Gigondas Rouge 2022

Fidèle à une approche respectueuse du vivant, Les Grandes Serres élaborent ce Gigondas selon une vinification naturelle, sans artifice, pour laisser le raisin s’exprimer librement. Les vignes sont cultivées dans le respect des équilibres naturels, sans produits de synthèse, avec un soin attentif porté à chaque pied. Les vendanges sont manuelles, choisies à parfaite maturité, garantissant une matière première saine et concentrée. En cave, l’élevage est maîtrisé avec sobriété, sans masquer la personnalité du vin, pour en préserver la fraîcheur et la gourmandise originelles.

Le Gigondas 2022 des Grandes Serres est une véritable explosion de plaisir. Dès le premier nez, il séduit par ses parfums intenses de fruits rouges bien mûrs, fraise écrasée, cerise juteuse, auxquels viennent se mêler des notes de thym sauvage, de chocolat noir et une pointe légèrement fumée, presque carnée.
En bouche, c’est une vague de générosité : ample, velouté, mais jamais lourd. La fraîcheur naturelle équilibre la richesse du fruit, et la finale s’étire sur des tanins fondus, avec une touche saline qui appelle la gorgée suivante. Une "bombe de gourmandise", certes, mais aussi un vin de caractère, avec de la profondeur et une vraie élégance.
Idéal pour accompagner un barbecue d’été entre amis, une belle planche de charcuteries artisanales ou une pièce de viande rouge grillée, ce Gigondas se montre à la fois accessible et raffiné. Servi légèrement rafraîchi, il surprendra aussi par sa légèreté en dépit de ses 15°, preuve que puissance peut rimer avec buvabilité.

Au cœur du territoire de Blaye-Côtes-de-Bordeaux, sur la rive droite de la Gironde, s’épanouissent les vignes du Château Frédignac, domaine familial porté par l’engagement sincère des Vignobles L’Amouller. C’est ici, sur des coteaux ensoleillés et ventilés, que le Merlot trouve un terrain d’expression idéal. Cette variété emblématique de Bordeaux, habituellement vinifiée en rouge, se révèle ici sous un jour inattendu et séduisant : en rosé pétillant naturel. Le climat tempéré et les sols argilo-calcaires du vignoble apportent à la cuvée "Coince ta bulle" une belle fraîcheur, une vivacité naturelle, et un fruité croquant qui évoque la gourmandise de l’instant.
Méthodes culturales
Fidèle à une philosophie paysanne respectueuse du vivant, le domaine est conduit en agriculture biologique certifiée par le label AB et Nature & Progrès. Ici, la vigne est choyée sans intrants de synthèse, dans un équilibre attentif entre terre, plante et main de l’homme. La biodiversité est encouragée, les traitements sont doux et mesurés, et chaque intervention se fait avec l’objectif de préserver l’identité du sol et la pureté du fruit. Cette approche se prolonge naturellement en cave, où la cuvée "Coince ta bulle" est élaborée en méthode ancestrale : une seule fermentation, sans ajout de levures ni de sulfites, pour un pétillant brut, spontané, vivant. Un vin libre, à l’image de ceux qui le font.
Dégustation & accords
"Coince ta bulle" 2023, c’est une invitation à la légèreté, à la fraîcheur, à la joie simple d’un moment partagé. Sa robe rose pâle, délicatement trouble, annonce un nez éclatant de petits fruits rouges – fraise fraîche, framboise acidulée – mêlés à une touche vive de pamplemousse rose. En bouche, la bulle est fine, joyeuse, avec une attaque croquante et désaltérante. Le fruit s’exprime sans fard, dans un équilibre parfait entre douceur naturelle et tension saline.
Idéal pour les instants décontractés, ce pétillant rosé naturel accompagne à merveille un apéritif estival, une planche de légumes grillés, des sushis ou un poisson mariné. Il fait aussi des merveilles autour d’un barbecue entre amis, où son caractère léger et fruité vient rafraîchir les papilles et faire pétiller les conversations. Un vin de plaisir, sincère et sans chichi, qui prouve que le naturel peut aussi être festif.
Cuvée 0.72+ (cuvée exclusive) blanc 2019
De Vini
0.72 + est un vin blanc sec de négoce, biologique, naturel et réalisé sans aucun sulfite ajouté ni aucun additif chimique par Christophe Bosque de De Vini. Il nous vient tout droit du pays du muscadet, l’estuaire de la Loire. Sans en avoir l’appellation (il est en Vin de France), il peut être considéré comme un muscadet et se boire comme tel.
