Where?

Frédéric Cossard is Burgundy in its natural version, which isn't all that common. It's also two entities: the Domaine de Chassorney, which he cultivates, and SARL Frédéric Cossard, where he vinifies grapes from the most prestigious Burgundy climates.

The son of a dairy farmer, Frédéric developed a passion for wine at an early age. He worked as a wine broker for a while before creating the Domaine de Chassorney with his partner Laure in 1996: initially a few acres of vines in Saint-Romain, Auxey-Duresses, and Savigny-les-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes Côtes de Beaune, and Bourgogne appellations. In 2006, Frédéric founded the winery and purchased organic grapes to vinify, according to his style and convictions, grands crus such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée, as well as several Beaujolais crus. The practice is not limited to Burgundy, as cuvées are also made from grapes purchased in the Jura and Languedoc regions.

Terroir and Soils

Between the estate's plots, located in the Côte de Beaune, and the grapes purchased through the winery, it would be difficult to detail the soils from which Frédéric Cossard's wines are produced. At most, one can recall the highly varied nature of the great limestone, clay-limestone, and marl-limestone terroirs of the Côte de Nuits and the Côte de Beaune, to which must be added the granite soils of Beaujolais.

Plots and Grape Varieties

At the estate, the grape varieties are classic Burgundian: Pinot Noir for red, Chardonnay for white. The average age of the vines is forty years. For the Burgundy cuvées outside the estate, Aligoté and Chardonnay for white, and Gamay for Beaujolais. For non-Burgundy vintages, Savagnin from the Jura, Bourboulenc, Grenache Blanc, and Muscat from the Languedoc.

Growing Methods

The soil and vines are cultivated as naturally as possible: regular plowing by horse, with no addition of chemical fertilizers or weedkillers. The vines are tended according to biodynamic principles: homeopathic treatments based on essential oils, copper, and sulfur in minimal doses. Harvesting is entirely manual, carried out at full maturity, at the end of October.

Vinification

The winery is free of exogenous yeasts, temperature control, and sulfur during bottling. For the reds, prefermentary maceration lasts between three and nine days, alcoholic fermentation takes place with the stems for five to six weeks, and malolactic fermentation is already complete when the wines are racked (a distinctive feature of sulfur-free wines). The wines are aged in oak barrels for twelve to fifteen months. For the whites, after pressing, the musts cold-ferment for two weeks before fermentation in barrels for approximately eight months. Filtration is done by gravity before bottling. The purchased grapes are cultivated according to strict specifications agreed upon with the winegrowers.

The Wines

Through his entirely natural and highly demanding work, Frédéric Cossard gives voice to the terroir and Burgundy wines, undistorted by agricultural chemicals. Having observed, during his years of trading, the existence of harmful viticultural practices, the winemaker used this counter-example to practice unadulterated viticulture. Thus, he produces vintages of purity and elegance without artifice that are among the most sought-after in Burgundy. His red wines, made from grapes harvested at perfect maturity, are lively, joyful and aromatic. The whites tend to deviate from the regional classicism to offer notes of maceration and controlled oxidation. These are rare and coveted wines, which must be waited for.
