Nails and Dust Red 2021
Behind this metallic and dusty appellation (the translation of the cuvée's name) lies a wine of character, lively and mineral, full of sap and vitality. It is made from Minervois Carignan grapes macerated and crushed for six days, resulting in a beautiful extraction of tannins that need to soften slightly. At the time of writing (March 2023), this wine still requires approximately one year of bottle aging before it can be optimally enjoyed. After this time, it will reveal all its passion and energy. An excellent companion to red meats, grilled meats, grilled sausages, and good times with friends.

Hence the presence of Catalan grape varieties in Belly Wine Experiment's blends, alongside Burgundy, Auvergne, and Jura grape varieties, all readily found in the same bottle. Aimé is the son of Manu Duveau, a poet-winemaker from Auvergne, a former stonemason, and a great winemaker of local Gamays at his Domaine de l'Égrappille. Belly Wine Experiment's unique feature is the exoticism (in the literal sense) of its blends, with Catalan Xarello, for example, blending effortlessly with Puy-de-Dôme Gamay. Crac Rosé 2021
Belly Wine Experiment
Fresh, fruity, and pleasant, Crac is a vin gris, a still rosé wine made entirely or partially from black grapes. It generally undergoes a very short maceration, hence its light color. This is obtained by slow direct pressing (forty-eight hours) of Auvergne Gamays "sur limagne," or on the dark-colored sedimentary and volcanic soils that make up the Auvergne plain. This slow pressing, replacing a short maceration, allows for a gentle extraction of the grape's constituents and gives the wine its color. To these Auvergne Gamays are added a proportion of Pinot Gris from Alsace. Categorized as Vin de France, free from any chemical or sulfite additives in the vineyard or in the cellar, Crac spends a year aging on lees before bottling. This wine is produced using organic farming methods and has received no chemical or sulfite additives, in the vineyard or in the cellar. It will go very well with charcuterie, cured meats, and tapas of all kinds.

Vino Bianco Ambar White 2020
Àmbar ("amber"), aptly named, is a dry macerated white wine that stands out with its beautiful amber color with pink highlights typical of an orange wine. It is a ripe, straightforward wine, surprisingly easy to drink. The nose is delicately floral, as is the palate. Àmbar is very fresh and has lovely acidity. It offers tobacco, spices, orange peel, almond, and toasted notes, without losing its beautiful fruitiness. Plenty of minerality, earth, and a touch of creaminess after aeration. This wine is made from the Grechetto grape variety, macerated and fermented on the skins in thousand-liter terracotta jars. After pressing, the wines are aged, always separately, for eight to ten months in old oak barrels before being blended in fiberglass vats.

The Azienda Corva Gialla ("yellow crow") is a wine estate in Lazio, Italy, located on the edge of Umbria in the Alta Tuscia Viterbese. A volcanic region considered one of the most beautiful in Italy and characterized by its calanches, high tuff rock formations delimiting deep valleys carved by numerous rivers and torrents. Corva Gialla is located in Lubriano, opposite Civita di Bagnoregio. Alta Tuscia is proving to be a breeding ground for young winemaking talents dedicated to nature, who are enhancing these historically neglected lands. Founded in 2017, the estate comprises four hectares cultivated by Beatrice Arweiler, originally from another wine-growing region, between the Rhine and the Moselle. The new owner has also planted an olive grove (Frantoio and Leccino varieties) and developed the estate into a mixed crop-livestock system. The vines were planted with the help of Gian Marco Antonuzzi of the Le Coste estate. The friable volcanic soil lends itself magnificently to viticulture and the planting of grape varieties such as Grechetto d'Umbria, Trebbiano, Vermentino, Sangiovese, and Ciliegiolo. GT Garrut Ancestral Sparkling Red 2019
Partida Creus
With its liveliness and deep notes of black fruit, GT Garrut Ancestral recalls the best of Lambrusco, but it is something else entirely. It is an atypical but oh-so-delightful single-varietal wine that deserves a closer look at its original character. Its purplish color with an exuberant pink foam, already expressing notes of blackberry on the nose, is already quite a program. GT Garrut displays beautiful earthy, juicy, and intense qualities; it is very characteristic of black fruits, particularly blackberry (blackberry or tree blackberry). Beautiful notes of red fruits too, and a delicious acidity. It is made entirely from Garrut, also called Monastrell, a Catalan grape variety related to Mourvèdre. This bright, summer-perfect wine is hand-harvested. Entirely destemmed, the grapes macerate for three days with punching down every three hours, and alcoholic fermentation with indigenous yeasts takes place for four months in stainless steel vats, followed by twenty months in oak barrels. But the wine bug tickled them, and they soon abandoned the big city and its sophistication for the vineyards of southern Catalonia, in Bonastre in Baix-Penedés. There they found a number of abandoned vineyards planted with a dizzying diversity of traditional Catalan grape varieties, which they passionately revived to save these varieties—and their wines—from oblivion. For them, it's not just a matter of saving their heritage, no: it's a matter of taste and nature. Of natural wines, which they will never stop making from now on on these sandy, poor, clay-limestone or clay-gravel soils, poor and poorly irrigated, where the vines suffer to produce their best juice. Massimo and Antonella practice organic, biodynamic, entirely manual and natural viticulture in order to give new life to these wines. A Pinot Noir between Piedmont and Savoie
Made from organic grapes harvested by hand in the heart of Piedmont, Italy, this wine is then vinified with the same rigor as the estate's other cuvées. A semi-carbonic maceration of whole bunches extracts finesse and freshness, while aging on lees for twelve months in old barrels refines its texture. Unfined or filtered, with minimal intervention, this Pinot Noir expresses exceptional purity.