À la vigne et au chai
0.72 + blanc de De Vini est composé à 100 % de melon de Bourgogne (autre nom du cépage muscadet) planté à Maisdon-sur-Sèvre (Loire-Atlantique) sur sols de gabbro caractéristiques de la région. Le gabbro est une roche magmatique à texture grenue reposant sur sous-sol granitique, et cela donne des vins blanc splendides, vifs et minéraux. Gabbro et granite sont les sols préférés de Vinilibre et constituent un précieux patrimoine viticole. Le vin a été élevé en cuve de ciment enterrée (traditionnelle en cette région) pendant une année, sur lies, sans aucun intrant.
Si vous voulez savoir…
Le nom de la cuvée relève d’une anecdote : à l’origine, à cause d’un petit incident technique à la mise en bouteille, celle-ci ne contenait pas exactement la quantité standard. L’erreur a été corrigée depuis (0.72 + de De Vini en est à son quatrième millésime).
Dégustation
Laissons la parole au vigneron : « Ça goûte du feu de Dieu ! » Trois ans de bouteille n’ont fait que le polir, le ciseler et le bonifier. « Le gabbro, plus c’est vieux, meilleur c’est », confie également son auteur. Ce vin est excellent à boire dès maintenant ou plus tard, bien frais. Une élégante acidité mêlée d’une rondeur équilibrante, un côté salin et salivant font de 0.72 + un compagnon indéfectible des fruits de mer crus, des huîtres, des sashimis et sushis, des tartares et des carpaccios de poisson, ou des poissons fumés. Cette cuvée existe aussi en rouge.

De Vini, assorti du négoce Vinilibre, est l’activité multicasquette de Christophe Bosque, originaire de Saint-Nazaire. Le vin le passionne depuis toujours. Nous nous intéressons particulièrement à ses créations locales, issues de sa vigne de quelques deux hectares et fermentées en cuve enterrée à la nantaise — véritable réinvention du muscadet (hors appellation) en mode nature.
Fondu de gabbro
Après avoir passé des années en tant que négociant, importateur, puis négociant vinificateur, cet ancien cameraman pourvu d’un BTS œnologie-viticulture acquiert en 2017 quelques parcelles (deux hectares) de vignes de melon de Bourgogne à Gorges, en Loire-Atlantique, près de Clisson. Les sols y sont constitués de gabbro sur substrat granitique, configuration pédologique particulière à la région nantaise et notamment à Clisson. Christophe ne tarit pas d’éloges sur ce type de sol.
Muscadet en mieux
Les cuvées de Christophe peuvent être issues de raisins achetés sur les meilleurs terroirs français, notamment en Languedoc, mais le vigneron garde une affection particulière pour ses vignes, qu’il entretient avec passion et attention au terroir. On dénote sur ses étiquettes et dans ses appellations une touche d’humour et de sens du calembour, mais dans la bouteille, c’est du sérieux, des vins hors des sentiers battus comme il les aime.
Dolce et Cabanon Rouge 2024
Terroir, parcellaire et encépagement
C’est au cœur du Beaujolais, dans un coin de campagne où la vigne pousse avec insouciance, que naît Dolce et Cabanon 2024, un rouge atypique, vibrant et plein de charme. Cette cuvée, signée par La Tribu Alonso, défie les conventions avec panache : elle assemble pas moins de 52 cépages hybrides, dont 30 % de Seibel 54/55, portés par la fraîcheur aromatique du Muscat Petit Grain — une rareté en version rouge, ici sublimée. Ce kaléidoscope végétal donne naissance à un vin libre et indiscipliné, à l’image d’un jardin sauvage où chaque plante trouve sa place.
Méthodes culturales
La vigne est cultivée avec soin, à l’écoute du vivant et des saisons, sans précipitation ni dogme. Chaque pied est accompagné à la main, chaque grappe récoltée avec respect, dans une approche profondément artisanale. Ce travail du sol attentif, ce compagnonnage avec la nature, permettent aux cépages, classiques ou oubliés, de s’exprimer avec justesse et spontanéité. En cave, même philosophie : des gestes simples, une vinification intuitive, pour laisser le vin parler sans filtre.

