This Pinot Noir comes from a plot with a steep, south-southeast facing terroir located between 280 and 400 meters above sea level in the Saint-Romain appellation. The soils are mainly marl, limestone, and clay. The grapes, from fifty-year-old vines, macerate in whole bunches. Aging takes place for about a year in barrels. Beautiful structure, well-rounded tannins, and lovely notes of black fruits.

Le Casot des Mailloles, an iconic Roussillon estate, delivers a natural wine with a strong character, faithful to its rugged terroir on the hillsides of Banyuls. El Nino Rouge 2012 is an exceptional cuvée made from a blend of Carignan, Syrah, and Mourvèdre, from old, low-yielding vines. This precise work in the vineyards, carried out entirely by hand, gives this wine remarkable intensity and depth.
A powerful and expressive wine
At first glance, El Nino Rouge reveals a deep color with garnet highlights, testifying to its maturity and concentration. On the nose, a complex bouquet is revealed: notes of ripe black fruit, pepper, spice, and a subtle mineral note characteristic of the schist terroir of Collioure.
On the palate, the attack is straightforward, marked by a lovely freshness that balances the wine's density. The silky, melted tannins give way to a long, lingering finish, where we find the spicy and saline undertones, a true signature of the estate.
A vinification without artifice
True to the ethos of natural wine, this cuvée is vinified without added sulfites, in whole bunches and without oak aging to preserve the pure expression of the terroir. Fermentation in concrete vats and aging in stainless steel vats preserves all the freshness of the fruit and the precision of the aromas.
Enjoy now after aerating gently. It will pair wonderfully with a grilled prime rib, lamb tagine, or mature cheese.
Coteau Libre Red 2016
A beautiful macabeu with a strong personality, vinified by Michaël Georget in the Albères region. This grape variety has often been used as a blending ingredient; it deserves to shine on its own. The nose already announces the wine's structure and velvety texture, and the palate appreciates the clarity and tension, which doesn't prevent it from being very delicious.

Domaine Le Temps retrouvé
A blend of Grenache and Carignan for a rosé that doesn't do things by halves, sourced from the clay-limestone plots of Domaine du Temps retrouvé. On the nose, notes of redcurrant and raspberry are echoed on the palate, accompanied by a lovely acidity. Drink as an aperitif, while listening to Laurent Voulzy's Le Cœur Grenadine.

My Sweet Navine White 2015
A small bottle but a great wine! A sweet white made from 100% Chenin, My Sweet Navine is produced from late harvests on the schist plot where the estate's other Chenins are also grown. A delicate amber color, with notes of citrus and candied fruit on the nose. On the palate, there is a surprising freshness despite the residual sugar: this is explained by the lack of sorting, as the grapes are at varying stages of ripeness. We thus benefit from green berries, ripe berries, and varying degrees of noble rot. and a light sparkle which gives way to a beautiful length, always with notes of candied fruit.

A powerful and authentic red
The color of Soula Rouge 2013 displays a deep red with garnet highlights, heralding a structured and concentrated wine. The nose is intense and complex, combining ripe black fruits, sweet spices and mineral touches. On the palate, the attack is frank, driven by a beautiful acidity that balances the richness of the wine. We find a full and silky structure, supported by elegant and melted tannins. The finish is long and persistent, marked by spicy notes and a saline mineral note.

True to the Casot des Mailloles ethos, this cuvée is produced without added sulfites and with minimal intervention. Whole-bunch fermentation and vat aging preserve all the fruit's energy and the purity of the terroir. Frédéric Cossard
This Puligny-Montrachet Premier Cru comes from Chardonnays grown on the plot that gave its name to the cuvée, between 230 and 250 meters above sea level. The terroir, facing west-southeast, is based on brown marl and clay-limestone soils, sometimes directly on the limestone rock. The soil structure is fine, clay-silt. After direct pressing of the grapes, the wine is aged for about a year in barrels. The wine is typically Puligny: buttery, mineral, complex, and layered.

Julienas Rouge 2014, Frédéric Cossard
The almost century-old Gamays from which this Julienas is made grow on granite and sandy-clay soils in the north of Beaujolais. This wine is the result of a collaboration between Frédéric Cossard, Kevin Descombes, and Damien Coquelet. Carbonic maceration for three weeks, fermentation on natural yeasts for two months, then six months of barrel aging. Fluid, deep, dazzling!
