in biocontrol (set of plant protection methods based on the use of natural mechanisms). It is vinified in concrete eggs and classified as Vin de France. No sulfite has been added, either in the vineyard or in the cellar.

Lurton is a name that resonates strongly throughout the Bordeaux region: this dynasty of winegrowers, currently represented in France by around ten owners of wine châteaux and a company (Les Vignobles André Lurton) bringing together several estates, has distinguished itself at the head of prestigious properties including several classified growths, from Château-Cheval-Blanc to Château-d'Yquem via Château-Climens... Château Bonnet is the cradle of the Lurton dynasty, planted at the end of the 19th century by the liqueur maker Léonce Récapet, a visionary of viticulture who passed on the virus to most of his descendants. This beautiful estate in the Entre-Deux-Mers has one hundred and twenty hectares of vines. It is traditionally planted with Cabernet Sauvignon, Merlot, Sauvignon Blanc and Sémillon, and produces white, rosé and red wines. Under the leadership of its new director Mathilde Bazin de Caix and on selected plots, it has recently taken over the management of biocontrol viticulture and vinification, as well as natural wine without chemical or exogenous inputs added to the vineyard or the cellar. For the moment, this is the only Eden vintage, but we hope to produce others in the near future.
Le Litre Arbitre White 2020,
Le Litre Arbitre, a dry white wine with a strong aroma of white fruit and lemon, is deliciously mineral and lively, perfect for all occasions and also a joy to drink on its own. It's so perfect for gatherings with good friends that Château Lafitte decided to pour it directly into a one-liter bottle. The beverage is obtained by directly pressing different grape varieties from a very old, planted plot whose birth date is unknown. The blend includes the classic Petit Manseng and Gros Manseng grapes from the Jurançon terroir. The harvest is done among friends, the viticulture and winemaking (100% biodynamic) are done without the slightest addition of chemicals or sulfites. Fruity as desired, designed for the most intense conviviality, and not even a pinhead of added sulfites. This wine will keep for a very long time if given the chance.

Château Lafitte is located in Béarn, on the noble terroir of Jurançon, the origin of superb sweet wines and dry wines that have nothing to envy. Since the 14th century, Monein, the commune where the estate is located, has been nestled in an exceptional natural, rich and hilly environment. In the 16th century, vines already occupied a significant part of the property, and they have persisted to this day. Philippe and Brigitte Arraou, the current owners, have undertaken to revive viticulture on the site, assisted since 2012 by their son Antoine, a winemaker as passionate as his parents. Château Lafitte is now managed biodynamically and with agroforestry: five hectares of marl-limestone soils typical of the appellation, on a hilly terrain that can become very cold in winter. The king grape varieties of Jurançon, Petit Manseng and Gros Manseng, represent the majority of the grape varieties. Also typical of Jurançon and the Pyrénées-Atlantiques in general, viticulture en hautains, that is to say raised and trained very high, is practiced. As it was in many primitive vineyards, some of which are still active (Portugal, Spain, Georgia, etc.). On this beautiful estate, winemaking experiments are legion: aging in terracotta jars for dry wines, solera for sweet wines in untopped barrels, photovoltaic roofs for the cellar, rainwater harvesting, gravity-fed vinification. Château Lafitte produces sweet Jurançons as well as still dry wines and a very successful natural sparkling wine, Funambule.

Belly Wine Experiment
Fresh, fruity, lively, and supple, Atelier 3 is officially a red, or at least that's how it's classified by customs because the blend contains white wine. Unofficially, it's a rosé, made from a direct press of underripe Gamay grapes and a few bits of Syrah and hybrid grape varieties. The whole is blended with carbonic maceration juice from Gamay and Riesling must. No chemical additives are used, either in the vineyard or in the winery. Classified as a Vin de France and with an alcohol content of 12.4%, this wine is a cocktail of grape varieties for a brilliantly lively result, perfect as an aperitif and when you need to wake up a sleeping atmosphere. A wine to wake the dead, as they say on such occasions.