Dolce et Cabanon 2024 est un rouge juteux, souple et gouleyant, à la fois généreux et léger. Dès le premier nez, il séduit par ses notes de fruits rouges bien mûrs, relevées d’une pointe herbacée et épicée. Puis viennent des touches d’agrumes, presque inattendues, qui rafraîchissent l’ensemble et donnent à ce vin un rythme enjoué, un brin espiègle. En bouche, les tanins s’expriment avec douceur, dessinant une trame élégante, toujours portée par la fraîcheur.
Compagnon parfait des barbecues d’été, des viandes grillées à la flamme ou des soirées au jardin entre amis, c’est un vin qui appelle le partage et les moments simples. Mais derrière cette convivialité assumée se cache un véritable travail d’orfèvre, une recherche d’équilibre entre rusticité et finesse, entre nature et culture.

Le Senzaniente Pecorino 2023 est un hommage vibrant au terroir des Abruzzes, où le cépage Pecorino, typique de la région, puise toute son énergie. Sur les sols argilo-calcaires des collines de Montepulciano d’Abruzzo, cette variété ancienne révèle un caractère bien trempé, entre fraîcheur citronnée et éclat floral. C’est un vin de lieu, qui exprime avec franchise la lumière, la pierre, et la plante.

Au domaine Marina Palusci, le travail de la vigne se fait dans une approche naturelle et respectueuse : ni engrais, ni produits de synthèse, ni sulfites ajoutés. Tout est pensé pour laisser la vigne et le vin s’exprimer pleinement, sans maquillage ni contrainte. La vinification suit cette même logique : fermentation naturelle, pas d’additifs, pour un blanc vivant et vibrant.
Dégustation & accords
Le nez est une véritable explosion de fraîcheur : citron jaune, citron vert, pomelo, zestes d’agrumes, et une touche délicate de jasmin. En bouche, la matière est à la fois ronde et vive, avec une belle tension, une texture croquante et une finale fruitée sur la pomme et les agrumes. Ce vin blanc nature est équilibré, expressif, avec un joli rebond qui invite à y revenir. Il s’apprécie à l’apéritif comme à table, en compagnie de poissons grillés, de champignons sautés, de fromages affinés ou encore de plats asiatiques légèrement épicés. Un vin lumineux, joyeux et naturel, à servir frais pour un maximum de plaisir.
Nuria Montanega-Parellada White 2017
In Sitges, in Penedès (Catalonia), in the heart of the Garraf Natural Park, Manel Avinyo and his brother Joan took over the family estate, which Manel renamed Clos Lentiscus. Even though Barcelona is only a half-hour drive away, the beauty of the landscape is striking and the immersion in nature is total: Mediterranean forests rub shoulders with Catalan scrubland (thyme, rosemary, rockrose, and the mastic tree, which gave its name to the estate, etc.). The Penedès region also has a long winemaking history. Nestled in its gentle hills is Clos Lentiscus, in the Penedés appellation, on twenty hectares of sandy and clay-limestone soils facing due south at an altitude of 225 meters. According to historical documents, the family of Manel and Joan Avinyo has been established there since at least the 14th century. For a long time, the grapes were sold to local cooperatives, but since the two brothers took over the estate, organic and biodynamic farming has replaced conventional practices, the entire harvest goes into the house vintages, and organic and biodynamic practices have allowed this beautiful property to reconnect with its former prestige: in the 19th century, its wines were sold in France and as far away as the Americas. Very quickly, Manel received a nickname: The Bubbleman, a tribute to his talent for vinifying cavas, these sparkling whites characteristic of the northeast of the Iberian Peninsula, from native varieties for which Catalonia holds the secret: sumoll, ull de llebre, xarel·lo, malvasia of Sitges, cartoixà vermell, cariñena (carignan), accompanied by tempranillo and muscat of Alexandria. The vines are old, sometimes centuries old. No synthetic additives are used in the vineyard, and operations such as planting, pruning, de-budding and harvesting are dictated by the lunar phases. Pollination is facilitated by the presence of beehives; sheep contribute to fertilization and control of the plant cover. Ringo, the white horse, is responsible for working the soil.
Purity, elegance and a crisp minerality due to limestone characterize the productions of Clos Lentiscus. The note of controlled oxidation, when it is felt, does not dominate the tasting and the wines are never deviant. Cavas are known for being exuberant, but those of Clos Lentiscus never have more than two grams of residual sugar per liter. The estate also produces still wines, red, white and rosé.
