The Domaine du Temps is located in Cabardès, a small region of Languedoc that was once a subdivision of Cathar Country. Stretching from the southern slope of the Montagne Noire to the city of Carcassonne, it is bordered to the west by the Lauragais and to the east by the Minervois. Hilly, wild, and rich in Mediterranean flora, it is a preserved ecosystem, especially since the Domaine du Temps, in the Font Juvénal area, is a magical place: around a former 18th-century priory, sixty hectares of forests and scrubland protect thirteen hectares of vineyards on stony clay-limestone soils. The balance between dryness and coolness is a boon for viticulture, with a wide range of grape varieties. In addition to the Languedoc grape varieties (Syrah, Grenache, Roussanne, Viognier, Muscat), Cabernet Sauvignon, Cabernet Franc, Merlot, Sémillon, and Chenin are grown. The estate has been Ecocert certified since 1998, is entirely managed biodynamically, and has been dedicated to natural wine since 2015. The work in the vineyard and cellar is methodical, rigorous, and attentive: only the best grapes are kept, resulting in small yields, and destemming is determined based on the ripeness of the bunch. The reds are vinified using carbonic maceration of individual grape varieties, with the blending taking place before the year's aging. The whites are slowly and gently pressed to extract only the best from the grapes. These precautions produce smooth, controlled wines of great integrity, with very supple tannins. They are fresh, delicious, and expressive.
Farmhouse Cider 2017,
Florian Bourrienne makes ciders for aging, intended to evolve over the years, and this sets him apart from most other producers. His orchard is located in the heart of Calvados, in the Pays d'Auge, but outside the AOC (Protected Designation of Origin) in order to preserve the freedom and uniqueness of his ciders. We can, without hesitation, call it natural cider, because the cider maker goes beyond organic to respect the traditional production method, which is delicate, patient, and requires a tremendous amount of work. From his fifteen-hectare orchard planted with tall stems, he produces ciders for aging, excellent to drink in their youth but sumptuous after several years. The blend is carefully measured according to the characteristics of each vintage. The fruit production is entirely organic and the fermentation processes—there are two for traditional cider—are slow and patient, so that the cider is made the right way, using natural yeasts. These are preserved in the cider thanks to a light filtration that respects all the living elements capable of polishing the taste and aromas, but also facilitates the formation of foam, which must be just right: neither too strong nor too weak. It's difficult to manage, but the result is well worth it. These are mastered ciders, eminently delicious, marked by an extraordinary sweetness and roundness of apple. Over time, they acquire notes of acidity and astringency that gracefully reinforce their beautiful aromatic palette. These are ciders of taste and pleasure, as delicious at the table as they are as an aperitif.
Obviously more evolved than the 2018, this 2017 vintage has a more sustained acidity in an overall still very marked by sweetness. Round, full-bodied, slightly astringent, it is approaching adulthood and you can drink it now or keep it for three to five years. The apple flavor is enhanced with a remarkable freshness. A sunny cider that puts you in a good mood.

Kuku Yodel White 2018
A dry white wine, Kuku Yodel reveals great finesse, freshness, and fruit on the nose. On the palate, the attack reminds some of an unfiltered white beer, others of a tropical lemonade. This wine is pleasant, fruity, floral, refreshing, and very fragrant. It evokes fruits such as peach, apricot, mandarin, lemon, lychee, passion fruit, and rhubarb, with a milky, yeasty finish, with the rich aroma of a summer meadow. It is made from Muscat of Alexandria, either as a single varietal or with a small proportion of Terret Bourret and Grenache Gris depending on the vintage. Kuku Yodel is a macerated white wine made from Muscat of Alexandria vines growing on the schist and clay-limestone soils of the high slopes of Hérault. The destemmed grapes macerate for forty-five days in vats, then the wine is aged for one year. Before bottling, it is neither filtered nor clarified, and no sulfites are added during the vinification process. Kuku Yodel should be drunk very chilled and can be kept for around ten years.

Anthony Tortul loves old vineyards: he devotes his life to finding and vinifying them. Just as there are landless shepherds, he can be defined as a landless winemaker, in other words a wine merchant whose area of activity extends throughout Languedoc and, eastward, as far as Châteauneuf-du-Pape, in search of the best terroirs. Born in Foix, with six years of experience as a wine technician and oenologist in various vineyards in the south of France, he created La Sorga in 2008. His enthusiasm leads him on a path filled with favorites, and each of these favorites is a vineyard. The result is a dizzying mosaic of natural, lively, and spirited wines, which reinvents itself each year with around thirty cuvées per vintage. Few winemakers can include such a variety of grape varieties: the entire south of France is represented, with muscats, grenaches, picpoul, mauzac, carignan, cinsault, marsanne, alicante, braucol, duras, viognier, len-de-l'el, and tutti quanti.