Founded and run by Claire Sage and Aimé Duveau, located in Chanteuges (Haute-Loire), Belly Wine Experiment is as much an experiment as a winemaking business. The creative duo has it in spades: Claire is the sister of Adrien Sage, a fan of underwater wine aging but above all an importer of Catalan wines. Hence the presence of Catalan grape varieties in Belly Wine Experiment's blends, alongside Burgundy, Auvergne, and Jura grape varieties, readily found in the same bottle. Aimé is the son of Manu Duveau, a poet-winemaker from Auvergne, a former stonemason, and a great winemaker of local Gamays at his Domaine de l'Égrappille. The unique feature of Belly Wine Experiment is the exoticism (in the literal sense) of the blends, with Xarel lo from Catalonia, for example, blending naturally with Gamay from Puy-de-Dôme. The wines are made using semi-carbonic maceration, without the addition of chemical additives or excessive manipulation in the cellar. The winery is also known for its high-quality, vinous perries.

A bright and intense ruby color, a nose of small red fruits with a dominant cherry, this is a remarkable Saint-Romain from the Sous la Velle plot. The palate is lively, fleshy, and fruity, marked by some notes of sweet and peppery spices. The tannins are vigorous, yet fine and silky. The Saint-Romain appellation is located at altitude, on steep terrain. It is ideal for producing lively, lively, mineral, and very flavorful wines. Entirely Pinot Noir, this wine comes from a plot whose sloping terroir, facing south-southeast, is located between 280 and 400 meters above sea level. The soils are mainly marl, limestone, and clay. The grapes macerate in whole bunches. Aging is approximately one year in barrels.

Through his entirely natural work, Frédéric Cossard gives voice to the terroirs and Burgundy wines, undeformed by agricultural chemicals. Having observed, during his years of trading, the existence of harmful viticultural practices, the winemaker used this counter-example to practice unadulterated viticulture. Thus, he produces vintages of purity and elegance without artifice that are among the most sought-after in Burgundy. Frédéric worked as a wine broker for some time before creating the Domaine de Chassorney with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne Hautes Côtes de Beaune and Bourgogne appellations. In 2006, he created his own wine trading house and buys organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais crus. The practice is not limited to Burgundy since vintages are made from grapes purchased in the Jura or Languedoc. At his home, the soil and vines are worked as naturally as possible: regular horse-drawn ploughing, no addition of chemical fertilizers or weedkillers. The vines are cared for according to biodynamic principles: homeopathic treatments based on essential oils, copper and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. Reds or whites, classic Burgundies or more atypical or less "regional" bottles, Frédéric's vintages are rare and sought-after wines, which sometimes require waiting.
French Single Malt Whisky Coperies
Coperies is a 100% French single malt whisky from a single distillery, the venerable Merlet & Fils distillery, in Charente-Maritime. It bears the mark of its region even in its name: "copieries" is a very old word meaning "harvest" in old Charente. This appellation refers to the French identity of this beverage—all the ingredients of which are French—but also, beyond that, to its specifically Charente roots. The barley from which it is made is grown, malted, and brewed in France before being distilled and aged at the Merlet & Fils distillery. Son.
Its development is the fruit of centuries-old expertise, used for the production of the most prestigious wine spirits and applied here to cereals. The first step is double-pass distillation, in Charentais copper stills, which produces round and elegant malt spirits. The aging takes place in French oak barrels, maintaining a balance between new and old barrels in order to modulate the contribution of wood and toasting: this produces subtle spicy notes and silky tannins. The whisky is surprising, remarkable for the sweetness and roundness of its accents. It is floral, fruity, and of unparalleled finesse. The nose first reveals a very discreet vanilla and a light touch of caramel. On the palate, it is the smooth and fluid texture that surprises, all in suppleness: no alcoholic burn hinders the sweet, aromatic, and delicately spiced notes of this whisky. The purity of single malt is very apparent. It will be wonderful neat, with an ice cube that will bring out its tenderness, and can also lend itself to the preparation of cocktails. It is, we specify, an excellent way to enter the world of whisky for those who are not used to this beverage: it will not be aggressive and will provide them with a gentle initiation.
Es d'aqui Danslezetoiles Red 2016
This blend of Braucol, Carignan, and Muscat grown on clay-limestone soils was vinified in amphorae. Notes of candied black fruit and leather complement the fruity and herbaceous notes, much to the delight of natural wine enthusiasts. Plenty of aromatic presence, character, and originality.
Rye whiskey, The Helsinki Distilling Co.
You don't need to live in Kentucky to make a good rye whiskey: the three makers of the Helsinki Distilling Company—two Finns, one Irish—do it very well. Rye is, in Finnish tradition, a symbol of power and vitality; it was therefore only natural that they pay homage to it. This three-year-aged whiskey (47.5%, 70% Finnish rye, 30% Finnish barley) is a pure masterpiece, straightforward and controlled, with a nose of toasted rye, honey, and dark chocolate. Rich and deep on the palate, it offers notes of caramel, licorice, and spices, with a hint of coffee. A big favorite of the Culinaries team.