Núria is the name of Manel's daughter, who assisted her father in the making of this beautiful wine made from Montanega, a variant of the native Parellada grape variety. Lightly disgorged, made using the ancestral method (cava), this surprising wine presents notes of fresh bread and brioche, green tea and apple. Fresh and dry at the same time, it is disconcertingly complex: alive and moving in the glass, we keep coming back to it.
Le Zudefruit Red 2021
Delicious, delectable, a real pleasure, this Zudefruit from Jérôme Lambert, an organic and natural winemaker based in the Loire Valley, in the Layon region. A beautiful dark red color, with aromas of red fruits on the nose; on the palate, it is very supple, lively, and deep, with herbaceous notes and a real delicacy with hints of cherry and undergrowth. With a beautiful balance between fruity notes and earthy, spicy, peppery notes, Zudefruit is a natural wine from the Loire Valley, produced from a plot of Grolleau cultivated by Jérôme Lambert on the light, sandy, schistose soils found in southern Anjou. The harvest, carried out by hand, ferments in whole bunches for two weeks before pressing, then rests for nine months in fiberglass vats. On his four-hectare estate, entirely organic and planted with Chenin, Grolleau, Gamay and Cabernet Franc, Jérôme Lambert is as much a winemaker as he is a farmer: he raises chickens, pigs, sheep and takes this mixed crop-livestock activity very seriously, along with the production of typical Anjou charcuterie. His Loire Eden, in fact, is located in the south of Anjou, in Rablay-sur-Layon. The son of a winemaker, as a child, he already enjoyed picking grapes, crushing them, and letting them ferment. In 2003, he got his hands dirty, helping with the pruning of the vines at Philippe Cesbron's and practicing with a few grapes donated by local winemakers. The following year, his adventure truly began with twenty ares of vines, but while his estate grew year by year, it would only reach one hectare after fifteen years.
A journey towards nature
In 2003, Jérôme discovered that adding sulfites was detrimental to wines: he never added more and was satisfied with the result, without making too much of a fuss about it. It was only a little later that he learned about the existence of natural wines and understood that he was not alone. All his vintages since then have been natural, without added sulfites, and are nonetheless straightforward, drinkable and flawless. For him, even the wood of the barrels is an additive; this shows the attention he pays to the naturalness and truth of the vine.
La Bueilloise Blanc 2022
La Grapperie
La Bueilloise is a dry white sparkling wine from the Coteaux du Loir, classified as Vin de France, organic (Ecocert), and natural. It is produced by Renaud Guettier of La Grapperie, without the addition of sulfites or any other chemical additives. A fine example of this winemaker's expertise, with added bubbles.
Vinification
La Bueilloise is a blend of young and old Chenin Blanc (60%) and Pinot d'Aunis (40%) vines, pruned in goblet and crescent shapes on a flint-clay terroir. The oldest vines are 115 years old and the youngest 8 years old. The harvest is carried out by hand at full maturity. Spontaneous fermentation in fiberglass vats using indigenous yeasts for one month, followed by fermentation in bottles where aging continues for twelve months on the lees. Manual disgorging without the addition of preservatives, then recapping.
Tasting
The atypical blend of La Bueilloise is based on the majority of Chenin, ripe to the point, which brings its roundness, aromas and liveliness. The Pineau d'Aunis brings a slight bitterness. Dry and nuanced, sending out clouds of aromas in bursts, this wine offers lively and intense bubbles. Fresh apple, pear, minerality, dryness, straightforwardness. An aromatic and refreshing sparkling wine, which you can pair with a wide range of good things and not necessarily "white wine" products: it will go well with local charcuterie, fresh veal and pork, raw or cooked shellfish (scallops) and crustaceans, lobster or fish in sauce, and fine sweet or savory flaky pastries. It is the perfect companion to a good blanquette or salmon with beurre blanc.

In the Coteaux du Loir appellation, La Grapperie is the name of the estate of Renaud Guettier, who can be described as a master of Chenin, but also of Pineau d'Aunis, which is one of the oldest grape varieties in the Loire Valley.
The estate
Renaud's 60 hectares of hillside vines are protected from the north winds by the Bercé forest. Depending on the altitude, the terroirs are predominantly clay, flint, or sand. The grape varieties are the two traditionally authorized in the appellation: Chenin for the whites and Pineau d'Aunis for 90% of the reds, the rest consisting of a few ares of Côt, Gamay and Grolleau. Some vines are more than a hundred years old.