On the palate, a lot of distinction: a straight acidity and morello cherry, ripe plum, black pepper, a small saline touch on the finish. Serve well chilled.
Allé Canto Sweet Red 2016
Antony Tortul loves old vineyards: he devotes his life to finding them and making wine from them. Just as there are landless shepherds, he can be defined as a landless winegrower, in other words, a wine merchant whose area of activity extends throughout Languedoc and, eastward, as far as Châteauneuf-du-Pape, in search of the best terroirs. Born in Foix, with six years of experience as a wine technician and oenologist in various vineyards in the south of France, he created La Sorga in 2008. His enthusiasm leads him on a path filled with favorites, and each of these favorites is a vineyard. The result is a dizzying mosaic of natural, lively, and spirited wines, which reinvents itself each year with around thirty cuvées per vintage. Few winemakers can list such a variety of grape varieties on their menu: the whole of southern France is there with muscats, grenaches, picpoul, mauzac, carignan, cinsault, marsanne, alicante, braucol, duras, viognier, len-de-l’el, and all the rest.
This single-varietal wine made from Alicante Bouschet comes from the ferruginous clay-limestone soils of Cessenon-sur-Orb, in the Saint-Chinian appellation area. The vines grow on a very old plot (seventy years old). The late harvest is sorted berry by berry and the vinification is carried out in open amphorae. Maceration takes place for three months, and the wine is aged in demijohns for four years. All this produces a very powerful and aromatic wine, with a kirsch, vegetal and fresh nose, smoky and chocolatey, black olive, which will not leave you indifferent. The palate is full, with very little tannin for an Alicante, and it's hard to get fresher with a late harvest. The wine's ageing is remarkable (more than six months) and the aging potential is a good twenty years.
Unatantum Liquoreux Red Still 2009
This sweet red is 100% aleatico, grown on the volcanic soils of the Azienda Le Coste estate. The grapes are air-dried for a month, hung in whole bunches from wires, and the wine is slowly fermented for three years. This produces a wine that is sweet without being syrupy, and wonderfully complex.

Domaine Le Temps retrouvé
A blend of Grenache and Carignan for a rosé that doesn't do things by halves, sourced from the clay-limestone plots of Domaine du Temps retrouvé. On the nose, notes of redcurrant and raspberry are echoed on the palate, accompanied by a lovely acidity. Drink as an aperitif, while listening to Laurent Voulzy's Le Cœur Grenadine.

My Sweet Navine White 2015
A small bottle but a great wine! A sweet white made from 100% Chenin, My Sweet Navine is produced from late harvests on the schist plot where the estate's other Chenins are also grown. A delicate amber color, with notes of citrus and candied fruit on the nose. On the palate, there is a surprising freshness despite the residual sugar: this is explained by the lack of sorting, as the grapes are at varying stages of ripeness. We thus benefit from green berries, ripe berries, and varying degrees of noble rot. and a light sparkle which gives way to a beautiful length, always with notes of candied fruit.

