La Bohème Rouge 2015, Domaine La Bohème An iconic vintage from Patrick Bouju, made from Gamay d'Auvergne and a few indigenous varieties harvested in Égliseneuve-près-Billom. The vines are between sixty-six and one hundred and sixteen years old. The grapes are destemmed and macerated for sixty-two days before aging for fifteen months in oak barrels. The wine is fruity, concentrated, mineral, with supple and melted tannins. Decanting recommended. Les Barrieux - Roussanne Blanc 2012, Jean-Yves Péron
A rare and exceptional vintage, a white wine without equal. Generally, it is made entirely from Roussanne, but sometimes it can also contain 30% Jacquère to balance the warmth of the vintage. The two grape varieties grow on schist soil and are blended just after the harvest: they are vinified together. Maceration depends on the vintage: generally three to five months, but there is one vintage that has been macerating since 2019. Aging is one year in barrels. Roc Cab Rouge 2018, Les Vignes de Babass Dervieux A single-varietal red, 100% Cabernet Franc, from vines planted in the mid-1950s (Babass hadn't even been born yet). Dance with a Red Slice 2011, Philippe Jambon The fruit of the partnership between Philippe Jambon and Benoît Camus, this Gamay macerates in whole bunches before aging in barrels. Muscat Sec des Roumanis Blanc 2012, Le Petit Domaine de Gimios This dry Muscat with small grains comes from century-old vines planted on limestone soil very close to the bedrock.