In the vineyard and the winery
The entire estate is cultivated organically. The soils are worked and all viticultural interventions are manual, including the harvest, carried out at full maturity, which is reflected in the fullness and smoothness of the wines. For the reds, the Pineau d'Aunis is partially destemmed (depending on the plot) and the macerations are quite long, three to four weeks, with punching down, to promote aging potential. The wines are aged in barrels for between twelve and twenty-four months, then racked, blended and bottled without filtration. For the whites, the Chenins are pressed directly at low pressure then put into barrels with complete malolactic fermentation, for at least eighteen months, malolactic included, and sometimes up to thirty-six months.

This fruit of our collaboration with our favorite Catalan-Piedmontese, Antonella and Massimo, is a superb dry white from Catalonia, a unique and rare cuvée, and we are proud to present its first vintage. Classified as Vino de Mesa (table wine) and composed entirely of the indigenous Catalan Xarel·lo grape variety, this Culinaries cuvée is modeled on the estate's XL Xarel·lo, with notable differences. The wine is aged for a longer period and is done in demi-muids (large 500-650 liter barrels), which provides micro-oxygenation that enhances its complexity and fullness. It is therefore an "augmented" version of the XL, and it already tastes admirably, with a promise of great stability. Smoky, mineral, this Vino de Mesa (table wine) is already a classic, offering a pure and typical expression of xarel·lo. Partida Creus is an important estate, both in terms of wine and history – we are talking here about the history of the vine in Catalonia. Massimo Marchiori and Antonella Gerosa, originally from Piedmont – and even coming from the Langhe region, where they know a lot about wines – first pursued a career as architects in Barcelona. But the wine bug tickles them, and soon they abandon the big city and its sophistication for the vineyards of southern Catalonia, in Bonastre in Baix-Penedés. There they find a quantity of abandoned vineyards planted with a dizzying diversity of traditional Catalan grape varieties, which they passionately revive to save these varieties – and their wines – from oblivion. For them, it's not just a matter of heritage rescue, no: it's a matter of taste and nature. Of natural wines, which they will never stop making from now on on these sandy, poor, clay-limestone or clay-gravel soils, poor and poorly irrigated, where the vines suffer to produce their best juice. Massimo and Antonella practice organic, biodynamic viticulture, entirely manual and natural to give new life to these wines. Vinyater, sumoll, garrut, monastrell, ull de perdiu, ull de llebre, sumoll, queixal de llop, cariñena, trepat, subirat parent, maccabeu, parellada, pansé, vinel·lo, bobal, cartoixà vermell or xarel·lo: Partida Creus is a veritable conservatory of native Catalan grape varieties. It also grows moscatel, grenache, merlot and cabernet (among others). Few wineries can boast growing so many different grape varieties. The wines reflect this diversity, with the winemakers striving to best convey the signature of the soil and the grape variety: single-variety wines are common among them, alongside extensive blends, all in the styles dear to Catalonia: still wine, "ancestral" sparkling wine, and even vermouth. The bottles themselves are works of art: bare glass, simply marked with two large stenciled initials that denote the vintage. The wines, fresh, vibrant, lush yet always straightforward and impeccably juicy and fruity, exude life. The arrival of a Partida Creus at the table always elicits cries of satisfaction.
Alsace 2023 White 2023,
A tribute to traditional Alsace in a modern and refined cuvée
Théo Einhart's Alsace 2023 celebrates the original spirit of Alsace wines with a contemporary interpretation. A blend of Auxerrois, Muscat, Pinot Blanc, and Riesling, this organic AOP Alsace white wine is the result of carefully controlled pre-fermentation maceration and 8 months of aging in stainless steel vats on fine lees. Each grape variety is vinified separately, recalling traditional practices while adding a touch of modern precision.
On the nose, this cuvée reveals a delicate and seductive aromatic palette. Floral notes of white flowers and acacia harmoniously intertwine with fruity aromas of pear and peach. On the palate, the balance is perfect: a round and creamy texture supported by a saline liveliness, with a long and elegant finish that highlights the typicality of the clay-limestone soils.
A wine for sharing and conviviality
With its great drinkability and balance, the Alsace 2023 is a versatile wine that will delight all palates. It lends itself equally well to a convivial aperitif as to more refined meals. It pairs perfectly with fresh cheeses, raw fish, seafood, and even crunchy or roasted vegetables. Its roundness and freshness make it an ideal ally for Alsatian or Mediterranean dishes.