Magnum Régnié La Haute Ronze Red 2017
La Haute Ronze is one of two plots cultivated by Nicolas in the Régnié appellation; it is considered of very high quality, with deep clay soils that produce full-bodied wines. This 100% Gamay is obtained through semi-carbonic maceration and aged for approximately twenty months. It offers notes of leather, earth, and Mediterranean herbs (oregano, rosemary), through its red fruits.

Xarab Vigiriega Doré VGR White 2009,
On south-facing schist hillsides at an altitude of 1,300 meters, Manuel Valenzuela has created, within the Xarab series, this astonishing sweet white wine made entirely from the native Vigiriega grape variety, raisined on the vine and harvested in December. The color is a beautiful bright gold, the nose fragrant (yellow fruits); the flavor is rich, intense, generous, and aromatic. A perfectly balanced sweet wine.

Susucaru Rosato Rosé 2024

Avec Susucaru Rosato 2024, Frank Cornelissen continue d’élargir les frontières du rosé. Né sur les pentes volcaniques de l’Etna, ce vin sicilien à la robe pâle et aux nuances intenses est bien plus qu’un rosé de soif : c’est un rosé de terroir, complexe, structuré, et profondément vivant.
Issu d’un assemblage unique de cépages autochtones – Nerello Mascalese, Malvasia, Moscadella et Catarratto – vendangés à la main, ce vin IGP Terre Siciliane est élaboré sans compromis : macération égrappée d’une semaine, fermentation avec levures indigènes, aucun intrant œnologique, et un élevage d’un an en cuves époxy pour préserver la pureté du fruit.
Le terroir joue ici un rôle majeur. Les sols noirs volcaniques de l’Etna apportent une tension minérale saisissante, presque saline, qui structure l’ensemble. Au nez, on retrouve une grande complexité aromatique : fruits rouges frais, poivre blanc, pétales de rose séchée, et une touche légèrement fumée. En bouche, c’est un vin texturé, entre la fluidité d’un rosé et la profondeur d’un rouge léger. La finale est longue, persistante, marquée par une amertume noble et une sensation presque tannique.
Susucaru Rosato est un vin caméléon : parfait à l’apéritif, sur des grillades, des charcuteries artisanales, des plats épicés ou des viandes rouges juste saisies. À servir légèrement frais, il peut aussi se garder quelques années pour révéler d’autres facettes. Une cuvée culte, recherchée, au croisement de la tradition et de l’expérimentation.
Cuvée Carignan Rouge 2024