Harvested in the cool of the morning on a fruity day, the grapes are pressed directly, thus preserving their brightness and freshness. Fermentation takes place spontaneously with indigenous yeasts, in a subtle balance between new Stockinger barrels (for Clairette and Marsanne, 50%) and stainless steel vats (for Grenache Blanc, 50%). Careful aging with light stirring gives the wine a full texture, without filtration, allowing natural sedimentation of the lees in the cold.

Champagne Fleur d'Etoile Extra-Brut White non-vintage,
Fleur d'étoile is a zero-dosage extra-brut vinified without sulfur. Alcoholic fermentation takes place in 228-liter Burgundy barrels and aging is 99 months on slats. The result is a ripe and distinguished champagne, a textured wine with a brilliant color with golden yellow highlights, very emblematic of the Aube terroir. The nose, clean and aromatic, offers floral and vinous aromas. The attack on the palate confirms the balance, the mid-palate is characterized by freshness and acidity, and the finish offers aromas of citron peel with a nice bitterness. Four generations of winemakers have succeeded one another at the head of Maison Fleury, a pioneer of biodynamics and natural wine in Champagne. Organic farming has been practiced for around thirty years with Demeter and Biodyvin certifications, and the vines have not seen any herbicides for fifty years. Fleury stands out for its organic and natural vintages, typical of the Côte des Bar, where Pinot Noir dominates, the main grape variety in this Fleur d'étoile vintage, with a touch of Chardonnay. The vines grow mainly on Kimmeridgian limestone, with a few plots on calcareous marl.

Through his entirely natural work, Frédéric Cossard gives voice to the terroirs and Burgundy wines, undistorted by agricultural chemicals. Having observed, during his years as a wine merchant, the existence of harmful viticultural practices, the winemaker used this counterexample to practice unadulterated viticulture. Thus, he produces vintages of purity and elegance without artifice that are among the most sought-after in Burgundy. Frédéric worked for a while as a wine broker before creating the Chassorney estate with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne Hautes Côtes de Beaune and Bourgogne appellations. In 2006, he created his own trading house and buys organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais crus. The exercise is not limited to Burgundy, as vintages are made from grapes purchased in the Jura or Languedoc regions. At his place, the work of the soil and the vines is done as naturally as possible: regular ploughing by horse, no addition of chemical fertilizers or weedkillers. The vines are cared for according to the principles of biodynamics: homeopathic treatments based on essential oils, copper and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. Reds or whites, classic Burgundies or more atypical or less "regional" bottles, Frédéric's vintages are rare and sought-after wines, which sometimes require waiting.

I Vicini Moscato Blanc 2020

I Vicini Moscato is a Muscat d'Asti vinified dry; it therefore offers the aromatic and musky nose specific to the grape variety, but without the syrupy side that is sometimes associated with it, as a very present tannic structure balances the whole. On the palate, it is rich and powerful; we find the charming aroma of Muscat in the retro-olfaction, but with the tension and freshness that the winemaker favors for his dry whites. It is a table wine, with power and presence: not really for an aperitif, but for gastronomy, no limits.
Jean-Yves Péron's "I Vicini" series is made from grapes harvested in Piedmont; for I Vicini Moscato, we are dealing with the famous muscats of the terroirs of Asti. They grow on very fine limestone soils, calcareous-magnesian, and the Asti site benefits from a cold air current that brings increased freshness compared to the rest of the region. The harvest, manual, is carried out on grapes at a fairly advanced phenolic maturity. Maceration is long, with three months of punching down, after which everything is racked in January, pressed and sent directly into 300-liter barrels (new barrels, one-wine barrels and two-wine barrels) for a year of aging. No filtration, no addition of sulfites. Straightness, tension, and freshness: a very fine mountain Muscat.

