A mineral and complex Riesling from an exceptional terroir
The Fleckstein 2023, from Domaine Einhart, is a superb expression of Riesling from clay-limestone soil, enhanced by artisanal vinification. After a low-temperature pre-fermentation maceration, designed to preserve the purity of the aromas while structuring the wine, this iconic grape variety was aged for one year in a sandstone egg. This unique container allows for a subtle exchange with the air, enhancing the wine's depth and texture while maintaining its freshness.
On the nose, this Riesling reveals an elegant aromatic blend of citrus, white peach, and white flower notes, enhanced by a flinty minerality typical of the terroir. On the palate, the attack is lively and crystalline, offering a beautiful tension supported by fruity flavors and dense salivation. The finish, long and marked by subtle bitters, allows the typicality of the limestone to fully express itself, with a horizontality and structure that enchants the taste buds.

Les Souriants present a single-plot interpretation of Pinot Noir with their Cuvée YARD Champs Élysées 2022, sourced from a unique granite terroir in Beaujolais. This natural wine, certified organic, explores the finesse and depth of this grape variety, often underestimated in the region, yet finding superb resonance in these poor, mineral soils.
The Champs Élysées plot benefits from an ideal exposure and a light granite soil that forces the vines to root deeply, concentrating the aromas in small berries brimming with energy. The winemaking process remains true to the estate's philosophy: one month of maceration, gentle extraction, fermentation with indigenous yeasts, and one year of aging in old barrels to respect the identity of the place.
In the glass, the wine offers a pure and charming nose: black cherry, candied red fruits, faded rose, with a subtle vegetal touch reminiscent of ripe stems. On the palate, the texture is fine, linear, fresh, almost crystalline. The Pinot Noir expresses itself in an elegant, slender version, with a light tannic structure and a floral and mineral finish.
YARD Champs Élysées is a gastronomic red, ideal with roasted meats, farm-raised chicken with chanterelles, or elaborate vegetarian dishes. It can be enjoyed now without decanting, or can evolve harmoniously over 5 years. Serve it lightly chilled, between 16 and 18°C, to reveal its full complexity.

Fond Cyprès
With Retour de Milan, Fond Cyprès unveils a brilliant and unprecedented interpretation of Muscat Petit Grain, vinified as a macerated white. This organic orange wine from Languedoc, as elegant as it is expressive, breaks new ground to offer a unique, fresh, and gourmet sensory experience.
A subtle maceration
Here, whole Muscat grapes are macerated for a few days to provide texture and complexity without losing the delicacy of the varietal. Fermentation is spontaneous, using indigenous yeasts, without oenological additives, followed by 5 months of aging in concrete egg, which promotes the wine's natural movement and gentle contact with the lees. The result: a lively, textured juice, yet with exemplary freshness.
A luminous and aromatic orange wine
The nose is vibrant, with notes of bergamot, citrus zest, orange blossom, and fresh lychee. On the palate, the wine balances tension and sweetness, with very fine tannins and a delicately bitter finish that prolongs the pleasure. It is a digestible, chiseled orange wine, both floral and citrusy.
Bold pairings, immediate pleasure
Serve between 10 and 12 °C, without decanting. This wine pairs ideally with Asian cuisines (mild spices, Thai curry, sashimi), aged cheeses (blue cheese, long-aged tommes) or even a lightly sweetened fruit dessert. It can age in the cellar for 5 to 10 years.

This wine has nothing to hide: it shines with its frankness and conviviality.

The nose evokes bright red fruits, but also notes of pomegranate, black fruits, and candied fruits. On the palate, it is supple, smooth, with a generous texture and a beautiful freshness. The tannins are melted, the whole remains tonic and carried by a beautiful energy. This magnum is enjoyed in its breadth, unpretentious but with great pleasure.