La Cuvée Carignan 2024 de Frédéric Cossard incarne l’art d’unir soleil du Sud et vinification précise. Ce vin de négoce naturel, vinifié en Bourgogne mais issu de raisins 100 % Carignan cultivés au pied du Mont Ventoux, exprime avec intensité et fraîcheur tout le potentiel de ce cépage souvent mal aimé.
Issus de vignes en bio sur sols argilo-calcaires, les raisins sont vendangés à la main, puis travaillés en fermentation carbonique pour préserver le fruit et adoucir les tanins naturellement puissants du Carignan. La fermentation est spontanée, avec les levures indigènes, sans aucun ajout d’intrants. Le vin est élevé 1 an en cuve inox, pour une expression pure, éclatante et fluide.
Dans le verre, la robe est dense, d’un beau pourpre sombre. Le nez séduit par des arômes de fruits noirs bien mûrs, de violette, de poivre et d’épices douces. À cela s’ajoutent des notes de sous-bois et une touche légèrement sauvage, signature du cépage. En bouche, la matière est juteuse, ample et vive, portée par des tanins fondus et une fraîcheur étonnante, rare pour un vin méridional.
Charcuteries artisanales, plats mijotés, viandes grillées ou cuisine méditerranéenne : les accords sont nombreux. C’est un rouge de caractère, mais accessible, solaire sans lourdeur, et qui brille par son équilibre. À servir légèrement rafraîchi pour faire ressortir sa fraîcheur naturelle.
Chateau Roulant Red 20/21
Benoit Camus
Château Roulant is a Beaujolais red wine, organic and natural (Ecocert certified), made from Gamay. Classified as a Vin de France, it is produced by Benoît Camus at his Pierre Dorées estate, in the south of the appellation. Its name evokes the itinerant life once led by the winemaker, a former seasonal agricultural worker.
Vinification
The Gamay vines of Beaujolais grow on clay-limestone soils. The very steep plots prohibit any mechanized work. The harvest, carried out by hand, undergoes a three-week semi-carbonic maceration. The wine is aged in concrete vats for fifteen months.
Tasting
The Beaujolais wines from Pierre Dorées are structured, long-lasting, and beautifully fruity. Here, after admiring a bright garnet color, we find strawberry, raspberry, red cherry, and cranberry, with a beautiful acidity in the mid-palate giving way to a rich and voluptuous finish. Freshness and acidity, leather, earth, and some animal notes. Wonderful richness in the mouth that we will enjoy accompanying with cold meats and cured meats, poultry such as pigeon or duck. You might think he's itinerant, with his vintages called "Château roulant" or "Vagabond", but for Benoît Camus, it's a memory of his previous life, when he was a seasonal farmer in the Rhône Valley and as far as Roussillon. Since 2003, he has settled in Southern Beaujolais, in the Pierres Dorées terroir, to make organic (Ecocert) and natural wines.
Nature before, nature always
Before purchasing his seven-hectare estate from an old winemaker, the vines had not yet seen pesticides or chemical additives. Many in Beaujolais worked this way. He made his first vintage in 2006, "natural without knowing it," he says. A brief attempt at chemical spraying to treat grape worm definitively dissuaded him from adding anything to the vineyard or the cellar. He acquired Ecocert organic certification and continues to make natural wines.
The Pierre Dorées terroir
The southern Beaujolais, with its clay-limestone soils, produces wines that are more structured and powerful than those from the granite soils of the North. This is the profile presented by the reds of Benoît Camus, natural wines that are straight, dense and long-aging, with good acidity and well-integrated tannins, not forgetting abundant, rich and seductive fruit.

Frédéric Cossard poursuit son exploration d’une Bourgogne affranchie des dogmes, en conjuguant naturel, précision et poésie. Installé depuis plus de vingt ans, il vinifie sans intrants, sans levures de laboratoire, et sans aucune chimie, aussi bien dans les vignes que dans son chai. Son travail ne revendique aucun label, mais s’impose par sa cohérence et son intégrité.
Un Morey-Saint-Denis de pure expression
La cuvée Les Champs de la Vigne provient de parcelles situées sur les sols argilo-calcaires typiques du village de Morey-Saint-Denis. Le Pinot Noir, ici en sélection de pinot fin, révèle un profil plus élancé et ciselé, marqué par une belle énergie. Le choix de l’amphore pour l’élevage, durant un an, libère toute la pureté aromatique du cépage et du terroir, sans maquillage boisé.
Macération douce, texture vibrante
Les raisins sont encuvés en grappes entières pour une macération de trois semaines. Ce procédé doux permet d’extraire les arômes et la structure sans brutalité. Le vin offre une robe lumineuse, un nez fin et profond aux notes de petits fruits rouges, de pierre chaude et d’épices douces. En bouche, l’attaque est fluide, les tanins soyeux, et la finale minérale évoque la craie.
À table : finesse et caractère
Idéal avec une cuisine raffinée mais expressive : canard à l’orange, charcuterie fine, voire une volaille rôtie aux herbes. Servir entre 14 et 16°C, sans carafage pour conserver toute sa tension naturelle. Ce vin nature possède un potentiel de garde de 5 à 10 ans, avec une évolution vers des arômes plus tertiaires et profonds.
Santenay Clos Genets Rouge 2023