Served between 8 and 10°C and decanted before tasting, this wine will reveal all its nuances. With a 5-year aging potential, it can be enjoyed now or waited to gain complexity.
Ichigo Ichie Red 2022,
Ichigo Ichie is an organic and natural red-rosé wine (a "blouge" we would say) from the Rhône Valley (Ardèche, Saint-Joseph terroir) certified organic by Écocert. It is produced by Paul Estève and Chrystelle Vareille of Domaine des Miquettes, and the name of the cuvée pays tribute to one of their Japanese collaborators who recently passed away. The expression ichigo ichie means "a unique moment in life."
Vinification
Made without additives or added sulfites, unfiltered, Ichigo Ichie is a blend of all the grape varieties grown on the estate: Gamay, Marsanne, Roussanne, Syrah and Viognier, on granite and loess soils. This organic and natural wine from the Rhône Valley is aged for one year in vats.
Tasting
Ichigo Ichie can be consumed as a light red or a full-bodied rosé; its exotic notes are very seductive. It is recommended to drink it chilled. This additive-free wine will accompany all products from the land and the sea. Domaine des Miquettes, in the Saint-Joseph appellation (Ardèche), is run by Paul Estève and Chrystelle Vareille, who are passionate about Georgian winemaking techniques. At the heart of this centuries-old viticulture is the kvevri, the buried jar where the entire winemaking process takes place. They also have unburied tinajas (Spanish jars) for fermentation and maceration, while kvevris are used for aging. No sulfites are added to the wines of Domaine des Miquettes. The astringency of the tannins is polished by the terracotta, which produces a velvety texture, a fruity and supple substance.
The Estate
Paul Estève learned his trade from René-Jean Dard and François Ribo, two great figures of natural wine in the Rhône Valley. With Chrystelle, he gradually rebuilt the family estate until it reached 4.3 hectares. The plots, located between 300 and 450 meters above sea level, rest on a granite base with light mica and gneiss soils. The agriculture is organic (Ecocert certification) and biodynamic. The soils are worked by horse or winch and pickaxe, and the harvest is manual. No chemical inputs are added to the vineyard work and winemaking.

Les Grandes Serres
In the heart of Vaucluse, between Saint-Maurice-sur-Eygues and Visan, the Grandes Serres vineyard thrives on deep clay-limestone soils bordered by garrigue. The Wine Witch 2024, a subtle blend of Clairette, Marsanne, and Vermentino, is a generous white, both powerful and balanced, faithful to its terroir.
A bold and natural vinification
The uniqueness of this cuvée lies in a 24-hour maceration of the Vermentino grapes before pressing, providing structure and depth. Spontaneous fermentation in stainless steel vats preserves the purity of the fruit, while partial aging in barrels (10% of the Marsanne) enriches the texture. Like all the house wines, The Wine Witch is unfiltered, with a light addition of sulfites to stabilize the whole.
A charming nose and a full palate
The nose opens with notes of ripe, even exotic fruits, accompanied by slightly buttery nuances. On the palate, the attack is supple and round, revealing a remarkable amplitude, carried by a rich and balanced structure. The finish is long, with a beautiful aromatic persistence.
What to enjoy with this bottle?
Served around 10-12°C, this racy white wine goes wonderfully with roasted white meats, grilled fish or even hard cheeses. With its aging potential of 5 years, it will evolve towards even more complex aromas.
Crapaud Licorne Rouge 2022
Danis dans la vigne
Under the enigmatic name of Crapaud Licorne stands an organic and natural red wine from the Cahors terroir, 100% Malbec, certified AB and Nature & Progrès. It is made by Danis Bessières (Danis dans la vigne) from organic grapes from his family's Domaine de l'Antenet.
Vinification
Danis Bessières's Crapaud Licorne is based on Malbec, the emblematic red (and even black) grape variety of Cahors. It comes from 30- to 40-year-old vines growing on clay-loam and limestone gravel soils. The vinification is carried out without any additives, with a short maceration. The aging is done in stainless steel vats.