Jean-Yves Péron embodies the natural renaissance of the beautiful Savoyard vineyard, which has long suffered from a somewhat flimsy image, not taken seriously enough. Yet, what treasures its varied soils and numerous ancient grape varieties produce!
Near Conflans, in Albertville (Savoie), Jean-Yves Péron skillfully combines committed viticulture and merchant winemaking, both under the banner of nature and organic high-altitude vines. Initially destined for a career in biochemistry, he quickly became drawn to the vine and trained as an oenologist in Bordeaux. He learned his trade as a winemaker with Thierry Allemand in Cornas, then with Bruno Schueller in Alsace, before spending some time in New Zealand and the United States. Jean-Yves's current vineyard, one and a half hectares of which have been biodynamic since the beginning, is divided between Conflans, near Albertville, and Fréterive, a little further down in the Isère Valley. Composed of micro-plots of vines, it is staggered between 350 m and 550 m above sea level and is worked entirely by hand. His trading activity, which he began in 2011, allows him to buy the harvest from organic winegrowers close to him (such as Raphaël Marin and Adrien Dacquin). Also, the construction of a new winery in 2017 allows him to increase production and collaborate with winegrowers from Northern Italy: Paolo Angelino in Casale Monferrato (Turin), Giorgio Barbero in Asti. This is a new dimension given to his work as a winemaker, allowing him to diversify the terroirs and deepen his experiences in winemaking and aging. Jean-Yves Péron's winemaking follows the principles of minimal intervention. On narrow and steep surfaces, his mountain vines receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. The surrounding vegetation is very rich: it protects the vines and helps to strengthen them. The soils are grassed, mown and reworked with a pickaxe and winch. The harvest is entirely manual. Once vatted in whole bunches, the grapes, both red and white, undergo a semi-carbonic maceration which allows the extraction of fresh fruit aromas. This maceration time varies between five days and nine weeks depending on the vintage. The day before or two days before pressing, Jean-Yves performs foot-treading directly in the vat. After this fermentation, the musts are sent to barrels for aging on lees for twelve months in five hundred liter barrels of two or three wines (to limit the oaky sensation), followed by blending and resting in vats. No sulfites are added, or as little as possible, and the wines are not fined or filtered.

The uniqueness of this cuvée lies in a 24-hour maceration of the Vermentino grapes before pressing, providing structure and depth. Spontaneous fermentation in stainless steel vats preserves the purity of the fruit, while partial aging in barrels (10% of the Marsanne) enriches the texture. Like all the house wines, The Wine Witch is unfiltered, with a light addition of sulfites to stabilize the whole.

We Are Young 2025 is a declaration of intent. More than just a Beaujolais Nouveau, it's a vision of young wine, free, without embellishment or artifice. This vintage from Domaine de la Sorbière, in granite Beaujolais, pays homage to the vitality of Gamay, the region's emblematic grape variety, worked here in a completely natural spirit.
The grapes come from granitic soils which give the wine a very clear mineral freshness. The winemaking is as simple as it is sincere: 5-day semi-carbonic maceration, spontaneous fermentations with native yeasts, and an ultra-short aging of 4 days in stainless steel tanks to capture the instant of the fruit. No superfluous oenological intervention, no exogenous yeasts or chemical inputs: here, everything is natural, alive, and respectful of both the grape and its terroir.
The color is a very light red, grenadine-colored, almost translucent, evoking fermented fruit juice. The nose immediately charms with its notes of citrus, fresh cherry, and white flowers, a fine and spring-like aromatic palette. On the palate, the crunchiness of the fruit dominates, with a fluid, fresh, almost thirst-quenching texture, without lacking structure. The moderate alcohol content (12%) contributes to this impression of gourmet lightness.
Perfect as an apéritif, We Are Young 2025 pairs wonderfully with a platter of fine cold cuts, soft cheeses or simple and generous cuisine. Serve slightly chilled (16-18°C) and drink without delay, although its aging potential of 2 to 5 years will surprise the curious.

La Sorga
The initials stand for "Sauvignon-Marsanne," referring to the blend from which this merchant wine is made. The grapes come from the Hérault Valley. Whole bunches of Sauvignon Blanc macerate in Marsanne must by direct pressing for fifty-five days before aging for eleven months in vats. Its notes of dried apricot, fennel, and bergamot will pair perfectly with goat cheese or blue-veined cheeses (Roquefort, Bleu des Causses). Aging potential: ten years.

This 2024 vintage, just bottled, is the result of a classic regional blend: predominantly Auxerrois, with Muscat, Pinot Gris, and Riesling. An Alsatian quartet vinified by direct pressing, without embellishments or over-extraction, and aged for 7 months in large oak casks on fine lees to preserve the wine's aromatic purity and tension.
The clay-limestone soil, typical of the Alsace plain, gives this wine both roundness and verticality. No oenological inputs, exclusively native yeasts, and a vinification that respects natural balances: a lively, expressive, and absolutely digestible white.
Floral vivacity and ripe fruit lusciousness
From the moment it's served, the pale, brilliant color hints at the wine's freshness.
