With Nos Pas Se Tissent, the Sentema Distillery offers an artisanal pastis without additives or anethole, made from organic wine brandy and an infusion of Provençal plants (green anise, fennel, licorice, rosemary, thyme, and lavender). Mec Mortel Rouge 2022
Danis dans la vigne
Mec mortel is a 100% Cahors Malbec red wine, organic and natural, made by Danis Bessières of Danis dans la vigne. With a low alcohol content (11.5% vol.), it is a small-production red wine from the Southwest of France and classified as a Vin de France.
Vinification
Under the name Mec mortel, Danis Bessières makes his new wine every year, bottled immediately after vinification. Made from the Malbec grape variety, this Southwest wine is made to be drunk early. Its acidity gives it a certain longevity, but a new wine is not a wine for laying down and there is little point in keeping it.
Tasting
Mec mortel is a new wine, everything is in the description: fluid, light, fresh, easy to drink, "loaded with cherry" as Danis says. Deliciously fruity and crisp, lots of morello cherry. Summer wine, wine for pleasure, wine for friends, to be served chilled and paired with everything you like.

Under the name Danis dans la vigne, Danis Bessières vinifies organic grapes from the family estate, the Domaine de l'Antenet, which was the first organic vineyard in Cahors in the early 1980s.
Organic and natural since 1983
Danis respects the principles established in the vineyard and cellar by his grandfather and then his father: making wines without additives, organic and natural, from local grape varieties while respecting the environment. It was in 1983 that his grandfather obtained the organic label Lemaire-Boucher, followed by Nature & Progrès and then the organic labels AB and Eurofeuille. Danis Bessières continues in this vein.
Malbec, but not only
Malbec reigns supreme in the Cadurcian region, but Danis also uses Cabernets, Jurançon Noir, Merlot, and recently created grape varieties, as well as Cabernet Sauvignon, Cabernet Franc, and Colombard as single-varietals. These experiments allow him to moderate the density and opacity of the main grape variety.
Green Walnut Liqueur 2017,
Distillerie Cazottes
This organic and natural green walnut liqueur from the Cazottes distillery, produced in the Gaillac region (Tarn), bears the Eurofeuille and Nature & Progrès labels. This artisanal wine-based aperitif is a great classic of traditional folk liqueur making, a true grandmother's liqueur, pesticide-free, additive-free, and 17% ABV.
Production
The fresh walnuts are harvested from the tree around Saint-Jean and macerated for nine months in a mixture of natural wine and homemade brandy. The entire process is organic. The alcohol content is low to better convey the natural flavors of the green walnut.
Tasting
We don't hesitate to call this a masterpiece given the delight and versatility of this organic green walnut liqueur from the Cazottes distillery. What complexity, and what a delicacy! A dark brown color tending towards green, a lovely cocktail of bitterness, sweetness, and depth; a buttery and roasted flavor, notes of soy sauce, coffee, and cocoa with a fruity nuance. When tasted, it is invigorating and comforting. It is perfect to accompany foie gras, charcuterie and cured meats, cheeses, chocolate… Use it to marinate white meats: rub a nice rack of pork studded with garlic an hour in advance and drizzle it with walnut liqueur while cooking. Your guests won't believe it.

Guignes et Guins Liqueur 2019,
Distillerie Cazottes
This guignes et guins liqueur is an organic and natural spirit (Eurofeuille label) produced in the Tarn region. It is a great success for the Cazottes distillery, which has many of them. It is made from two types of cherries: organic guignes (old variety black cherries) and guins (wild cherries or wild cherries) grown in Laurent Cazottes' garden, without pesticides or any additives.
Production
Once the fruit is harvested, it is pitted by hand and macerated naturally for 14 months in the estate's organic, slightly sweetened brandy. Everything is then pressed and bottled. The liqueur is 18% proof.
Tasting
Some will remember the guignolet, a cherry liqueur evoked by this liqueur of guignes and guins from the Cazottes distillery. It is an intensely fruity, dense, rich and sensual liqueur, a little tannic, with notes of red rose, cedar wood and candied cherry. A real aromatic bomb that you will love to enjoy on its own or use as a flavoring to cook a pigeon or roast duck. It will also go well with red fruit tarts. Delicious with a beef ham.

Sans Pression Sparkling White 2021
Domaine Bois Moisset
No pressure, no constraints, no stress, but always good press, vinified to perfection and with precision. This is the lesson Bois-Moisset offers us through this natural sparkling white made from Mauzac (80%), Sauvignon Blanc, and Loin-de-l'Oeil grapes totaling the remaining 20%. The color is cloudy with straw nuances. With a touch of yeast and vanilla that adds to its lightness, it offers notes of white fruits (apple, pear, white peach), warmed grass, and red fruits on the palate (strawberry, raspberry). A touch cider, it is an aromatic and tasty sparkling white wine, a sparkling pleasure that is obviously suitable for festive occasions but which also deserves to be savored without occasion, pretext or excuse.