Santenay, en Côte de Beaune, livre ici l’un de ses visages les plus lumineux grâce au travail inspiré de Frédéric Cossard. Ce Clos Genêts 2023 est un pur Pinot Noir élevé sans artifices ni compromis : une macération en grappes entières de trois semaines, une fermentation en levures indigènes, aucun intrant œnologique, pas de soufre ajouté, et un élevage d’un an en œuf béton. Résultat ? Une expression du terroir à la fois libre, précise et vibrante.
Le terroir argilo-calcaire de ce clos confère au vin une belle tension minérale, qui soutient une matière fine et délicate. La robe, d’un rubis limpide et brillant, annonce déjà la fraîcheur du millésime. Au nez, on est accueilli par des arômes intenses de fruits noirs croquants – mûre, cerise burlat, cassis frais – avec une touche florale délicate et une pointe de poivre blanc. En bouche, le vin se déploie avec souplesse : les tanins sont fins, la structure aérienne, et l’ensemble offre une sensation de pureté presque cristalline. La finale, légèrement saline, prolonge la sensation de fraîcheur.
Ce Santenay Clos Genêts accompagne avec bonheur une belle charcuterie artisanale, un rôti de veau aux herbes ou encore une volaille grillée. Il s’apprécie dès aujourd’hui après un court passage en verre, mais pourra aussi vieillir joliment sur 5 à 10 ans, gagnant en complexité sans perdre son éclat naturel.

Free Ride 2023, c’est sa première incursion dans le monde aérien de la jacquère, cépage emblématique de Savoie, qu’il interprète à sa manière : libre, spontanée, sans artifice.
Une vinification nature pour une expression cristalline
Les raisins proviennent de parcelles savoyardes soigneusement sélectionnées, puis sont vinifiés dans le chai de Saint-Romain, fief de Frédéric Cossard. Pressurage direct, levures indigènes, aucune correction, aucun intrant, ni collage ni filtration : on est ici dans le plus pur esprit du vin naturel. Au nez, la jacquère livre un bouquet subtil de fleurs blanches, de citron frais, de pomme verte et de pierre mouillée. La bouche est ciselée, tendue, fluide, avec une fine salinité et une buvabilité redoutable. À seulement 10°, ce vin se boit tout seul, tout en gardant une belle structure acidulée qui lui évite toute fadeur. Un vrai coup de fraîcheur pour les amateurs de vins droits et digestes.

Monts Luisants, un 1er cru d’exception
Le climat Monts Luisants, perché au-dessus du village de Morey-Saint-Denis, est connu pour produire des vins structurés et raffinés. Cette cuvée, chère au cœur de Frédéric Cossard, provient de vignes enracinées dans des sols argilo-calcaires, propices à la profondeur et à l’équilibre. L’élevage se fait ici en jarre, pendant un an : un contenant neutre qui révèle sans masquer.
Pinot noir en pleine expression
Les grappes entières ont été mises en cuve pour une macération douce, respectant la finesse du cépage. Le vin qui en résulte est à la fois dense et élégant : une robe intense, un nez complexe de fruits rouges mûrs, d’épices et de pierre humide. En bouche, la matière est ample, profonde, mais tenue par une tension minérale remarquable. Une finale longue, précise et racée.
Accords & service : un vin de table noble
Ce 1er cru s’accorde parfaitement avec des viandes rouges grillées, des charcuteries artisanales ou des plats en sauce bien structurés. Servir entre 14 et 16°C, sans carafage. Frédéric Cossard continue de bouleverser avec talent les codes de la Bourgogne avec une intégrité sans compromis. Il vinifie à partir de raisins sains, cultivés sans produits chimiques, et élabore des vins vivants, sans intrants ni levures exogènes. Sa philosophie : laisser le terroir et le millésime s’exprimer dans leur plus grande pureté.
Chambolle-Musigny Les Herbues, délicatesse incarnée
Situé en pied de coteau, le climat Les Herbues offre une lecture raffinée du Pinot Noir. Le sol argilo-calcaire donne naissance à un vin tendu et subtil, moins opulent que certains crus voisins, mais avec une finesse et une allonge qui signent les plus beaux Chambolle. Frédéric choisit ici un élevage rare : un an en œuf béton, qui respecte la matière sans l’alourdir.
Macération douce, élevage fluide
La vinification suit la méthode chère à Cossard : grappes entières, macération douce de trois semaines, extraction par infusion. Le vin n’est ni collé ni filtré. Le résultat ? Un nez pur sur le fruit rouge croquant (fraise des bois, groseille), une bouche longue, droite, d’une intensité mesurée mais persistante, et une finale salivante aux accents pierreux.