Distillerie du Viaduc
With this artisanal Vodka, Distillerie du Viaduc offers us a bold and botanical reinterpretation of what appears to be the most neutral spirit. Made from carefully selected wheat alcohol, this organic vodka derives its unique character from a maceration of coriander seeds, some of which are roasted in-house to reveal a rare aromatic complexity.
Once the seeds are macerated, the whole is distilled in an artisanal still, then rested for a month for the aromas to meld and the texture to naturally soften. No additives, no sugar: the purity of the process allows full expression of the botanicals and the quality of the base alcohol.
The nose opens with a lively and tangy note of fresh coriander, then evolves towards herbaceous and light, almost zesty citrus aromas. On the palate, the attack is fluid, fresh, with a beautiful roundness, then a spicy, warm yet elegant framework settles in, reminiscent of roasted coriander. The finish is long, comforting, carried by a vegetal freshness that balances the whole.

Aquavit
Distillerie du Viaduc
With this Aquavit distilled in Paris, Distillerie du Viaduc pays homage to Scandinavian traditions while asserting a resolutely artisanal and local identity. Inspired by Nordic aquavits, this organic spirit is based on caraway, whose aromatic depth structures the whole. The botanicals used, caraway, dill, fenugreek, and orange peel, are all from organic French agriculture and undergo slow maceration before complete distillation in a traditional still.
Sugar-free, dye-free, and additive-free, this cuvée expresses remarkable purity. The nose is immediately warm, dominated by caraway, balanced by aniseed notes and zesty freshness. On the palate, the attack is round, almost gourmet, followed by a spicy, slightly smoky framework thanks to the fenugreek, and subtly softened by dill. The finish reveals a pleasant orange sweetness, long and refreshing, with a very elegant herbaceous return.
This new generation aquavit can be enjoyed neat or on ice, as a digestif, or as an aperitif, lengthened with a dry tonic or ginger beer. The result of meticulous expertise deeply rooted in plants, Distillerie Awen Nature's Green Absinthe, based in Brittany, is a rare and vibrant spirit, at the crossroads of ancestral traditions and contemporary herbalism. Crafted from a rigorous selection of organic plants, including absinthe of course, but also hemp, mint, lemongrass, and hyssop, this cuvée proudly displays its 60% ABV, while maintaining astonishing finesse.
Here, there are no artificial colors or additives: the magnificent green hue comes exclusively from post-distillation plant maceration, according to methods respectful of tradition. The plants are distilled separately, then precisely blended to create a rich and balanced aromatic profile.
On the nose, it's an explosion of herbaceous and floral notes: you'll find the freshness of mint, the light citrus, and the depth of hyssop mingled with resinous touches of hemp. On the palate, the attack is bold yet silky, carried by a beautiful, elegant bitterness, without heaviness or excess. The finish is long, fresh, almost medicinal, with a natural tension that makes it an absinthe for tasting, but also an exceptional cocktail base.

With Amphore 2023, Philippe Chatillon delivers a rare and unique red cuvée, blending the typicality of the Jura with an ancestral aging method. This certified organic natural wine, classified as Vin de France, comes from a subtle blend of Pinot Noir and Trousseau, two emblematic grape varieties of the Jura, grown on clay-limestone soils and vinified with a spirit of purity and respect for the fruit.
After a short one-week maceration, the wine is aged for two years in amphorae (qvevris), these terracotta jars traditionally used in Georgia. This aging choice allows for slow and natural oxygenation, without the transfer of woody aromas, thus preserving the frankness of the fruit, the floral delicacy, and the complexity of the wine.
On the nose, Amphore 2023 immediately captivates: crisp red fruits, violet, a fresh herbaceous note, and a slightly earthy touch that recalls the very material of the amphora. On the palate, it is a light, fluid, yet structured wine, with a natural tension and a beautiful aromatic persistence. Le Sage Vagnin 2023 is a precious, exclusive, and wise vintage. Only 800 bottles are produced each year, all from a small walled vineyard (clos) planted with 65-year-old Savagnin vines, deeply rooted in the grey Jurassic marl. This rarity is the result of the precise and inspired work of Philippe Chatillon, a winemaker sensitive to living things, whose estate is certified organic and located in Arbois, the birthplace of the grape variety.
Vinified with direct pressing and then aged for two years in old barrels, this AOC Arbois white wine stands out for its aromatic purity and balanced roundness. No new wood, no additives: just the grapes, time, and the winemaker's care. The result is a nuanced Savagnin, with a mineral roundness, between tension and sweetness.
The nose is both expressive and delicate: fresh citrus, white peach, acacia blossom, with a subtle mineral touch.