Here's a great organic and natural vermouth from Partida Creus, an Iberian classic from Baix-Penedés (Catalonia). Made without additives or sulfites, MUZ Ver-Mut is a fortified sweet wine with plant maceration. SP Subirat Parent White 2021
SP Subirat Parent, classified as Vino de Mesa (table wine), is, as its name suggests, made 100% from the native Catalan grape variety Subirat Parent. It is crisp and aromatic, with a nose of ripe white fruits, melon, and wildflowers. Agile on the palate, fresh and straightforward, lemony and slightly saline, it offers a long finish tinged with a delicate bitterness typical of the estate. Subirat Parent, one of the oldest Catalan grape varieties and a close relative of Malvasia, remains rare even in its country of origin. The clay-limestone soil enhances its freshness and integrity. The harvest is pressed after a three-day skin maceration. The must is settled and fermented with indigenous yeasts in stainless steel vats. It rests for three months in vats on fine lees before bottling.

Cyclic Beer Farm
Matinada is a dark sour (a dark, dense brown beer) heavily infused with coffee and orange. The coffee is a Colombian chambaku distributed by Nømad Coffee, and the flavoring is complemented by the zest and juice of organic oranges harvested at the family estate in Alt Empordà (Catalonia), as well as Madagascar vanilla pods, a touch of sea salt, and a touch of Palisade Hops. This vintage exhibits pronounced dryness and acidity, with very intense coffee aromas. Matinada is 5.6% ABV.

Cyclic Beer Farm is a duo of Barcelona friends, Alberto and Joshua. Based in the Catalan capital, they have two sides to their business: beer (Cyclic Beer) and wine (Cyclic Wine). The beers, inspired by the Belgian model, come in surprising and colorful ranges where expertly measured yeast cocktails and house brews combine with varied macerations of fruits, vegetables, herbs, and grape marc from traditional Catalan varieties, the latter taken after the fermentation of their wines — because the second side is the wine, made exclusively from native Catalan grape varieties. Packaged in 75 cl bottles so that everyone can satisfy their thirst, the beers play between classicism and flights of inspiration, in a contrasting and creative way, Catalan style, without forgetting to dare the beer with wine, of course. On classic bases and a Belgian fermentation model, the two brewers-winemakers Joshua and Alberto play with ingredients, aromas, macerations, between cereals, fruits, vegetables or grape skins of Catalan grape varieties, to achieve flavors that are reminiscent of the Obni (unidentified drinkable object). VNR Vinel lo Ancestral Sparkling Red 2019
Partida Creus
The beautiful light ruby color of VN Vinel lo Ancestral is already tempting, and its low alcohol content (10.5%) is ideal for long aperitifs and large, chilled meals. Sparkling, fruity, and very fresh, with floral and yeasty notes, and a very long finish. Easy to drink, gurgling but with great distinction, VN Vinel·lo Ancestral is a natural sparkling red resulting from a rich and abundant blend of indigenous grape varieties: first Sumoll and Trepat in dominance, followed by Se Samsó (Cinsault), Garrut (Mourvèdre), Ull de Perdiu, Queixal de Llop and Grenache Noir, harvested on predominantly limestone soils. The blend is subject to variation depending on the vintage. After crushing, the musts of the different grape varieties ferment one after the other and are added gradually, thus prolonging the fermentation by indigenous yeasts. The fermentation finishes in the bottle, for ten months, on fine lees. No filtration, no additives, no added sulfites.

SK Muscat d'Alexandrie Blanc 2020,

Deliciously fragrant, fresh, and incredibly aromatic, SK Muscat d'Alexandrie is a sumptuous dry white wine with a hint of orange, a color due to well-controlled maceration. The lack of filtration gives it a slightly cloudy appearance. The nose opens frankly with a whiff of marzipan, a sensation confirmed in the mouth with complex notes: apricot, honeysuckle, pear, lychee, white guava, mango, passion fruit, flowering meadow, abundant freshness and crispness, all balanced by a slight herbaceous touch reminiscent of cucumber and fresh white peach, and an earthy side reminiscent of fresh walnut. In short, SK Muscat d'Alexandrie offers all the aromas of a grape variety that generally promises much, and even more. A long, satiny finish. The grapes are fermented using indigenous yeasts in stainless steel vats, and aged for nine months in the same type of container. This wine will go very well with raw, grilled, or sauced fish, spicy dishes such as fish or poultry curries, Middle Eastern, Indian, and Sichuan cuisine, but we'll stop the list of pairings there given the adaptability of this exceptional wine.