Tasting
This deep purple-red color, no mistake, it's Malbec, the Cahors grape variety from which "black wines" are made. This red wine from Danis Bessières, dense, dark, full-bodied and rich in substance, fits the description well. Toad Unicorn needs local dishes and charcuterie from the region: the galabart black pudding from the Mayrinhac farm or the black pudding from the Collectif Padouen will accompany it with talent. Under the Danis dans la vigne brand, in the Cahors terroir, Danis Bessières vinifies organic grapes purchased from his parents' estate, the Domaine de l'Antenet, which was the first organic vineyard in Cahors in the early 1980s.
Organic and natural since 1983
Danis respects the principles established in the vineyard and cellar by his grandfather and then his father: to make wines without additives, organic and natural, from the grape varieties of the terroir while respecting the environment. It was in 1983 that his grandfather obtained the organic label Lemaire-Boucher, followed by Nature & Progrès and then the organic labels AB and Eurofeuille. Danis Bessières continues this momentum.
Malbec, but not only
Malbec reigns over the Cadurcian region, but Danis also uses Cabernets, Jurançon Noir, Merlot and recently created grape varieties. This allows him to temper the density and opacity of the main grape variety. He also does not hesitate to create single-varietal cuvées of Cabernet Sauvignon, Cabernet Franc or Colombard.
Auguste (exclusive vintage) Red 2022
Sous le Végétal
Organic and natural, Auguste takes its name from the indigenous Greek avgoustiatis grape variety, from which it is made entirely. It is, for now, the only dry red wine from the Sous le Végétal project, led on the Greek island of Samos by Patrick Bouju. The vines grow on the foothills of Mount Karvounis, not far from the village of Pagondas. The wine is a blend of four types of rock on two plots. The avgoustiatis grape variety ("the august") is a rare variety, the first red grape variety harvested in Greece. It is grown organically in conversion to permaculture. The vines, pruned in goblet form, are harvested by hand on the early morning of August 15th.
Vinification
The wine is first obtained by a forty-day maceration of whole bunches in stainless steel vats. Half of the vinification is done in 500-liter Stockinger barrels and the other half in ovoid concrete vats. This wine from the Samos terroir is completely additive-free, unfiltered and bottled by gravity. The black bottle ensures the wine ages and the closure is made with a cork sealed with a mixture of paraffin and black beeswax.
Tasting
Auguste is a light red wine with no additives or added sulfites which, through its Mediterranean nature, recalls something of the reds of the Jura: characteristic earthy and mineral notes, lots of character - prune, clove, anise, vanilla, cherry jam, rich tannins and, on the finish, a salinity due to the mineral-rich soils (particularly schist and limestone) of the island of Samos. The fruity notes remain taut and elegant. Decanting is recommended. Auguste will enjoy all the meze and hors d'oeuvres from the land or the sea. A charcuterie from Maison Montalet or from Ferme de Mayrinhac (for example a galabard black pudding) will suit him like a glove, or even smoked scallops (Salmon de France).

This rich plant life covers a unique and varied subsoil: volcanic rocks (basalts), limestone, quartz, pink granites, schists, iron cast iron... In Sous le Végétal, the winemakers of Samos rediscover the wine they made in their childhood, proving once again that natural wine allows, through innovative projects, to reconnect with forgotten traditions.
Grape varieties and vinification
Four of the seven vintages of Sous le Végétal — Livia, Hüpnos, Octave, Palli & Genesia and Auguste — are produced on around sixty plots of Samos muscat à petits grains between 400 and 910 meters above sea level. The other vintages, Auguste, Alexandre and Sémélé, are respectively based on avgoustiatis, asyrtiko and a blend of Samos muscat and avgoustiatis. Each plot is vinified separately. Four types of winemaking containers are used: amphorae, concrete eggs, stainless steel vats, and 500-liter barrels. Each plot is vinified in at least two of the four containers, and the wine is aged in black, wax-sealed bottles. No sulfur is added or filtration is performed.
Hupnos (exclusive vintage) White 2022
Sous le Végétal
Made from small-grain Muscat, Hüpnos is an organic, biodynamic, and natural wine from the terroir of Samos, a Greek island in the eastern Aegean Sea. This sulfite-free wine is one of five white vintages from Patrick Bouju's "Sous le Végétal" project, exclusively for Culinaries. Its name is inspired by its night harvest, hüpnos meaning "sleep" in Greek. This type of harvest is designed to preserve the freshness of the polyphenols for perfect maceration. The muscats are harvested in the Agii Sarandides and Karvounis areas on the slopes of the volcano that occupies the center of the island. They were obtained using organic farming methods in conversion to permaculture. Pruned in goblet form, they grow on basalt, granite, and limestone soils.