The name of Gaillac, the region where the Bois-Moisset estate is located, in the hands of Sylvie Ledran and Philippe Maffre, has been associated with wines since Antiquity; it is the oldest vineyard in France, with two thousand years of history and an impressive ampelothèque of ancient indigenous grape varieties. It is also a region of dazzling beauty, nicknamed "French Tuscany" because of its gentle hills planted with groves and its almost Florentine luminosity. Many estates, along with that of Bois-Moisset, showcase this uniquely rich winemaking heritage. Along with a vineyard, this is an organic mixed farm that sells its lentil, sunflower oil, cereal flour, and grape juice directly. A herd of old local breed cows also thrives there, and guest rooms are available during the summer months. It is in this small rural paradise that natural wines typical of their origin and terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years. The grape varieties are dominated by Syrah and Duras, but the ampelographic richness of the Gaillac region (braucol, prunelart, loin-de-l'œil, etc.) is also evident in the Bois-Moisset estate's vintages, which consist particularly of red wines with crisp fruit, concentrated but with smooth and delicate tannins.
White Absinthe 60° - 70cl
Awen Nature Distillery
This certified organic white absinthe is the result of a special recipe that was the subject of many years of research by the founder of the Awen Nature distillery. Entirely organic and natural, it derives its flavor from a combination of seven distilled botanicals, a bouquet that expresses very refreshing notes, always with a dominant anise and complex notes of plants such as wormwood, coriander, hyssop, and lemongrass. This absinthe is created and distilled exactly as this liqueur was before the 1915 ban. To fully appreciate it, we recommend the traditional method: in a glass containing a measure of absinthe, place a sugar cube on an absinthe spoon and pour fresh water drop by drop over the sugar cube. Upon contact with water, white absinthe becomes slightly cloudy to reveal iridescent and brilliant reflections.

The Awen Nature distillery is a factory of magic potions: beverages with a strong Celtic content, organic liqueurs with a strong touch of poetry. This Breton distillery, located in Ille-et-Vilaine and run by Julien Fanny, initially dedicated itself to absinthe, a liqueur that Julien helped to rehabilitate. It’s not “the liqueur that makes you crazy,” he says: “we were already crazy before.” He strives—successfully—to reproduce the taste of yesteryear, that of the absinthes that were once given to children on a piece of sugar as a dewormer. “You need a touch of madness to be a distiller today,” says Julien. In addition to absinthe, Julien distills a wide range of spirits and liqueurs: gins, vodkas, botanical rums, Swedish elixir, concoctions inspired by role-playing games... All made from plants, respecting the environment, without preservatives or artificial flavors. An ode to plants that the korrigans must sip in secret, at night, on the moors.

Domaine Casé
On the fertile clay-limestone soils of Val Trebbia in Emilia-Romagna, Alberto Anguissola founded the Casè estate in 1998. He first learned viticulture from the region's most experienced winemakers and finally embraced his passion by first planting a small amount of Pinot Noir around his grandparents' country house. Later, he bought fifty- or sixty-year-old vines abandoned by their owners and expanded the estate. The plots are located at an altitude of over six hundred meters and the grape varieties, in addition to the Pinot Noir and Marsanne that Alberto planted, are resolutely local: Barbera, Bonarda, Croatina, Malvasia, Ortrugo, Moscato Bianco… What motivates this winemaker is a passion for winemaking, but also for the kind of life and society that this model of traditional viticulture implies. He does not allow any chemical inputs, whether in the vineyard or in the cellar, and strives to keep the land as healthy as possible for nature and for man. Love for the local winemaking tradition plays a large part in his choices, for example the use of large wooden barrels for fermentation, a thousand-year-old technique that the historian Strabo had already described in the 1st century BC.
Casèbianco is a magnificent orange wine like the ones Emilia-Romagna and particularly Alberto know how to produce. Made from four white grape varieties (Ortrugo, Malvasia, Marsanne and White Muscat) planted on the same plot alongside red grape varieties (a common practice in the region), this wine is a superb expression of the soil and tradition: the ten-day skin maceration gives a surprising result, sweet and fruity aromas combined with pronounced floral notes and the dryness typical of orange wine. This nectar for the table awaits Italian or Mediterranean dishes, wild mushrooms, charcuterie and cured meats, spit-roasted rabbit with garlic and thyme.

Liqueur de Folle Noire 2014, Laurent Cazottes
Distillerie Cazottes
This delicious amber-red liqueur is made from fresh grapes and brandy from the same grape variety: Folle Noire, typical of the Gaillac region. Round and fruity, it is reminiscent of the best Cartagenes fortés from Roussillon, with its supple, well-melted grape skin tannins and aromas of fresh fruit and candied plum. Try it with a well-made Roquefort cheese or a fromage blanc and strawberry dessert. Alcohol content: 18%.
Orange Blanc 2020,
Château Lafitte
This Orange cuvée, with its spectacular old gold color and supple, enchanting tannins, is made from 100% Petit Manseng, the emblematic Jurançon grape variety. It is harvested by hand during the second half of September. Both the viticulture and the vinification process are carried out without the addition of chemical additives or sulfites. Orange is macerated for three weeks in terracotta jars, which gives it its beautiful tawny color, powerful nose, and supple, melting tannins. A true treasure to cellar for up to ten years (if you can manage that). The possibilities for almost infinite flavor pairings are endless (everything goes with it, including the most unlikely ingredients). A dense and powerful orange, of astonishing complexity, which at the same time does not forget to be fine and caressing.