Nuria Muscat of Alexandria White 2018
This winery is located in Sitges, Catalonia, in the heart of the Garraf Natural Park. Manel Avinyo and his brother Joan took over the family estate, which Manel renamed Clos Lentiscus. Even though Barcelona is only a half-hour drive away, the beauty of the landscape is striking and the immersion in nature is complete: Mediterranean forests rub shoulders with Catalan scrubland (thyme, rosemary, rockrose, and the mastic tree, which gave the estate its name, etc.). The Penedès region also has a long winemaking history. Nestled in its gentle hills is Clos Lentiscus, in the Penedés appellation, on twenty hectares of sandy and clay-limestone soils facing due south at an altitude of 225 meters. According to historical documents, the family of Manel and Joan Avinyo has been established there since at least the 14th century. For a long time, the grapes were sold to local cooperatives, but since the two brothers took over the estate, organic and biodynamic farming has replaced conventional practices, the entire harvest goes into the house vintages, and organic and biodynamic practices have allowed this beautiful property to reconnect with its former prestige: in the 19th century, its wines were sold in France and as far away as the Americas. Very quickly, Manel received a nickname: The Bubbleman, a tribute to his talent for vinifying cavas, these sparkling whites characteristic of the northeast of the Iberian Peninsula, from native varieties for which Catalonia holds the secret: sumoll, ull de llebre, xarel·lo, malvasia of Sitges, cartoixà vermell, cariñena (carignan), accompanied by tempranillo and muscat of Alexandria. The vines are old, sometimes centuries old. No synthetic additives are used in the vineyard, and operations such as planting, pruning, de-budding and harvesting are dictated by the lunar phases. Pollination is facilitated by the presence of beehives; sheep contribute to fertilization and control of the plant cover. Ringo, the white horse, is responsible for working the soil.
Elegance, purity and a crisp minerality due to limestone characterize the productions of Clos Lentiscus. The note of controlled oxidation, when it is felt, does not dominate the tasting and the wines are never deviant. Cavas are known for being exuberant, but those of Clos Lentiscus never have more than two grams of residual sugar per liter. The estate also produces still wines, red, white and rosé.
Núria is the name of Manel's daughter, who assisted her father in the creation of this beautiful aperitif wine that will be a marvel with all Mediterranean cuisines. 100% Muscat of Alexandria, a sweet, large-berry grape, this is a fresh and aromatic sparkling white wine from direct pressing. The first fermentation using indigenous yeasts takes place in 55-liter demijohns and the second fermentation takes place in bottles. Twenty-four months of aging on fine lees and manual disgorgement.

This organic rosé produced under the IGP Terre Siciliane label is made from Nerello Mascalese, Malvasia, Moscadella, and Insolia grapes grown on basalt soils in the biodiverse plots of Frank Cornelissen's vineyard. Its beautiful, bright strawberry color already makes it very seductive; the freshness that emerges on the nose and palate confirms this. Plenty of fruit and a slight bitterness make for this highly sought-after, enjoyable wine.

BCDC (the initials of the winery) is a 100% Tempranillo from vines planted at an altitude of over 1,000 meters. From the vineyard to the winery, all work is artisanal and carried out with respect for nature. The harvest is destemmed and macerated for 30 days in vats. Both alcoholic and malolactic fermentation take place in vats, and the wine is then aged for five months in old 500-liter French oak barrels. This 2018 was bottled in May 2020 and, as is Spanish practice, was left to rest for a few months before release. It is a full-bodied, dark, dense red that is full of personality and pairs well with red meats and grilled meats.

Magma Red 2016
Frank Cornelissen's grand cru is, as expected, a wine for aging. It reveals the remarkable depth of the Nerello Mascalese grape variety, grown on the Barbabecchi plot, planted with ungrafted, pre-phylloxera vines, over a hundred years old, at an altitude of 910 meters on the slopes of Mount Etna. Skin maceration takes place for sixty days on destemmed and lightly crushed grapes. No fining, no sulfites, and light filtration before bottling. With a very dense texture, this red is more mineral than fruity (the fruit notes are candied: blackberry, prune, all roundness and melted tannins). Its depth and power are balanced by great freshness. Possibility of traces of volatile acidity, quickly vanished with decanting.