Vinification
The Hüpnos harvest macerates in whole bunches for a month. Vinification is carried out without aeration or stabilization; only pumping over, topping up, and settling are carried out. Fermentation takes place in 500-liter Stockinger barrels. Hüpnos is an unfiltered wine, with no additives or added sulfites, bottled by gravity, and aged in black bottles sealed with black beeswax and paraffin.
Tasting
On the palate, Hüpnos surprises with its fruity freshness while expressing its nocturnal origin and the mineral austerity of its terroir. An aroma of candied fruit diffuses on the palate. The deliciousness and mineral freshness are both present. Decanting is recommended, and as an accompaniment, try grilled fish, white meats (for example a roast piece of Black Pork of Bigorre or Ferme de Mayrinhac.

Les Grandes Serres
Located between Vaison-la-Romaine and Séguret, the Grandes Serres vineyard, certified organic, promotes an innovative agroforestry approach, including the planting of pistachio trees along the edges of the plots. This cuvée, The White Widow 2024, made from a blend of Clairette, Grenache Blanc, and Marsanne, elegantly expresses the richness of the Rhône's sandy soils.
A pure and delicious white
Harvested in the cool of the morning on a fruity day, the grapes are pressed directly, thus preserving their brightness and freshness. Fermentation takes place spontaneously with indigenous yeasts, in a subtle balance between new Stockinger barrels (for Clairette and Marsanne, 50%) and stainless steel vats (for Grenache Blanc, 50%). Careful aging with light stirring gives the wine a full texture, without filtration, allowing natural sedimentation of the lees in the cold.
An expressive nose and a generous palate
From the moment you open it, The White Widow seduces with an intense bouquet of yellow fruits and jasmine. The palate is full-bodied and rich, supported by a beautiful mineral tension, which brings balance and length. A fresh finish, with slightly saline notes, prolongs the pleasure.
What to enjoy with this bottle?
This gastronomic white is ideally enjoyed at 10-12°C and pairs wonderfully with fish and white meats in sauce, spicy dishes and blue cheeses. With an aging potential of 5 years, it will gain in complexity over time.
Coup de Foudre Rosé 2021,
Domaine Bois Moisset
A cloudy pink color that already makes you thirsty, a nose that expresses its fruit and fermentation discreetly, while the palate, on the contrary, blossoms with great opulence and roundness, making this Coup de foudre a very easy-drinking wine. The texture on the palate is soft, enveloping, silky, with a fruity and delicious substance. The bubbles are fine and lively, with a tonic and tense finish. From the beginning to the end of the tasting, notes of bitter orange and candied citrus peel, a lovely mineral astringency and a bitterness that further ennobles the whole, balancing the velvety fruitiness. A magnificent bottle, this Coup de foudre, which one might think is vinified in a tuns given its name, but this is not the case: here we have an entirely organic and natural wine, one hundred percent Cabernet Sauvignon, pressed at the harvest and fermented in fresh juice in a room where the temperature is maintained at 19 °C. This alcoholic fermentation is followed by malolactic fermentation and the wine is bottled without filtration. The secondary fermentation takes place in the bottle with indigenous yeasts and, of course, without sulfites added at any stage of the vinification. Disgorging in December. We recommend chilling this beautiful wine upright for a day before opening to avoid excessive overflow upon opening.

The name Gaillac, the region where the Bois-Moisset estate is located, owned by Sylvie Ledran and Philippe Maffre, has been associated with wines since Antiquity; it is the oldest vineyard in France, with two thousand years of history and an impressive collection of ancient indigenous grape varieties. It is also a region of dazzling beauty, nicknamed "French Tuscany" because of its gentle hills planted with groves and its almost Florentine brightness. Many estates, along with that of Bois-Moisset, showcase this uniquely rich winemaking heritage. Along with a vineyard, this is an organic mixed farm that directly sells its production of lentils, sunflower oil, cereal flours, and grape juice. A herd of old local breed cows also thrives there, and guest rooms are available during the summer months. It is in this small rural paradise that natural wines typical of their origin and terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years. The grape varieties are dominated by Syrah and Duras, but the ampelographic richness of the Gaillac region (braucol, prunelart, loin-de-l'œil, etc.) is also evident in the Bois-Moisset estate's vintages, which consist particularly of red wines with crisp fruit, concentrated but with smooth and delicate tannins.