Château Lafitte is located in Béarn, on the noble terroir of Jurançon, the origin of superb sweet wines and dry wines that have nothing to envy them. Since the 14th century, Monein, the commune where the estate is located, has been nestled in an exceptional natural, rich and hilly environment. In the 16th century, vines already occupied a significant part of the property, and they have persisted to the present day. Philippe and Brigitte Arraou, the current owners, have undertaken to revive viticulture on the site, helped since 2012 by their son Antoine, a winemaker as passionate as his parents. Château Lafitte is now managed biodynamically and with agroforestry: five hectares of marl-limestone soils typical of the appellation, on a hilly terrain that can become very cold in winter. The king grape varieties of Jurançon, Petit Manseng and Gros Manseng, represent the majority of the grape varieties. Also typical of Jurançon and the Pyrénées-Atlantiques in general, viticulture en hautains, that is to say raised and trained very high, is practiced. As it was in many primitive vineyards, some of which are still active (Portugal, Spain, Georgia, etc.). On this beautiful estate, winemaking experiments are legion: aging in terracotta jars for dry wines, solera for sweet wines in untopped barrels, photovoltaic roofs for the cellar, rainwater harvesting, gravity-fed vinification. Château Lafitte produces sweet Jurançons as well as still dry wines and a very successful natural sparkling wine, Funambule.
Pécharmant Rouge 2018,
Domaine Le Barouillet
Pécharmant is the emblematic red wine of Bergerac, already drunk in the time of Cyrano and long before. Produced from clay-siliceous soils, it typically offers a dense, fruity profile, with notes of pepper and blackcurrant. Here, we have 60% Merlot, 20% Cabernet Sauvignon, and 20% Cabernet Franc, a traditional blend for the appellation. Vinification begins with a gentle whole-bunch maceration for twenty to thirty days. Half of the wine is aged in old oak barrels, the other half in stainless steel vats. After twelve months, the final blend is made, after which the wine is left undisturbed all winter in concrete vats. Bottling is done without fining or filtration. Everything is done to keep this wine supple and round in tannins, as well as its freshness. It is a textured, versatile wine. Serve at 17-18 °C.

Julien López's I'm Natural, Don't Panic range consists of macerated wines. A lovely bouquet of red fruits and a beautiful balance of sweetness and minerality. Serve with tapas, grilled meats, or poultry.

Poire Williams Réserve de Famille – 45° – 50 cl

Cette eau-de-vie de Poire Williams est l’une des expressions les plus abouties du savoir-faire de la maison Lehmann, distillerie familiale fondée en Alsace en 1850. Les fruits sont rigoureusement sélectionnés puis distillés deux fois dans des alambics en cuivre traditionnels. Le cœur de chauffe repose ensuite au minimum huit ans en dame-jeanne, un long affinage qui apporte rondeur et profondeur tout en conservant une remarquable pureté aromatique.
Le nez et la bouche donnent presque la sensation de croquer dans une poire Williams bien mûre et juteuse, avec une expression intense, élégante et persistante du fruit. À déguster pure en digestif, autour de 16 à 18°C, ou légèrement rafraîchie. Elle accompagne aussi très bien une tarte aux poires, un dessert aux amandes ou un chocolat noir peu sucré.
Les Méchalots 2023 is a Bourgogne Blanc from a parcel located at the gates of Marsannay, on a clay-limestone soil. Sylvain Pataille seeks tension and precision over power here. The Chardonnay expresses itself with an elegant profile of white fruits, citrus, and flowers, accompanied by a beautiful minerality. The palate is direct and luminous, with a delicate texture and a fresh, sapid finish.
A white wine that perfectly reflects Pataille's style: minimal intervention during winemaking and aging designed to support the wine without masking the terroir. Its freshness and depth make it an excellent companion for fish, poultry, mushroom risotto, shellfish, or pressed cheeses.
Short description: A direct and luminous Burgundy Chardonnay, from a clay-limestone terroir at the gates of Marsannay. White fruits, citrus, and minerality make for a precise, fresh, and elegant white wine.
Among the most renowned terroirs of Marsannay, Clos du Roy gives birth to one of Sylvain Pataille's most ambitious cuvées. Grown on limestone and sandstone soils, the Pinot Noir here reveals a deep and refined expression: cherry, raspberry, peony, and black fruits are accompanied by delicate spices. The palate combines intensity and finesse, with perfectly integrated tannins, a silky texture, and a remarkable mineral framework.
The grapes are hand-harvested and then fermented with their indigenous yeasts. The wine is aged on fine lees for 15 to 18 months in barrels, about 35% of which are new wood. More structured than the Marsannay village, Clos du Roy has real aging potential and will gain even more complexity with time. Serve with a fine cut of beef, pigeon, guinea fowl, duck, or game.
